APPLE CRANBERRY MINI BRIE BITES
These apple cranberry mini Brie bites are super to serve to guests around the holidays, but they really could be your go-to appetizer year round if you wanted them to be.

- This recipe starts by cutting all your ingredients into the right shape and size. Cut the Brie cheese into 24 pieces about ⅜-inch thick. (I like the skin of Brie cheese, which is entirely edible, but if you don't like it, trim the skin off.)
- Roll the puff pastry out into a 12-inch square and then cut the large square into twelve 3-inch squares.
- Slice the apple into ¼-inch slices, and then cut each slice in half. Cut the pointed tips off the apple slices so they do not pierce through the puff pastry.
- Combine the cranberry sauce with the fresh rosemary in a bowl.
- Now, assemble the mini Brie bites. Brush a little beaten egg around all four edges of each puff pastry square. Dollop half a teaspoon of the cranberry sauce in the middle of the puff pastry. Place a piece of the Brie on top of the cranberry sauce and then top it with a piece of the apple. Wrap the puff pastry up around the filling by pulling up each side of the pastry and bringing it all together in the center to form a "beggar's purse". Pinch the dough together to seal shut and slightly flatten the top down. Brush the bites with more of the egg wash on all sides and chill them in the refrigerator for 30 minutes.
- Pre-heat the air fryer to 360°F.
- Spray or brush the bottom of the basket with a little oil and air-fry the bites in batches for 8 to 10 minutes.
- Let the Brie bites cool for a few minutes before serving warm.
- To make in the oven: Place the mini Brie bites on a baking sheet topped with a piece of parchment paper. Bake in pre-heated 375ºF oven for 15 to 20 minutes.

- Preheat oven to 375°. Unroll one tube of crescent dough into one long rectangle; press perforations to seal. Cut into 24 pieces; lightly press each piece onto the bottom and up sides of an ungreased mini-muffin cup. - Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees F (200 degrees C).

- Thaw the puff pastry according to package directions until it's thawed but still cold (easier to work with if it's not thawed completely). Meanwhile, place the brie in the freezer for 20 minutes or until firm to the touch. Once firm, slice the wheel of brie in half through the equator then chop into 48 pieces.
- Preheat the oven to 400 degrees F. Lightly spray two 24-well MINI muffin pans with non-stick cooking spray.
- Whisk together the cranberry sauce, pepper jelly, cinnamon and cloves in a medium bowl; set aside.
- Roll out one sheet of puff pastry onto a well-floured surface into a 10x14-inch rectangle. Cut the pastry into 4 strips lengthwise and 6 strips crosswise to create 24 equal squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges. Repeat with second pastry in the second pan.
- Place a piece of brie in the center of each pastry square then top each brie with a heaping 1 teaspoon of cranberry sauce. Sprinkle with chopped nuts.
- To bake both pans at once, place one pan in the lower third of the oven and the second pan in the top third and switch positions halfway through baking. To bake one pan at once, place the pan in the middle rack of the oven. Bake for 15-20 minutes at 400 degrees F or until the puff pastry is golden and the cheese is bubbly. Let cool in the pan for 5 minutes before transferring to a serving platter. Garnish with fresh sprigs of rosemary if desired.
