  • In a small bowl, whisk the first eight ingredients. Drizzle over greens and fruit.

I am a big fan of Chick-fil-A's® grilled market salad and their signature zesty apple cider vinaigrette! So, I developed a recipe to fill that craving. This dressing is simply amazing... the zing of the apple cider vinegar, hint of sweet pineapple and tangy lime juice, and warm heat of the freshly cracked black pepper is a sure winner!

1 tablespoon water
1 teaspoon white sugar
⅛ teaspoon xanthan gum
10 tablespoons vegetable oil
¼ cup apple cider vinegar
¼ cup honey
2 tablespoons pineapple juice
2 teaspoons lime juice
1 teaspoon salt
1 teaspoon coarsely cracked black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
⅛ teaspoon cayenne pepper

Steps:

  • Combine water, sugar, and xanthan gum in a small bowl; whisk to create a smooth gel with no lumps.
  • Combine vegetable oil, vinegar, honey, pineapple juice, lime juice, salt, pepper, garlic powder, onion powder, and cayenne in a medium bowl. Whisk in xanthan gum gel until dressing is smooth and all ingredients are incorporated. Transfer to a vinaigrette bottle and store in the refrigerator until ready to use.

1 chopped Granny Smith apple (with core and peel)
1/4 cup raw unfiltered apple cider vinegar
1 tablespoon fresh lime juice
1 tablespoon minced shallot
1 teaspoon raw sugar
1/4 cup plus 1 tablespoon safflower or grapeseed oil
kosher salt
freshly ground black pepper

Steps:

  • Purée 1 chopped Granny Smith apple (with core and peel), 1/4 cup raw unfiltered apple cider vinegar, and 1 tablespoon fresh lime juice in a blender, occasionally scraping down sides of blender with a spatula, until smooth. Strain mixture through a finemesh sieve into a medium bowl, pressing down on solids with spatula to extract all juice; discard solids. Whisk in 1 tablespoon minced shallot and 1 teaspoon raw sugar. Whisk in 1/4 cup plus 1 tablespoon safflower or grapeseed oil until well blended. Season with kosher salt and freshly ground black pepper. DO AHEAD: Vinaigrette can be made 1 day ahead. Cover and chill. Rewhisk before using.

Steps:

  • Combine apple cider vinegar, lemon juice, honey, mustard, salt, garlic powder, onion powder, oregano, and pepper in a small jar. Place lid on tightly and shake until ingredients are well combined. Pour in olive oil, and shake jar again to combine.

1/4 cup extra virgin olive oil
Salt and freshly ground white pepper to taste
Few drops porcini oil

Steps:

  • Press currants through a fine sieve. Juice apple with a fresh-juice extractor. (If you do not have a juice extractor, you may substitute 1/4 cup fresh apple cider and a drop of lemon juice.)
  • Combine currants with apple juice and slowly whisk in olive oil. Season with salt and white pepper, and add just a few drops of porcini oil. Serve over tuna or pork chops.
