CREAM CHEESE APPLE BREAD
This is from a free cooking school booklet. This is made with Splenda but you could probably subsitute with no problems. I haven't made this, but it looks tasty. I catorgized this as a diabetic recipe. If it isn't, please let me know.

Steps:
- Preheat oven to 350.
- Spray a loaf pan with nonstick spray.
- Cream butter and Splenda brown sugar blend together until smooth.
- Beat in eggs, applesauce, orange extract and vanilla.
- Set aside.
- In a seperate bowl, combine flour, baking powder, baking soda, cinnamon and allspice.
- Add the flour mixture to the butter mixture and blend until smooth.
- Stir in raisins and nuts, if using.
- Set aside.
- Blend together the cream cheese, Splenda brown sugar blend, flour and orage extract.
- Pour half of the bread batter into the prepared pan.
- Spoon the cream cheese mixture on top.
- Cover with the remaining bread batter.
- Bake 60 minutes or until toothpick inserted in center comes out clean.

APPLE-PECAN-OAT QUICK BREAD WITH CREAM CHEESE GLAZE
Mix chopped toasted pecans into this apple bread, then glaze the whole loaf with a vanilla cream cheese icing.

- Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
- Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the oats and pecans and toss together. Set aside.
- Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded apples. Fold this mixture into the flour mixture until just incorporated.
- Transfer the batter to the prepared loaf pan(s). Tap the bottom on a hard surface a few times and smooth the top. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes for the regular and 35 to 40 minutes for the minis. Transfer to a wire rack to cool for 30 minutes, then turn the bread out and let cool completely on the rack.
- Whisk together the confectioners' sugar, cream cheese, milk and vanilla extract in a small bowl until smooth.
- Pour the glaze over the bread and allow to set at room temperature, 15 to 20 minutes. Store in an airtight container for up to 1 week.
APPLE BUTTER CREAM CHEESE SPREAD
This delicious spread is great for a fall or winter day.

- Place cream cheese, apple butter, vanilla, and cinnamon in the container of a food processor fitted with a metal blade. Process until just smooth, about 20 seconds. Scrape down the sides of the container and process again until combined, if necessary.
- Scrape the spread into a small bowl; cover with plastic wrap and refrigerate until slightly firm, about 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, combine the sugar, flour, cinnamon walnuts, apples, and cheese. Add the eggs, melted butter or margarine, and milk; stir until well blended. Pour into prepared loaf pan.
- Bake in preheated oven for 1 hour, or until done. If loaf starts to brown too much, cover with foil.

- In a small bowl, cream butter and sugar; beat in vanilla. Stir in flour. Press onto the bottom and 1 in. up the sides of a 6-in. springform pan coated with cooking spray; set aside. , For filling, in a small bowl, beat the cream cheese, egg and vanilla. Pour over crust. - In a large bowl cream together the butter and the sugar and beat in the honey and the eggs. Into the butter mixture sift together the flours, the baking powder, the baking soda, and the salt, stir the mixture until it is combined well, and stir in the apples, the cheese, and the walnuts. Spoon the batter into a buttered loaf pan, 9 by 5 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 50 to 60 minutes, or until a tester comes out clean. Turn the bread out onto a rack, and let if cool completely, and serve it sliced with the cream cheese.

- Grease 9" springform pan.
- Preheat oven to 350 deg. F.
- Cream butter with sugar, then add cream cheese and beat until smooth and creamy. Stir in eggs and vanilla.
