BAKED APPLE ROSES



Baked Apple Roses image

These were inspired by a cook named Ana, a Brazilian food blogger living in Italy. I really hope you give these gorgeous looking, and very delicious apple roses a try soon. Enjoy!

1 large red apple, cored and very thinly sliced
¼ cup white sugar
1 teaspoon ground cinnamon
1 sheet frozen puff pastry, thawed
¼ cup melted butter
1 egg
2 teaspoons water
1 teaspoon confectioners' sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter 2 small ramekins (6 to 8 ounce) and dust with white sugar.
  • Place apple slices on a plate, overlapping slightly if necessary. Microwave on High about 45 seconds just until slices have softened a bit. Cover plate with plastic wrap and a kitchen towel.
  • Mix together sugar and cinnamon in a bowl.
  • Roll puff pastry sheet to less than 1/8-inch thickness. Using a pizza cutter, cut two 3-inch by 12-inch rectangles. Reserve remaining pieces for another use.
  • Spread melted butter over dough; top with a generous amount of cinnamon-sugar. Place apple slices along 1 long edge of dough, about 1/4 inch beyond edge of dough, overlapping slices slightly. Fold bottom half of dough over the apple slices to form a long "folder" of dough with rounded edges of apple slices exposed.
  • Beat egg and water together in a bowl. Paint surface of dough with egg wash. Sprinkle with more cinnamon-sugar, to taste.
  • Starting from one end, roll dough not too tightly to form a rose-shaped pastry. Seal roll with end of dough strip.
  • Transfer roses to prepared ramekins. Sprinkle with a little more cinnamon-sugar. Place ramekins directly on middle rack of preheated oven.
  • Bake until well browned, about 45 minutes. Remove ramekins with tongs and place on baking sheet to cool 5 to 10 minutes. Remove apple roses from ramekins and finish cooling on rack. Dust with confectioners' sugar before serving.

You don't need to be a pastry chef to bake this deliciously tempting rose-shaped dessert. It tastes just like apple pie. And it looks a lot like a beautiful red rose. Made with naturally sweet apple slices, sprinkled with cinnamon and rolled up in a perfectly crispy puff pastry. - Manuela from Cooking With Manuela.​

1/2 package Puff Pastry Sheets (1 sheet), thawed
2 red apple (I used Red Delicious- Manuela)
2 tablespoons lemon juice (from 1/2 lemon)
1 tablespoon all-purpose flour, to sprinkle the counter
3 tablespoons apricot preserves or ground cinnamon

Steps:

  • Thaw the puff pastry at room temperature if you haven't done so yet. It should take about 20-30 minutes.
  • Prepare a bowl half filled with water and the lemon juice. Cut the apples in half, remove the core and cut the apples in paper-thin slices. Leave the peel so it will give the red color to your roses. Right away, place the sliced apples in the bowl so that they won't change color.
  • Microwave the apples in the bowl for about 3 minutes, to make them slightly softer and easy to roll. If you prefer, you can also simmer the apple slices with the water in a small pan (on the stove). The apple slices should be cooked just enough to bend without breaking. If they break, you need to cook them a little more.
  • Unwrap the puff pastry over a clean and lightly floured counter. Using a rolling pin stretch the dough into a rectangular shape of about 12 x 9 inch (30 x 22 cm). Cut the dough in 6 strips, each about 2 x 9 inch (5 x 22 cm).
  • In a bowl, place three tablespoons of apricot preserves with two tablespoons of water. Microwave for about one minute (or warm up on the stove) so that the preserves will be easier to spread. Spread a thin layer of preserves on each strip of dough.
  • Preheat the oven to 375°F (190°C). Drain the apples.
  • Arrange the apple slices on the dough, overlapping one another. Make sure the top (skin side) of the slices sticks a little out of the strip. Sprinkle with cinnamon.
  • Fold up the bottom part of the dough.
  • Starting from one end, carefully roll the dough, keeping the apple slices in place. Seal the edge at the end, pressing with your finger, and place in a regular muffin cup. No need to grease the muffin mold if it's silicone. Otherwise, make sure to grease with butter and flour (or spray).
  • Do the same for all 6 roses. Bake at 375°F (190°C) for about 40-45 minutes, until fully cooked. NOTES: Make sure the pastry is fully cooked on the inside before removing the roses from the oven! If after the first 30 minutes the apples start to burn on top, move the pan to a lower rack of the oven and finish baking. You can also cover loosely with aluminum foil for these last 10-15 minutes, to avoid burning the top. Sprinkle with powdered sugar and enjoy!
  • These are best eaten right after baking, when still warm and crisp. They can be stored in an air-tight container at room temperature for up to two days. Or in the refrigerator for up to three days. You can always warm them up for a few minutes by placing in the oven before serving.

This is our version of Chudleigh's Apple Blossoms. Nothing beats theirs, but this is a good 2nd choice if you can't get them. Freezes well for OAMC so feel free to double the recipe and make some for another day. :)

4 apples, peeled, cored, and cubed small (northern spy or Granny Smith)
1 teaspoon lemon juice
1/2 teaspoon cornstarch
1/4 teaspoon cinnamon
4 tablespoons butter
1 cup brown sugar
1 1/2 cups self-rising flour
4 tablespoons vegetable oil
water, to mix
1 egg, mixed with
1 tablespoon water (to make an egg wash)
8 teaspoons rolled oats
8 teaspoons coarse sugar (or sugar in the raw)

Steps:

  • Preheat oven to 400° and line a baking sheet with parchment paper or a silpat.
  • FILLING: mix all filling ingredients together in a small bowl. Set aside.
  • CARAMEL: Heat caramel ingredients over medium heat; Bring to boil, stirring constantly; Let boil for about 2 minutes. Remove from heat and cool to room temperature, stirring occasionally.
  • DOUGH: Mix the flour and oil together in a bowl, and mix in just sufficient cold water to make a firm (but not sticky) dough. Divide dough into 8 equal pieces. Then roll out each into a 5-6" disc.
  • ASSEMBLY: Place 1/8th of apple filling onto center of each dough round. Fold up edges of dough up towards the center, making a cup around the filling (you could use a jumbo muffin tin for this too). Brush with eggwash.
  • To each blossom, sprinkle 1 tsp of rolled oats followed by a drizzle of caramel topping into tops of apple filling. Follow with a light sprinkle all over with sugar in the raw.
  • Bake at 400F for 25-30 minutes or until heated through. Cool on wire rack.

