ALMOND FRENCH TOAST



Almond French Toast image

This French toast is perfect for Mother's Day! It is a nice twist to the traditional breakfast dish, and makes a nice addition to any brunch. I hope that you enjoy this recipe. Serve with fresh fruit, fruit preserves, or warm maple syrup.

1 cup slivered almonds
3 eggs
1 cup milk
3 tablespoons all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon almond extract
1 teaspoon vanilla extract
12 thick slices French bread
3 tablespoons canola oil
3 tablespoons butter
confectioners' sugar for dusting

Steps:

  • Place almonds in a small saucepan over low heat. Tossing frequently, toast until lightly browned, 5 to 10 minutes. Remove from heat, and set aside.
  • In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract and vanilla extract. Soak bread slices in the mixture until saturated. Place slices in a shallow pan. Refrigerate slices approximately 1 hour.
  • Heat canola oil and butter in a large skillet over medium heat. One at a time, press one side of soaked bread slices in the almonds to coat. Fry bread slices on both sides until golden brown. Dust with confectioner's sugar before serving,

This recipe is from Sugar off the TV food network. I love almonds so I had to try this recipe, and it turned out wonderful. It is nice and light, and great with coffee. Hope you enjoy it as much as I do!!

6 egg whites
1 dash fine salt
1 cup sugar
1 1/4 cups all-purpose flour
1 cup whole almond

Steps:

  • Preheat oven to 350 degrees F. and line a 9 x 5-inch loaf pan with parchment paper (do not grease).
  • Whip whites and salt until foamy, then gradually pour in sugar. Continue whipping until whites hold a stiff peak. Fold in sifted flour and fold in almonds. Scrape meringue into prepared pan and bake for 35 minutes, until top is richly browned. Allow to cool, then wrap and freeze overnight. (Makes about 24 toasts).
  • Preheat oven to 175 degrees F. and line a baking tray with parchment. Using a serrated knife, slice thin slices of loaf, about 1/4 inch thick or less and place on a baking sheet. Bake until dry and crisp, but not browned, 20 to 30 minutes. Store in an airtight container until ready to serve.

6 slices bread
2 eggs
1/4 cup milk
1-1/2 teaspoons almond extract, divided
2 tablespoons plus 1 cup butter, divided
3 tablespoons confectioners' sugar
Additional confectioners' sugar
Sliced fresh strawberries, optional

Steps:

  • Cut out bread slices with a 3-3/4-in. heart-shaped cookie cutter; discard trimmings. , In a shallow bowl, combine the eggs, milk and 1/2 teaspoon almond extract. Dip bread on both sides in egg mixture. In a large skillet, melt 2 tablespoons butter. Cook bread hearts for 2-3 minutes on each side or until golden brown., For almond butter, in a small bowl, combine confectioners' sugar and remaining butter and extract; mix well. Spread 1 teaspoon over each slice of French toast (save remainder for another use). Sprinkle with additional confectioners' sugar and serve with strawberries, if desired.

French Toast lover alert! This recipe will make you drool! Keep napkins available at all times! Almond paste is a mixture of ground almonds and sugar. You can find it in grocery stores.

8 slices white bread or 8 slices whole wheat bread
1 (3 ounce) package cream cheese, softened
3 tablespoons almond paste
3 eggs, beaten
1 cup milk
1/2 teaspoon vanilla extract
1/4 cup butter or 1/4 cup margarine
2 tablespoons vegetable oil

Steps:

  • Trim crusts from bread; set bread slices aside.
  • Process crusts in a blender or food processor until finely crumbled.
  • Set crumbs aside.
  • Combine cream cheese and almond paste; beat at medium speed of an electric mixer until smooth.
  • Spread the mixture evenly on 4 bread slices.
  • Slice each sandwich diagonally to form 4 triangles.
  • Combine eggs, milk, and vanilla.
  • Dip each bread triangle into egg mixture, coat with crumbs, and dip again in egg mixture.
  • Melt butter in a large skillet; add oil.
  • Cook triangles over medium heat 4 minutes on each side until browned.
  • Serve immediately.
  • Yield: 4 servings.

Great breakfast to feed a group and loaded with protein and whole grains! Make ahead the night before, then pop in the oven before everyone gets up. I made this French toast bake for our group during a winter weekend of snowboarding. I just wish I had made two batches. It went fast! Serve with extra maple syrup and sausage on the side for a heartier meal.

8 large eggs
8 large egg whites
2 cups milk
⅓ cup pure maple syrup
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
1 (1 pound) loaf whole wheat bread, cubed
2 cups fresh blueberries
⅓ cup sliced almonds
2 tablespoons dark brown sugar

Steps:

  • Spray a 9x13-inch baking pan with cooking spray.
  • Whisk eggs, egg whites, milk, maple syrup, vanilla, and cinnamon together in a large bowl.
  • Place bread cubes in the prepared pan. Pour egg mixture over the bread. Scatter blueberries evenly over the top and sprinkle with almonds and brown sugar. Cover with plastic wrap and refrigerate for 4 hours, or overnight.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking pan. Bake in the preheated oven until golden brown , 40 to 50 minutes.

This eggy bread gets a dose of sweet almond cream and sliced almonds, a family favorite breakfast that gets everyone out of bed and into the kitchen fast!

10 tablespoons unsalted butter, room temperature
2/3 cup granulated sugar
1 1/2 cups finely ground almonds (5 ounces)
1 large egg
1 teaspoon pure almond extract
1 twelve-ounce loaf brioche, sliced into ten pieces
1/3 cup almonds, sliced
Confectioners' sugar for dusting

Steps:

  • Heat oven to 350 degrees. In bowl of electric mixer with paddle attachment, beat butter and granulated sugar until creamy. Scrape down sides of bowl. Add ground almonds, egg, and almond extract; beat until well combined.
  • Generously spread 3 tablespoons of mixture onto each brioche slice. Garnish with almond slices, and place on an ungreased baking pan. Bake until tops are golden brown and brioche is toasted on both sides, about 20 minutes. Remove from oven; place on wire rack to cool. Dust with confectioners' sugar. Serve warm or at room temperature.

Stay at the stove because the nuts can easily burn! Remove immediately from the heat and transfer to a plate to stop the cooking.
  • Preheat the oven to 350 degrees Fahrenheit. Place the nuts on a baking sheet in a single layer. Bake for about 7 to 8 minutes until fragrant and golden brown (if sliced or slivered), stirring once. Do not stray far from the oven, since the nuts can go from toasted to burned quickly.
