2 tablespoons coarsely grated apples
2 tablespoons self-rising flour
2 teaspoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
2 tablespoons water
2 tablespoons maple syrup

Steps:

  • Mix the apple with the flour, sugar, cinnamon and baking powder.
  • Pour the water and maple syrup into a small saucepan and heat until simmering.
  • Using a teaspoon, scoop the apple mixture into three balls.
  • Gently drop the balls into the simmering syrup and cover the pot with a well-fitting lid.
  • Simmer the dumplings over a very low heat for fifteen minutes then serve them with the syrup.

The dumpling bakes firm around the apple and has a sugary cinnamon crunch outside. The addition of Sprite is clearly some sort of magic trick...

1 large apple, peeled and cut into 8 slices
1 can(s) crescent dinner rolls
1 stick butter or oleo (which is margarine but butter is way better)
1 c sugar
1 tsp cinnamon
1/2 tsp vanilla
1 can(s) Sprite (12 oz)

Steps:

  • 1. Wrap 1 piece of apple in 1 crescent roll.
  • 2. Line in pan about 1/2 inch apart.
  • 3. Next, mix together butter/oleo, sugar, cinnamon, and vanilla.
  • 4. Cook until sugary on med heat.
  • 5. Pour over apple dumplings.
  • 6. Pour Sprite down through dumplings, not on top.
  • 7. Bake at 350 for 35 to 40 min.

A favorite of my husband and father who are both diabetic. And even my babies love these. I always have to double the recipe to have enough to go around!

2 large honeycrisp apples are best (can use any really sweet apples of your choice)
2 can(s) pillsbury big & flaky crescent rolls
1 stick light butter or margarine
1/2 c splenda/sugar baking mix
1 tsp cinnamon
1 tsp pure vanilla extract
20 oz diet sprite/diet 7up or diet mountain dew

Steps:

  • 1. Slice apples in 16 slices wrap securely in crescent rolls try not to leave any openings for more even cooking of the apples.
  • 2. Place wrapped apples in 11x13 glass baking dish
  • 3. Melt butter and add splenda mix,cinnamon and vanilla. Mix until well blended pour over the top of your wrapped rolls making sure each is well covered. Open your soda and pour over the top and down inbetween the rolls.
  • 4. Heat oven to 375 and bake for 20-30 minutes remove when rolls get golden brown and serve. Great served with vanilla icecream or just with a bit of sugar free whipped cream for those that can't have sugar!
