APPLE-BERRY HEALTHY OAT BREAKFAST BARS



Apple-Berry Healthy Oat Breakfast Bars image

Healthy breakfast or snack bars loaded with quality ingredients. Perfect recipe to make ahead and freeze.

Number Of Ingredients 16

Filling:
2 1/2 cups thinly sliced apples (Pink Lady for Low FODMAP)
1/3 cup crushed berries (I used mixed)
2 Tbsp ground flaxseeds
2 Tbsp pure maple syrup or agave
Oat Layers:
2 medium bananas (mashed (green bananas for Low FODMAP))
2 Tbsp chopped walnuts
2 Tbsp unsweetened coconut
2 Tbsp hemp seeds
1 1/4 cup old fashioned oats (gluten-free if needed)
1 cup oat flour (gluten-free if needed)
2 tsp cinnamon
1/2 tsp salt
2 Tbsp pure maple syrup
1 Tbsp coconut oil ~ I don't melt the coconut oil (but feel free if you prefer.)

Steps:

  • Preheat oven to 350
  • Prepare an 8"x8" pan with a non-stick spray or parchment paper.
  • In a small mixing bowl add all ingredients for filling. Stir to combine and set aside. For a softer apple texture in the finished bars, microwave the apple mixture 2 - 2 1/2 minutes on high. Then set aside.
  • In a medium mixing bowl add all ingredients for the oat layer in the order listed. Mix well.
  • Scoop out 1 cup of oat mixture and set aside for the topping. Press the remaining mixture into the bottom of the pan.
  • Add apple or apple/berry mixture overall. Spoon remaining oat mixture over top and gently spread it over fruit. It won't be perfect; there will be some gaps.
  • Bake 30 minutes. Topping will feel quite firm.
  • Set aside to cool. (I always eat a piece right away)
  • Store in refrigerator or freezer.

These breakfast bars are quick and easy to make. They freeze well and can be made with many combinations of fruits and nuts. Make these and freeze them for a quick breakfast on the go.

1 cup whole oats
1 cup oat flour
½ cup brown sugar
½ teaspoon salt
½ teaspoon baking soda
½ cup almond milk
2 eggs
¼ cup melted butter
1 teaspoon vanilla extract
1 cup fresh blueberries
½ cup chopped walnuts
⅓ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine whole oats, oat flour, brown sugar, salt, and baking soda together in a bowl. Stir in almond milk, eggs, butter, and vanilla extract until well combined. Fold in blueberries and walnuts. Spread mixture into prepared square pan; top with shredded coconut.
  • Bake in the preheated oven until edges are golden and coconut is brown; about 35 minutes. Cool in the pan for 10 minutes before cutting into squares.

  • Preheat the oven to 350 degrees. Line a baking pan (I used a glass loaf pan) with parchment paper or rub down with coconut oil (coconut or avocado oil spray works too). Set aside.
  • Place half of the rolled oats in the glass of a blender and pulse until you have fine powder. Add to a medium bowl.
  • Add the rest of the rolled oats, coconut oil, coconut sugar, cinnamon, apple sauce, and most of the cubed apples (save 1/4 cup) and mix until well incorporated.
  • Press the mix into prepared pan with the back of a spoon, be sure that it's packed in tight. Top with remaining cubed apples. Press in a bit so they stick. You can also use sliced apples to make it "fancy".
