I love the flavor of Grape Nut Flakes and I have found a few of my favorite recipes with this cereal off of the Kraft website. I forget about the low fat cooking when these come straight out of the oven -the ole butter gets smeared on! =) These are also perfect for those folks looking for low sugar muffins.

Number Of Ingredients 11

1 1/4 cups flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup brown sugar (packed)
1 cup milk
1 egg (beaten)
1/2 cup chunky applesauce
2 tablespoons melted butter
1 cup grape nut flakes cereal
1/2 cranberries (optional) or 1/2 other dried fruits (optional)

Steps:

  • Stir together the first 5 ingredients.
  • Stir beaten egg into milk then add applesauce and stir well.
  • Mix wet ingredients into dry stirring well.
  • Stir in melted butter, cereal, and raisins.
  • Let stand 5 minutes.
  • Fill greased muffin tins 2/3 full.
  • Bake at 400 degress for about 20 minutes.

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon kosher salt
3 tablespoons sugar
3/4 cup Grape Nuts cereal
1 large egg, well beaten
1 cup milk
3 tablespoons melted shortening

Steps:

  • Gather the ingredients.
  • Preheat oven to 425 F. Grease and flour muffin pans or line with paper liners.
  • In a bowl, combine flour, baking powder, salt, and sugar; whisk to blend thoroughly. Add cereal and mix.
  • Combine beaten egg , milk, and melted shortening; add to dry mixture and mix just until all ingredients are moistened.
  • Fill prepared muffin pans about 2/3 full.
  • Bake for 18 to 22 minutes, or until done.

1 1/4 c grape-nut original cereal
1 c hazelnut coffee creamer
1 tsp vanilla extract
3 Tbsp butter,melted
1/2 c peach butter or mashed banana or applesauce
1 large egg
1/2 c chopped walnuts
1 1/2 c all purpose flour
1 Tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 c brown sugar, firmly packed

Steps:

  • 1. Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.
  • 2. In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.
  • 3. To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.
  • 4. Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.

1 egg

1/2 cup firmly packed brown sugar
1/2 cup raisins
2 Tbsp. margarine, melted

Steps:

  • PREHEAT oven to 400ºF. Combine cereal and milk; let stand 3 min. Meanwhile, mix flour, baking powder, cinnamon and salt in large bowl; set aside. Beat egg in medium bowl. Add applesauce, sugar, raisins and margarine; mix well. Stir in cereal mixture until well blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) SPOON evenly into 12 (2-1/2-inch) muffin cups sprayed with cooking spray, filling each cup two-thirds full. BAKE 20 min. or until wooden toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool slightly.

1 egg, beaten
3/4 cup milk
1 3/4 cups flour
1/4 cup sugar
1 tablespoon baking powder
1 cup cheddar cheese, shredded
1/2 cup Grape-nuts cereal
1/3 cup oil

Steps:

  • Preheat oven to 400 degrees.
  • In small bowl, combine oil, egg, and milk; set aside.
  • Cook the bacon, cool, crumble, set aside.
  • In large bowl, combine flour, sugar and baking powder. Make a well in the center. Add egg mixture all at once to flour mixture, stirring just until moistened.
  • Batter should be a little lumpy. Fold in bacon, cheese and cereal.
  • Fill 2/3 full into greased muffin cups.
  • Bake for 15-20 minutes or until golden brown. Makes 12 regular muffins.
  • Serve warm.

1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup Grape-nuts cereal
1 1/2 cups skim milk
1/2 cup wheat bran, toasted
1/2 cup bran buds (Kellogg's All Bran cereal preferred) or 1/2 cup bran buds, of choice (Kellogg's All Bran cereal preferred)
1 egg, slightly beaten
1/2 cup chunky applesauce
1/2 cup firmly packed brown sugar
2 teaspoons melted margarine

Steps:

  • Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
  • In a large bowl, combine first four ingredients.
  • In another bowl, pour in milk and cereal and let set 3 minutes.
  • Stir in the egg, applesauce, sugar and margarine.
  • Add to flour mixture and stir in the cereal of your choice.
  • Spoon batter into prepared muffin cups.
  • Bake 20 minutes or until golden and done.

1/3 cup dark brown sugar

2 cups Post Grape-Nuts cereal
1/2 cup quick oats
1 cup milk
1 egg, slightly beaten
1/3 cup oil
2 tablespoons butter
1/3 cup dark brown sugar
1 cup corn flakes

Steps:

  • Mix flour, cornmeal, sugar, baking powder, salt and cinnamon together. Set aside.
  • Combine Grape nuts, oats and milk. Let stand 3 minutes. Add oil and egg to cereal mixture.Then add to flour mixture. Stir enough to moisten flour. Batter will be thick.
  • Spoon into greased or paper-lined muffins cups, 3/4 full. Mix topping ingredients together and top muffins before baking.
