This is a delicious breakfast dish that my mother likes to prepare for Christmas breakfast. It is easy to prepare, and sets overnight, so in the morning you just put it in the oven and enjoy.

1 cup brown sugar
1 teaspoon ground cinnamon
½ cup butter, melted
3 apples - peeled, cored and sliced
½ cup raisins
1 (1 pound) loaf French baguette, cut into 1 inch slices
6 eggs, lightly beaten
1 ½ cups milk
1 tablespoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared pan. Arrange bread slices in an even layer over apples.
  • In the bowl, whisk together eggs, milk, vanilla and 2 teaspoons cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil, and refrigerated overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Remove dish from refrigerator while the oven is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.

1 loaf day-old challah bread, crust removed, cut into 1-inch cubes
1/2 cup sugar
1/4 cup apple cider, plus more for syrup if needed
Juice of 1/2 lemon
3 Gala apples, peeled, cored and diced
3 medium Granny Smith apples, peeled, cored and diced
2 tablespoons apple brandy, such as Calvados, optional
1 stick (8 tablespoons) butter, softened
1/4 teaspoon fine salt
1/4 cup sugar
1 cup all-purpose flour
1/2 cup rolled oats
1/2 teaspoon cinnamon
Softened butter for greasing the baking dish
3 large eggs
2 large egg yolks
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 1/2 cups half-and-half
4 tablespoons cold butter, cut into pieces

Steps:

  • For the French toast and caramelized apples: Preheat the oven to 275 degrees F.
  • Spread the bread cubes on a large baking sheet and bake until lightly toasted, about 15 minutes. Let cool. Adjust the oven to 350 degrees F.
  • Combine the sugar, apple cider and lemon juice in a large, high-sided saute pan and bring to a simmer over medium heat. Stir in the Gala and Granny Smith apples and cook, stirring occasionally, until softened and caramelized, about 15 minutes. Add the apple brandy if using; cook a few minutes longer. Using a slotted spoon, transfer the apples to a bowl (you don't want the apples to be too wet) and let cool. Reserve the apple cooking liquid for serving.
  • For the streusel: Mix together the butter, salt and sugar in a large bowl until smooth. Add the flour, oats and cinnamon and mix until well combined. Refrigerate for 15 minutes. Squeeze the mixture in your hands to form larger and smaller clumps.
  • For the casserole: Butter a 9-by-13-inch baking dish with some softened butter. Whisk the eggs, yolks, vanilla and cinnamon in a large bowl until smooth. Whisk in the half-and-half, then fold in the cooled apples. Add the bread and stir to coat, pressing down to make sure bread is totally submerged. Let sit for 10 minutes.
  • Transfer the apple-bread mixture to the buttered baking dish, pressing down to make sure the top is an even layer. Scatter the streusel evenly over the top. Cover with foil and bake for 30 minutes. Uncover and continue baking until puffed and lightly golden brown, another 30 minutes or so. Remove from the oven and let cool slightly.
  • Reheat the reserved apple cooking liquid. (If very thin, simmer briefly over medium heat until reduced to a syrup; if there isn't much, add some apple cider and simmer briefly.) Turn the heat to low and whisk in the cold butter, piece by piece, until emulsified. Serve with the French toast.

3 large apples, peeled and sliced thinly (I use Cortland or Empire)
3/4 cup brown sugar, packed
2 tablespoons water
1 teaspoon cinnamon
8 slices Italian bread, 1 inch thick
4 large eggs
1 1/4 cups milk
2 teaspoons vanilla extract

Steps:

  • Melt the butter in a large skillet and add apples.
  • Cook and stir for 5 minutes.
  • Add brown sugar, water, and cinnamon and continue to cook and stir for 10 minutes until apples are tender.
  • Spoon mixture into 13x9 baking dish.
  • Cover apples with bread slices, making sure to cover the entire surface.
  • Trim the bread to fit if you must.
  • Beat eggs until foamy, then beat in milk and vanilla.
  • Pour egg mixture over the bread slices.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • In the morning, remove the dish from the refrigerator and let it stand while oven is preheated to 375 F.
  • Bake uncovered for 35 minutes, or until bread is golden and firm.
  • Let sit 10 minutes before serving.
  • To serve on a platter, run a knife around the edges of the casserole, place platter on top of casserole, and carefully flip.
  • To serve individually, use a spatula to remove serving, place serving plate on top of serving and carefully flip so apple side is up.

