Steps:
- Dissolve yeast and 1 tbsp sugar in warm water.
- Scald milk, then add butter, sugar and salt.
- Cool to lukewarm.
- Add two cups flour.
- Add yeast and eggs.
- Stir in the remainder of the flour and knead lightly.
- Let rise until double.
- While dough is rising, boil all syrup ingredients for two minutes.
- Divide syrup into six 8-inch square pans (or I sometimes use 3- 9x13 pans).
- When dough is doubled, punch down and divide into two parts.
- Roll each part (one at a time) into a 12x18-inch rectangle on a well floured board or table.
- Sprinkle with brown sugar and cinnamon.
- Roll up tightly, beginning at the wide side.
- Cut into 1 inch slices, and lay slices on top of the syrup in the pans.
- Repeat with all dough.
- Bake at 375°F for 15 minutes.

Steps:
- In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- Combine the yeast mixture with the buttermilk, eggs, 2 1/2 cups flour, 1/4 cup softened butter, 1/4 cup sugar, baking powder and salt; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Dough should remain soft and slightly sticky. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Divide dough in half and roll each half into a 12x7 inch rectangle. Spread each half with 1 tablespoon softened butter and sprinkle with 1/4 cup sugar and 1 teaspoon cinnamon. Roll up halves, beginning at wide side. Seal well by pinching the seams. Cut each roll into 12 slices.
- Coat two 9 inch round cake pans each with 1/4 cup melted butter, 1/4 cup brown sugar, 2 tablespoons raisins and 1/2 cup chopped pecans. Place 12 dough slices in each pan, leaving a small space between slices. Cover and let rise until doubled.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake in a preheated oven for about 30 minutes. Invert pans onto plates and serve.

- In a small saucepan heat the milk. Stir 6 tablespoons of the sugar and the salt into the milk until dissolved.
- Put 5 cups flour in a large bowl and make a well in the center. When the milk is cool, pour it into the center of the flour. Add the yeast mixture, 4 tablespoons of the butter and the egg. Stir with a wooden spoon until a soft dough forms.

- Warm the milk (Anywhere from 110-115 degrees fahrenheit; Milk should not be hot to touch.). Add the sugar, yeast and butter. Let this mixture sit for 5 minutes until the yeast is activated and frothy. Add the wet ingredients to the dry ingredients. Add the egg yolks and mix well, beating with a mixer (using the dough hook attachment) for 3-5 minutes. You can also knead the mixture by hand. Cover the dough and allow it to rise in a warm spot for about 30 minutes or until it has doubled.
- After the dough has rise, roll it out into a 10x8" rectangle. Srpead with the softened butter, then sprinkle with brown sugar and cinnamon. Roll up as you would for a jelly roll. Slice the roll into 9 pieces.
- To prepare your 8x8 baking pan, spread the bottom and sides of the pan with a coating of butter. Pour in 1/2 cup pure maple syrup into the bottom of the empty pan. Place the rolls, cut side up, into the pan. Cover the rolls with plastic wrap and allow them to rise again until doubled, about another 30 minutes.
