6 bacon strips, cut into 1/2-inch pieces
2 pounds fresh green beans
3 tablespoons brown sugar
1/2 cup water

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, about 5 minutes. Add the beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15 minutes. Remove to a serving bowl with a slotted spoon.

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

Steps:

  • Wash beans and snap them into 1 1/2" pieces, discarding ends.
  • Cover with water and add salt and bacon grease.
  • Cover and bring to a boil.
  • Turn down to simmer and continue cooking for about an hour.
  • Pour off water and add 2 T butter. Let sit with lid on for a minute for butter to melt, then toss beans a little to distribute butter.

  • Bring a pan of salted water to a rolling boil. There should be enough water to cover the beans. Add prepared beans a few at a time in order to keep the water boiling. Cook at a rolling boil for a few minutes, then reduce heat to medium for 12 to 15 minutes. Taste from time to time to see if they are done. The raw taste should be cooked away, but the beans should remain fresh tasting and slightlycrisp to the bite. Drain at once, then add butter or crumbled, crisp fried bacon and a little bacon grease. Sliced green onion is also a nice addition.