This Apple Cinnamon French Toast Casserole is the perfect holiday breakfast entertaining recipe made with fresh apples, pecans, and served with maple syrup!

2 tsp butter for greasing the pan
20 thick slices of French bread (approximately 1 and a half loaves of French bread)
12 eggs
4 1/2 cups milk
1 cup brown sugar
2 tsp cinnamon
1/2 teaspoon nutmeg
3 apples (cut into chunks)
1/3 cup chopped pecans
1/3 cup white sugar
1 teaspoon cinnamon
Powdered sugar for dusting
Whipped cream or whipped topping of your choice for serving
Maple Syrup for serving

Steps:

  • Grease a large rectangular baking pan (I use a lasagna casserole dish that's slightly larger than 9-inch by 13-inch) with butter.
  • Arrange the slices of French bread in the baking dish so the tops are facing up.
  • In a large bowl whisk together the eggs, milk, brown sugar, cinnamon, and nutmeg, and pour the egg mixture carefully over the bread in the casserole dish, making sure to moisten each piece completely.
  • Add the chopped apples to the top, along with the pecans, pushing them down slightly into the cracks between the pieces of bread.
  • Combine the white sugar and cinnamon in a small bowl and sprinkle it over the casserole.
  • Bake immediately at 350 degrees Fahrenheit for about 40 minutes, or cover with plastic wrap and place in the fridge to chill overnight.
  • If you choose the overnight method, simply remove the plastic wrap and add the dish to a cold oven. Preheat the oven as normal and when it reaches 350 degrees, set your timer for 40 minutes and bake as normal. The casserole dish will preheat slowly with the oven and this will prevent the dish from cracking. Never place a cold casserole dish in a hot oven!!
  • Remove the casserole from the oven and let cool for about 10 minutes before serving. Dust with powdered sugar and garnish with whipped cream and maple syrup when serving.

1/2 cup granulated sugar
1/4 cup dark brown sugar, packed
2 teaspoons vanilla extract

Steps:

  • Grease a 9x13 casserole dish with nonstick baking spray.
  • Layer the bread cubes and apples in the bottom of the baking dish.
  • In a large bowl, whisk together the eggs, milk, granulated sugar, dark brown sugar, vanilla extract, and cinnamon. Pour this mixture evenly over the bread cubes and apples.
  • Cover the casserole and put it in the fridge overnight or let it sit in the fridge for at least 6 hours to allow time for the milk to soak into the bread.
  • Add the streusel ingredients to a large ziploc bag and smush together to combine. Put this in the fridge with the casserole until time to bake.
  • When ready, preheat the casserole to 350 degrees. Bake the French toast casserole for 35-40 minutes. Then remove it from the oven and sprinkle the struesel over the top. Continue baking for another 5-10 minutes or until a knife inserted into the center comes out clean.
  • Serve warm with maple syrup.

1 Tbsp water
3 granny smith apples
cinnamon to taste
1/2 c raisins, optional
1 loaf french bread, sliced 1/2" thick
1 1/2 c milk

1/2 c sliced almonds, for garnish
CREME TOPPING
1/2 c whipping cream
1/2 c sour cream
1/4 c sugar
1/2 tsp almond extract

Steps:

  • 1. Combine butter, brown sugar & water in saucepan and heat on medium until bubbling stirring frequently. Pour this mixture into a 9x13" pan and allow to cool 20-30 minutes.
  • 2. Place sliced apples over brown sugar mixture in bottom of pan in rows close together, overlapping is fine. Sprinkle with cinnamon, nutmeg & raisins if desired.
  • 3. Place sliced bread on top of apples. Mix eggs, milk & vanilla and pour over bread.
  • 4. Cover & refridgerate overnight or for at least 3 hrs. to let the bread throughly absorb the egg mixture.
  • 5. Bake at 350 for 1 hour or until golden and crispy on top. Invert onto platter for serving. If any apples stick you can remove them with a spatula and just arrange on top.
  • 6. Creme topping is optional but delicious! Just whip all ingredients on high until thickened and serve a generous spoonful on top of each serving.
