ALMOST-FAMOUS GREEN BEAN FRIES
T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

- Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.
- Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.
- Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.
- Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.
- Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.
FRIED GREEN BEANS AND WASABI RANCH

- Combine the sour cream, buttermilk, wasabi, chives and season with salt and pepper. Reserve.
- Bring a few inches of water to a boil, salt it and cook the green beans, 2 minutes. Remove, cold shock in an ice bath, drain and dry on a kitchen towel.
- Meanwhile, heat a few inches of oil over medium to medium-high heat. Combine 1 cup water, the flour, baking powder, onion, garlic and eggs in a bowl to form a batter. Dip the beans in the batter, a dozen at a time, and fry them up in batches. Cool on a cooling rack. Sprinkle with salt while hot.
- Serve the fried beans with the wasabi dipper.
AIR FRYER GREEN BEANS WITH SPICY DIPPING SAUCE
Beer-battered green beans that are a healthier version of the deep-fried ones. Serve with the spicy version of dipping sauce or your favorite dipping sauce.

- Mix beer, flour, salt, and pepper together in a bowl. Coat beans with the batter in small batches and shake off excess.
- Preheat air fryer to 400 degrees F (200 degrees C) according to manufacturers' instructions.
- Place the parchment paper on the bottom of the air fryer basket. Place a single layer of the battered beans in the air fryer. Cook until golden brown and crispy on the outside, 8 to 10 minutes. Repeat with any remaining battered beans.
- Mix ranch dressing, sriracha sauce, and horseradish in a bowl. Serve with the green beans.

- Make the dip by combining the buttermilk ranch dressing, cucumber, milk, horseradish, wasabi, salt, and cayenne pepper into a blender. Blend on low until well mixed. Pour into a small bowl and refrigerate. The dip will thicken as it chills.
- Place the broth in a saucepan over medium-high heat. Add the beans, cover, and bring to a boil; reduce heat to medium and simmer until beans are bright green and tender, about 8 minutes. Immediately drain beans into a colander and rinse under cold water. Set aside to cool.
- Combine the beaten egg with milk in a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, combine the bread crumbs, salt, black pepper, garlic powder, and onion powder. Working with a handful of beans at a time, dip each bean first into flour, then into the egg mixture, and then into the bread crumb mixture. Place beans on a plate until all are coated.
- Heat 1 1/2 inches of oil in a deep skillet (or use a deep fat fryer) over medium-high heat to 350 degrees F (175 degrees C). Fry the beans several at a time, without crowding, until golden brown. Drain on paper towels and cool. Serve with horseradish-wasabi dip.

- Bring a pot of water to a boil; cook beans in boiling water until bright green, about 2 minutes. Immediately transfer green beans to a bowl of ice water to stop the cooking process. Drain and dry beans with paper towels.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Pour flour into a bowl. Whisk egg in a separate bowl. Pour bread crumbs into a third bowl.
- Coat green beans with flour; transfer to beaten egg and coat evenly. Press coated green beans into bread crumbs.
- Fry breaded green beans, working in batches, in the hot oil until golden brown, 3 to 5 minutes. Transfer fried beans to a paper towel-lined plate to drain.

FRIED GREEN BEANS
This is one of my husband's summer favorites. Someone at his work told him how good they were, so we had to try them. They are a very good appetizer or accompaniment to a meal.

- In skillet or deep fryer, heat oil (I used coconut oil because it's healthier). Mix all ingredients for dip and place in a covered container to chill. Mix flour, seasonings, and buttermilk to make a batter consistency, add an egg (or some egg beaters in my case, if you like.) Coat each green bean (they must be the young, tender ones to cook quickly). Place battered green bean into hot oil and fry until browned and crispy. Continue frying until all you need are done, do not crowd in the skillet or deep fryer. Turn occasionally to keep from browning too much. When done, remove from oil to dish with paper towels to drain. Immediately season with salt and Old Bay seasoning. Serving with the dip is a must, it's so good!
APPETIZER - FRIED GREEN BEANS WITH SPICY CUCUMBER RANCH DIP

- Preheat oven to 400 degrees. Combine dip ingredients in a food processor or small blender (our Magic Bullet works wonders!). Blend until smooth. Place dip in a dish, and then cover and chill in the fridge. Place the green beans in a large pot with 4 cups of water. Bring to a boil. Once boiling, cook for 9 minutes. Carefully drain the beans, and then place them in cold water for a few minutes to stop the cooking process. Drain and dry them well. Put the egg substitute in a small bowl, and set aside. In a separate bowl, combine the Fiber One "breadcrumbs" with the spices (add extra seasonings, if you like). Cover a large baking pan with aluminum foil and/or nonstick spray. Set aside. Place about 1/3rd of the crumb mixture into a large sealable plastic bag. One by one, dip green beans into the egg substitute, and place them in the bag with the breadcrumbs -- continue this with 1/3rd of the beans. Seal the bag and shake it up. Remove the "breaded" green beans, and place them on the pan. Repeat this process two more times, so all of the beans are coated. Pop the pan in the oven and cook for 16 minutes, flipping green beans halfway through cooking. Beans are done once they're crispy. Allow green beans to cool slightly, and then serve with the dip. Yum!
