- In a large skillet, combine the apples, sweet potatoes, ham, brown sugar, salt, pepper and curry. Cook over medium heat until apples are crisp-tender; drain. Combine cornstarch and apple juice until smooth; stir into apple mixture. Bring to a boil; cook and stir for 1-2 minutes or until mixture is thickened. , Transfer to a greased 2-qt. baking dish. Cover and bake at 375° for 10 minutes or until sweet potatoes are tender. Meanwhile, in a large bowl, whisk together the pancake mix, milk, butter and mustard; pour over ham mixture. , Bake, uncovered, for 25-30 minutes or until puffed and golden brown.

- Heat oven to 425°F.
- Place 2 tablespoons butter into 9-inch ceramic pie plate or metal pie pan; place in oven 4-5 minutes or until melted and pie plate is hot. Spread melted butter over bottom of pie plate.
- Combine flour, milk and eggs in bowl; beat with whisk until well mixed. Carefully pour batter into hot pie plate. Bake 14-17 minutes or until puffed and light golden brown.
- Melt remaining 2 tablespoons butter in nonstick skillet over medium heat. Add apples and brown sugar. Cook, stirring occasionally, 5-7 minutes or until apples are tender. Add ham; cook 1-2 minutes or until ham is heated through.

HAM AND CHEESE IN PUFF PASTRY
Steps:
- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

Sweet, pink apples topped with biscuit-like dumplings. This was my favorite dessert when I was a child, and I still love it. Fall is not fall if I don't make it. Serve it warm with ice cream or heavy cream.

- Preheat oven to 450 degrees F (230 degrees C). Grease a 9x12-inch baking dish. Arrange apple slices in the bottom of the prepared baking dish.
- Stir 2 1/2 cups white sugar, water, and food coloring together in a saucepan; bring to a boil and cook until mixture reduces to a thick pink syrup, about 10 minutes. Pour syrup over apples.
- Melt butter in the same saucepan over medium heat; stir 3 tablespoons sugar and cinnamon into butter until dissolved. Remove from heat.
- Sift flour, baking powder, and salt together in a bowl. Cut shortening into flour mixture using two knives or a pastry cutter until mixture has the consistency of coarse crumbs. Stir milk into shortening mixture until a soft dough comes together.

- FOR THE PASTRY: In a food processor combine flour, sugar, baking powder, pepper, and the 1 teaspoon salt; cover and pulse with a few on/off turns to combine. Add the 1 1/2 cups butter; cover and pulse with several on/off turns until the largest pieces of butter are no bigger than a small pea (about eight 1-second pulses). Add cheese; cover and pulse with a few on/off turns to work it inches Add egg yolks; cover and pulse with a few on/off turns to combine.
- Transfer the mixture to a very large bowl. Gradually add 1/2 cup of the ice water, stirring with a fork until combined. Squeeze a small handful of the dough together (it should easily hold together without crumbling apart). If necessary, add enough of the remaining 1/4 cup ice water, 1 tablespoon at a time, until dough holds together, stirring between additions. Gather mixture into a ball, kneading gently until it holds together. Transfer to a cutting board; cut into six equal portions. Place each dough portion on a sheet of plastic wrap; fold the plastic wrap tightly over the ball. Pat each plastic-wrapped dough ball into a 4-inch disk. Chill for 1 hour to 2 days.
- FOR THE TARTS: place apple slices in a large bowl. Add the 1/4 cup melted butter, the apple jelly, and lemon juice; toss to combine. Line two extra-large baking sheets with parchment paper; set aside.

SIMPLE PUFF PASTRY APPLE DESSERT
These are easy to make and really tasty. I just made another batch and found that I like them even better using brown sugar. I also had to add 2 tsp of flour as a thickener to this batch because the apples released a lot of juice.

- 1. Prepare apples. I peel them and then use a corer/slicer that gives you 8 wedges. Cut each wedge into 3 pieces. Place cut apples in a bowl of water with the lemon or lime juice as you cut it so it won't discolor. When you are done cutting all apples, drain them well.
- 2. In a very large skillet, melt the butter over a low/medium heat and toss in the apples.
- 3. Sprinkle with cinnamon and sugar. I use golden delicious apples (NOT red delicious, which will turn to mush) Cortlands are really good too. If you use a tart apple, like granny smith, you will need to increase the sugar to 1/2-2/3 cups.
- 4. Cook the apples until they are a little soft, but not cooked to mush. Cool for 5 minutes.
- 5. Fill the 5x5 inch puff pastry squares & close in a triangular shape, pinching the edges well all around. Place on a baking sheet.
- 6. Brush cream on each one & sprinkle with raw sugar.
- 7. Place in preheated 400 degree oven until nicely browned. It usually takes about 20 minutes, but watch after 15 minutes, so that they don't burn. I have found that they bake best on the middle shelf. The tops burn on the top shelf and the bottoms burn on the bottom shelf, so bake in two batches if you have to.
