Tender pork combined with apples and raisins is a family favorite for us! I've substituted dried cranberries for the raisins, and that was so good too! Recipe can be altered if serving more people.

APPLE BRANDY PORK CHOPS WITH RAISINS
This is a very tasty but simple and quick dinner for two. Easily done on a week night. I use the small loin center cuts which cook real quick, but you can also use something like a butterfly chop.

PORK CHOPS WITH APPLES AND RAISINS
This is a recipe from Tyler Florence which I have had good success with. It is pretty easy, you just need to plan a little ahead of time as this needs a couple of hours for the pork chops to soak in the brine. I like to serve this with wild rice.

With a fruity apricot, raisin and apple topping, these tender chops are special enough to serve to company, yet simple enough to fix anytime. The best part is that the apples don't have to be peeled-just core and slice, and you're ready to go. -Kathleen Harris Galesburg, Illinois
