These easy cranberry brie bites are especially popular during the holiday season. Make them as Christmas appetizer, New Year's Eve snack, or for any party.

1 sheet frozen puff pastry, from 1, 17oz box
Nonstick cooking spray
4 oz. brie cheese
1/2 c. cranberry sauce, homemade or canned
3 tbsp. raw shelled pistachios, chopped
Flaky sea salt and ground black pepper, optional

Steps:

  • Thaw the puff pastry according to package directions.
  • Preheat the oven to 400°F. Spray a 24-well mini muffin pan with non-stick cooking spray. Place the brie in the freezer for 20 minutes or until firm to the touch.
  • On a well floured surface, roll the sheet of puff pastry into a 10x15-inch rectangle. Cut the pastry into 4 strips lengthwise. Then, cut the pastry crosswise into 6 strips, creating 24 squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges.
  • Cut the firm brie into 24 (½-inch) slices. Place a piece in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce. Sprinkle with chopped pistachios.
  • Bake for 15 minutes or until the puff pastry is golden brown on the edges and the cheese is bubbly. Let cool in the pan for 5 minutes. Remove the bites from the pan and garnish with sea salt and pepper, if desired.

Cranberry Brie Bites are an outrageously quick, easy, make-ahead friendly holiday appetizer that always disappear in a flash. These little beauties taste like mini baked brie made with buttery, flaky, puff pastry stuffed with cubes of creamy, melty brie cheese, sweet, tangy pepper jelly cranberry sauce all crowned with nutty pistachios and aromatic rosemary. 2 puff pastry sheets
8 ounces brie cheese
1 1/2 cups whole cranberry sauce
1/3 cup pepper jelly
1/4 teaspoon ground cinnamon
pinch cloves
1/2 cup pistachios, walnuts, or pecans finely chopped
fresh rosemary sprigs (optional)
2 24 cup mini muffin pans

Steps:

  • Thaw the puff pastry according to package directions until it's thawed but still cold (easier to work with if it's not thawed completely). Meanwhile, place the brie in the freezer for 20 minutes or until firm to the touch. Once firm, slice the wheel of brie in half through the equator then chop into 48 pieces.
  • Preheat the oven to 400 degrees F. Lightly spray two 24-well MINI muffin pans with non-stick cooking spray.
  • Whisk together the cranberry sauce, pepper jelly, cinnamon and cloves in a medium bowl; set aside.
  • Roll out one sheet of puff pastry onto a well-floured surface into a 10x14-inch rectangle. Cut the pastry into 4 strips lengthwise and 6 strips crosswise to create 24 equal squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges. Repeat with second pastry in the second pan.
  • Place a piece of brie in the center of each pastry square then top each brie with a heaping 1 teaspoon of cranberry sauce. Sprinkle with chopped nuts.
  • To bake both pans at once, place one pan in the lower third of the oven and the second pan in the top third and switch positions halfway through baking. To bake one pan at once, place the pan in the middle rack of the oven. Bake for 15-20 minutes at 400 degrees F or until the puff pastry is golden and the cheese is bubbly. Let cool in the pan for 5 minutes before transferring to a serving platter. Garnish with fresh sprigs of rosemary if desired.

These apple cranberry mini Brie bites are super to serve to guests around the holidays, but they really could be your go-to appetizer year round if you wanted them to be.

8 ounces Brie cheese
1 Granny Smith apple
1 cup whole cranberry sauce
2 teaspoons chopped fresh rosemary
2 sheets frozen puff pastry (defrosted)
1 egg (beaten)

Steps:

  • This recipe starts by cutting all your ingredients into the right shape and size. Cut the Brie cheese into 24 pieces about ⅜-inch thick. (I like the skin of Brie cheese, which is entirely edible, but if you don't like it, trim the skin off.)
  • Roll the puff pastry out into a 12-inch square and then cut the large square into twelve 3-inch squares.
  • Slice the apple into ¼-inch slices, and then cut each slice in half. Cut the pointed tips off the apple slices so they do not pierce through the puff pastry.
  • Combine the cranberry sauce with the fresh rosemary in a bowl.
  • Now, assemble the mini Brie bites. Brush a little beaten egg around all four edges of each puff pastry square. Dollop half a teaspoon of the cranberry sauce in the middle of the puff pastry. Place a piece of the Brie on top of the cranberry sauce and then top it with a piece of the apple. Wrap the puff pastry up around the filling by pulling up each side of the pastry and bringing it all together in the center to form a "beggar's purse". Pinch the dough together to seal shut and slightly flatten the top down. Brush the bites with more of the egg wash on all sides and chill them in the refrigerator for 30 minutes.
  • Pre-heat the air fryer to 360°F.
  • Spray or brush the bottom of the basket with a little oil and air-fry the bites in batches for 8 to 10 minutes.
  • Let the Brie bites cool for a few minutes before serving warm.
  • To make in the oven: Place the mini Brie bites on a baking sheet topped with a piece of parchment paper. Bake in pre-heated 375ºF oven for 15 to 20 minutes.
