ANNA MARIE'S CHICKEN SOUP (THE HARD WAY)
Steps:
- Cut up chicken. Peel and slice carrots, celery and turnip. Remove yellow skin from the onion and cut onion up (the skin "dyes" the soup more yellow). In a very large pot place everything and cover with water. Bring to a boil and turn down to simmer 3 hours.
- Remove chicken and strain broth using a cheese cloth. When cool enough squeeze cheese cloth to get vegetable juices back into broth. Refrigerate the broth and chicken. The fat from the broth will solidify and can be easily spooned off the next day.
- Pick meat off bones of chicken and chop into bite size pieces and add to broth in pot. Add chopped carrots, celery, tomatoes, squash (whatever you want). Bring back to boil. Add noodles or barley and simmer till done.

- In a large pot over medium heat, combine chicken broth, cooked chicken, rice, lemon juice, spinach, carrots and pepper. Bring to a boil, then reduce heat and simmer until rice and greens are tender, 20 minutes.

Steps:
- Cook chicken, onions, celery, salt , pepper chicken base together. When chicken is done, drain the broth into another container, putting chicken in another container to cool completely. Then take the chicken off the bone. Chop the chicken into small pieces.
- Put the chicken broth in a pot,( reserving 3 cups in another container), and put the rice in the broth. Let the broth and rice come to a boil, and turn down to simmer.
- Juice the lemons to the the eggs (whipping thoroughly). Add the lemon juice and eggs into the reserved 3 c.chicken broth . When the mixture is creamy and smooth, pour it in to the pot of chicken broth and rice.
- Add the chopped chicken. Simmer for about 10-15 minutes. You may add more lemon if needed.

ANNA MARIE'S ROAST CHICKEN
Steps:
- Preheat oven 350°F. Line baking pan with foil. Peel and chop vegetables, thinly slice 1/2 of lemon. Put vegetables and lemon slices in pan, drizzle lightly with olive oil, sprinkle with salt and pepper to taste. Stir vegetables around to coat evenly.
- In a bowl mix together all spices (measure to taste). Rinse chicken. Rub seasonings inside and out of chicken also under skin of breast. Cut up butter into 6 pieces. Take 2 pieces of butter, place one under skin of each breast. Push in a clove of garlic too. Place chicken on top of vegetables. Place rest of butter over breast, and legs and inside cavity. Juice 1/2 lemon over chicken and put peel into cavity. Pour wine over vegetables.
- Bake till brown and done; check after 1 hour. Cut skin holding legs and put back until juices run clear.

- Dip chicken pieces into the slightly beaten eggs, mixed with milk.
- Mix together flour, baking powder, salt, paprika, pepper, nuts and sesame seeds
- Dredge chicken pieces into above mixture.
- Melt butter in shallow baking pan.
- Put coated chicken pieces in pan, turnng to butter on both sides.
- Bake at 400 degrees for 30 minutes, turning over and baking for another 30 minutes or until tender.
