These Rosemary and Garlic White Sweet Potato Medallions are little bite-sized rounds that are a healthy plant-based side dish or snack. 2 large organic white sweet potatoes ((50 - 60 slices))
2 tablespoons 100% pure avocado oil
1 tablespoon organic dried rosemary
1 teaspoon organic ground garlic powder
1/2 teaspoon Himalayan pink salt

Steps:

  • Preheat oven to 400 degrees.
  • Prepare a cookie sheet lined with parchment paper and set aside.

Ambrosia Sweet Potatoes image

A VERY PRETTY DISH! All the right flavors which blend well with sweet potatoes. Easy to prepare. This recipe is from a local fund raiser cookbook and was submitted by Sudie Blanchard.

6 cups sweet potatoes, cooked and sliced
1/2 orange
1/2 lemon
1 (9 ounce) can crushed pineapple, drained
3/4 cup brown sugar
1/2 cup butter, melted
1/2 cup shredded coconut
maraschino cherry (for decorating)

Steps:

  • Place sweet potatoes in a baking dish. Slice orange and lemon into thin slices.
  • Alternate layering slices on top of sweet potatoes.
  • Combine drained pineapple, brown sugar and melted butter. Pour mixture over sweet potatoes. Sprinkle with shredded coconut.
  • Decorate with cherries. Bake in a 350°F oven for 30 minutes.

6 cups sliced sweet potatoes, cooked
1 orange, sliced
1 cup crushed pineapple in juice
1/2 cup light brown sugar, firmly packed
1/2 cup butter, melted
1/2 teaspoon salt
1/2 cup coconut, shredded

Steps:

  • In a buttered 2-quart cassererole, alternate layers of potatoes and orange slices.
  • mix pineapple, sugar,butter, and salt.
  • Pour mixture over layers.
  • Sprinkle coconut on top.
  • Bake in a preheated 350° F oven for 30 minutes.
