ONION AND SAUSAGE PIZZA
I found this in my collection of family favorites. This is served on toasted French bread. You can also use mushrooms, pepperoni and chopped green or red bell peppers.

Steps:
- Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
- Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

ANDOUILLE SAUSAGE AND MOZZARELLA PIZZA

- To make the dough, combine the yeast and rye flour with one-half cup of lukewarm water. Let the mixture rise for 30 minutes.
- Stir the milk, olive oil, salt and unbleached flour into three-quarters cup of lukewarm water. Knead on a floured board for 15 minutes. Place in a bowl that has been rubbed with olive oil. Cover with a towel and set in a warm place to rise for two hours. Punch the dough down and let it rise for another 40 minutes.
- Preheat the oven to 450 degrees.
- For the topping, puncture the sausage skin with a fork. Place it in a frying pan with one cup of water. Bring to a boil and cook until the water has evaporated and the sausage becomes slightly brown, about 10 to 12 minutes. Remove the sausage and cut into julienne strips.
- Roll out the dough into two 14-inch circles. Drizzle the olive oil over each, cover with the mozzarella slices and top with the sausage strips, sage and garlic.
- Bake for 15 minutes or until the crust begins to brown around the edges. Serve immediately.

STICKY ONION & SAUSAGE PIZZA
Use ciabatta bread mix as an easy homemade pizza dough - top with balsamic onions, spinach and sausage meat for a quick weeknight dinner

- Tip the bread mix into a large bowl. Make a well in the centre and pour in 1 tbsp olive oil and 350ml tepid water. Mix to form a dough, then turn out onto a lightly floured surface and knead for 5 mins. Transfer to a lightly oiled bowl, cover and leave to rise for 30 mins.
- To make the topping, heat the remaining oil in a frying pan and add the onions, rosemary and a good pinch of salt. Cook gently, stirring occasionally, for 25-30 mins until starting to caramelise. Boil the kettle. Put the spinach in a colander and pour over the boiling water. Leave to drain and cool, then squeeze as much liquid from the spinach as you can and season. Squeeze the sausages from their skins into a small bowl and stir through the mustard. When the onions are softened, pour over the balsamic vinegar and stir well. Cook until almost all the vinegar has evaporated and the onions are sticky.
- Heat oven to 220C/200C fan/gas 7 and pop in 2 baking trays. Tip the dough out and divide into 2 equal pieces - do not knock the dough back or it won't hold its shape. Stretch and roll the dough into 2 large circles, about 30cm diameter. Transfer the bases to the trays. Spread over the onions, top with the spinach and cheddar, then dot over the mustardy sausage. Bake for 15-20 mins until crisp, golden and the cheese is bubbling.

- Preheat oven to 375.
- Lightly grease/spray a pie dish.
- Unroll crescent dough and scatter triangles in the pie dish. Spread dough around bottom and halfway up the sides with fingers and press seems together to form a crust in the pie plate; set aside.
- In a skillet, brown the sausage with the garlic, onions, and green pepper. Cook, breaking up sausage with a spatula until no longer pink. Drain off fat.
- Place cooked, drained sausage mixture over crescent dough crust.
- Top with the drained mushrooms.
- Evenly pour the tomato sauce over top.
- Sprinkle with the cheese.
- In a small bowl, whisk together the milk, eggs, oregano, basil and salt (to taste). Evenly pour over cheese.
- Bake at 375 for 35-40 minutes or until set.

- Move oven rack to lowest position. Heat oven to 375°. Spray large cookie sheet with cooking spray. Cook sausage in 10-inch skillet over medium-high heat, stirring occasionally, until no longer pink; drain. Stir in pizza sauce and oregano; set aside.
- Stir Bisquick mix, cheese sauce and hot water until soft dough forms. Place on surface dusted with Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 5 times. Roll into 14-inch circle; place on cookie sheet.
- Spread sausage mixture over dough to within 3 inches of edge. Fold edge over mixture. Top with bell pepper rings. Sprinkle cheese over sausage mixture. Bake 23 to 25 minutes or until crust is light golden brown and cheese is melted.

- Heat olive oil in a large skillet over medium high heat. Add garlic, onion and sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes.
- Stir in chicken broth, tomatoes, milk and pasta; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
- Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes.
- Stir to mix in the cheese.

- In a large saucepan, heat 1/4 cup of the olive oil until shimmering. Add the onions and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the vinegar, wine, sugar and a pinch of salt. Cover partially and cook over low heat, stirring occasionally, until the onions are very soft, about 20 minutes. Uncover and cook over moderate heat, stirring frequently, until browned, about 30 minutes longer; add water if the onions seem dry. Transfer the onion confit to a bowl and let cool.
- Meanwhile, set a pizza stone on the bottom shelf of the oven. Preheat the oven to 500° for 30 minutes.
- On a floured surface, roll out 1 ball of dough to a 14-inch round. Transfer to a pizza peel or cookie sheet dusted with cornmeal. Spread half of the onion confit over the dough to within 1 inch of the edge. Top with half of the tomatoes, Fontina, mozzarella, andouille and parsley. Lightly brush the edge with olive oil.
- Slide the pizza onto the stone and bake for about 10 minutes, or until the crust is browned and the top is bubbling. Let cool for 5 minutes, then cut into wedges and serve. Meanwhile, repeat with the remaining dough and toppings. Alternatively, if you don't have a pizza stone, assemble the pizzas on lightly oiled baking sheets coated with cornmeal. Let rise for 30 minutes before baking directly on the sheet.
