Number Of Ingredients 8

1 package (7 ounces) angel hair pasta or thin spaghetti
2 small zucchini, cut into 1/4-inch pieces
2 garlic cloves, minced
3 tablespoons olive oil
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
1/4 cup minced fresh parsley
1 teaspoon dried oregano
1/8 to 1/2 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute zucchini and garlic in oil until zucchini is crisp-tender. , Add the tomatoes, parsley, oregano and pepper flakes; heat through. Drain pasta; serve with zucchini mixture.

I was feeling creative while I was looking for a use for my garden fresh zucchini and I put this together for a side dish. You could also add ground turkey and make a main course! This contains 7 points on the Weight Watchers Points Plus program.

2 Tbsp olive oil
2 clove minced garlic
3 Tbsp minced red onion
1/2 medium zucchini - chopped
1 qt stewed tomatoes - drained (reserve juice)
1 juice from 1 lemon
3 torn leaves of fresh basil
1/8 tsp salt or to taste
1/2 pkg multi grain angel hair pasta

Steps:

  • 1. Saute garlic, onion and zucchini in olive oil for 3 - 5 minutes.
  • 2. Add tomatoes, lemon juice, basil and salt. Simmer while cooking pasta.
  • 3. Cook pasta according to package directions. Drain.
  • 4. Toss drained pasta with sauce and serve. Add grated parmesan, if desired.
  • 5. NOTE: The pasta will absorb some of the liquid of your sauce, so if your mixture gets a little dried out, you can add some of that reserved tomato juice to moisten it.

1/2 cup sun-dried tomato (NOT packed in oil)
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1 lb chicken tenders, cut into 3/4-inch pieces
1 tablespoon olive oil
2 garlic cloves, minced
1/4 cup vermouth
1 (14 1/2 ounce) can diced Italian tomatoes
2 small zucchini, sliced
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 tablespoon fresh thyme leave
1/2 cup water
1/2 lb uncooked angel hair pasta

Steps:

  • Place sundried tomatoes in small bowl and cover with boiling water for 5-10 min or until soft. Drain and cut into slivers.
  • Combine flour, salt, and red pepper in a large bowl.
  • Add chicken and toss until evenly coated.
  • Heat oil in large skillet. Add chicken and cook without stirring until golden (3-4 minutes). Turn chicken and cook 3 minutes longer.
  • Add garlic and cook, stirring, 1 minute more.
  • Add vermouth and stir, scraping up cooked bits from sides of pan.
  • Add dried tomatoes, canned tomatoes, zucchini, bell peppers, thyme and water.
  • Bring to boil, cover, reduce heat and simmer 5 minutes or until zucchini are tender, stirring occasionally. Keep warm.
  • Meanwhile, cook pasta according tp package directions.
  • Serve sauce over pasta.

3 medium zucchini, peeled
1 medium zebra green tomato, seeded and chopped
1 tablespoon extra virgin olive oil
1 pinch sea salt
1 pinch fresh ground black pepper, plus more to taste
1 tablespoon raw pine nuts (to garnish)
basil leaves (to garnish)
2 cups packed fresh basil leaves
1 teaspoon minced garlic
1/2 cup pine nuts (preferably raw)
1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
1 teaspoon sea salt
1 pinch fresh ground black pepper

Steps:

  • Using a vegetable peeler or a spiral vegetable slicer, slice the outer zucchini flesh into lenthwise strips, discaring any seeds.
  • Stack the strips and then slice them into thinner "noodles".
  • Place the zucchini noodles in a medium bowl and add chopped tomato, olive oil, sea salt, and pepper.
  • Place all pesto ingredients in a blender and puree until smooth, with just a few nuts visible for texture.
  • Gently toss the zucchini and tomato mixture with just enough pesto to coat.
  • Season with additional salt and pepper if desired.
  • Garnish with pine nuts and basil leaves and serve.
