If you enjoy Grape Nuts® cereal, try making your own with this easy recipe. This cereal has a great crunch texture and is a bit sweeter than the commercial Grape Nuts® cereal. Why make your own? Because it's addictive and much less expensive!

3 ½ cups whole wheat flour
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups buttermilk
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with waxed paper.
  • Combine flour, brown sugar, salt, baking soda, and cinnamon in a large bowl. Stir in buttermilk and vanilla extract; mix well. Pour mixture into prepared baking sheet and spread evenly with a spatula.
  • Bake in the preheated oven until browned and firm, 20 to 25 minutes. Cool patty in the baking sheet for 10 minutes before removing to cool completely on a wire rack.
  • Preheat oven to 275 degrees F (135 degrees C).
  • Break cooked patty into chunks and put through a meat grinder, using a coarse blade. Divide crumbs over two baking sheets.
  • Bake in the oven until dry, stirring every 10 minutes, about 30 minutes. Allow crumbs to cool completely and store in an airtight container.

Found on www.AmishDining.com. A recipe seldom gets any easier than this one. Kids could make this with just a bit of supervision. My mother used to make something like this that had these same ingredients. This is much like her's, and since she was not a dessert maker, I am sure she would have opted for a simple recipe. Other flavors of gelatin work too, like Cherry and Strawberry which are perfect for Valentine's Day. NOTE: Times do not include the 2-3 hours for chilling time. Servings are approximate.

1 (3 ounce) package lime gelatin, dry
2 cups cottage cheese
1 cup crushed pineapple, drained
2 cups whipped topping, thawed
1 cup walnuts, chopped

  • In a 4-6 quart bowl, pour dry gelatin over cottage cheese, pineapple, whipped topping and nuts; stir together well.
  • ***Chill 2 to 3 hours***.

I began making this recipe to save cereal costs for our family of six. Everyone loves the hearty flavor that just can't be found in packaged cereals.

7 cups whole wheat flour
3 cups packed brown sugar
2-1/4 teaspoons baking soda
1 teaspoon salt
2-1/2 cups buttermilk
6 tablespoons butter, melted
2 teaspoons vanilla extract
1/2 teaspoon maple flavoring, optional
Milk

Steps:

  • In a large bowl, combine the flour, brown sugar, baking soda and salt. Stir in the buttermilk, butter, vanilla and maple flavoring if desired, until combined. Spread into six greased 13-in. x 9-in. baking pans. , Bake at 350° for 35-40 minutes. Cool on wire racks. Reduce heat to 250°. Break mixture into pieces. Cover and process in batches in a food processor until small pieces are formed; return to baking pans. Bake for 1 hour or until light brown and crisp, stirring every 15 minutes. Store in airtight containers. Serve as a cereal with milk.

butter, for baking dish
4 cups milk
1 cup Grape-nuts cereal
4 large eggs
1/2 cup sugar (reduce by a couple of tablespoons if you don't want it as sweet)
2 1/2 teaspoons vanilla extract
1/4 teaspoon table salt
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat oven to 350°F and butter a 2-quart baking dish.
  • Put milk and Grape-Nuts cereal in a medium saucepan over medium-high heat and bring to a simmer.
  • Remove from heat, stir, and let cool 15 minutes.
  • While milk mixture is cooling, beat eggs with sugar, vanilla, and salt in a bowl.
  • Add the cooled milk and Grape-Nuts to egg mixture and stir well.
  • Pour into the prepared baking dish.
  • Sprinkle nutmeg over the top.
  • Set the baking dish into a deep roasting pan.
  • Place in the oven and pour water into the roasting pan, enough to reach halfway up the side of the dish.
  • Bake until almost set in the center, 50 to 60 minutes (there should be a very slight jiggle when you shake the pan and a knife inserted into the center should come out clean).
  • Let the pudding set atop the stove for at least 20 minutes before serving.
  • Serve plain, with vanilla ice cream or with whipped cream.