1 2/3 cups (300 grams) white chocolate, chopped
2/3 cup (150 grams) milk
4 sheets (9 grams) gelatin
1 cup (250 grams) cold heavy cream
1/2 cup (60 grams) chopped walnuts
1 2/3 cups (200 grams) all-purpose flour
1/2 cup (125 grams) unsalted butter, cold
2 1/2 tablespoons (30 grams) sugar
Pinch salt
3 tablespoons (45 milliliters) cold water
6 Honeycrisp apples, or apple of your preference
Lime or lemon juice, to prevent oxidation

Steps:

  • For the caramel walnut cream: Place the white chocolate in a nonstick pan and melt it over low heat, stirring with a rubber spatula until completely melted. Let cook undisturbed until golden brown, 5 to 10 minutes. (The chocolate that is in contact with the bottom of the pan will caramelize and gain color.)
  • Take the pan off the heat and stir the chocolate together, pressing down and scraping against the pan until the chocolate is smooth and liquid again.
  • Bring the milk to a boil in a small saucepan.
  • Soak the gelatin sheets in cold water in a small bowl for 5 minutes. Squeeze the gelatin to remove excess water and stir it into the warm milk.
  • Add the white chocolate to a food processor. With the food processor running, stream the warm milk into the white chocolate, then stream in the heavy cream.
  • Pour out into a shallow 3-quart baking dish and stir in the walnuts. Cover the cream with plastic wrap pressed directly against its surface and refrigerate until firm, about 2 hours.
  • For the crust: Place the flour, butter, sugar and salt in a bowl and combine it with the tips of your finger until it resembles sand. Add the water and mix just until it comes together. (Do not overmix.) Wrap it in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Divide the dough into 6 even pieces, then use your fingers to press each piece into a 4-inch tart pan.
  • Prick the dough all over with a fork and bake until the edges look golden brown, 12 to 15 minutes. Let cool completely.
  • For the floral decoration: Fill the tart crusts with caramel walnut cream. Set aside.
  • Cut the flesh off the core of an apple in 4 pieces. Slice each piece super-thinly on a mandolin, so that each slice has a border of peel on it.
  • Place a piece of plastic wrap down on your work surface. Place one apple slice on one end of the plastic, cut-side facing you, domed side facing away. Then shingle the rest of the slices in a line from left to right. Brush them with some lime or lemon juice. Roll them up tightly until they take the size and shape of a rose. Place the apple rose on top of one of the tarts and open up the petals by loosening them with your fingers to create a flower that covers the entire surface of the tart.
  • Repeat with the remaining apples and tarts. Serve immediately.

Think of an apple pie in the apple with a crust of your favorite sugar cookie or sweet pie dough. They will be a great end to a dinner party or just for you. I have made the recipe for 1 apple, you can scale it to the number you want.

1 apple, I like Granny Smith (Fuji or other crisp apple will work)
1 tablespoon sugar
1/2 tablespoon flour
1/2 teaspoon cinnamon
lemon juice (to keep apple from browning)
sweet pie crusts or sugar cookie dough

Steps:

  • Preheat oven to 350F.
  • Slice off top 1/4 to 1/3rd of the apple.
  • With small sharp knife or melon baller, carve out the apple leaving about a 1/4 inch or more shell. Be sure it is still strong enough to stand.
  • Dice the apple top and insides (of course you remove the seeds and stem).
  • Mix the diced apple, sugar, flour and cinnamon in a bowl.
  • Roll out your dough to about 1/4 inch.
  • Use a flower or round cookie cutter and cut a top for each apple. Use a straw to make 3 or 5 holes in the center (so it looks like a flower).
  • Fill apple with mix and top with flower.
  • There will be extra mix - if you are doing a bunch you can make a little pie or place in a ramekins and top with the flowers.
  • Brush tops with water, milk or butter and sprinkle with cinnamon sugar.
  • Place on a sheet and bake in oven for about 40 minutes. Top should be golden and apple soft.

3 medium apples
4 tablespoons sugar
2 tablespoons lemon juice
Flour, for sprinkling
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
5 tablespoons sugar
2 teaspoons ground cinnamon

Steps:

  • Heat oven to 400°F. Grease or spray 9 regular-size muffin cups.
  • Wash and core apples. Thinly slice each one, leaving the peel on.
  • In 2-quart saucepan, heat 4 cups water, 4 tablespoons sugar and the lemon juice to boiling. Add the apple slices; boil about 3 minutes or until apples are soft. You want to be easily able to bend them without breaking.
  • Drain apples, and place on paper towels to dry and cool completely.
  • Sprinkle flour on work surface, and roll out dough sheet. Sprinkle 5 tablespoons sugar and the cinnamon on surface of dough. Using pastry cutter (or pizza cutter), cut dough into 9 (1-inch) strips.
  • Arrange cooled apple slices end to end down each strip. Carefully roll up each strip, and place in muffin cup.
  • Bake 20 to 25 minutes or until nicely golden. Remove from pan, and cool on cooling rack. Serve and enjoy!
