APPLE PUFFS WITH MERINGUE

- For the apple puffs: Place the apples in a medium pot with 1/2 cup water, the honey, butter, lemon juice and cinnamon. Stir and cook over medium heat until the apples soften, 10 to 15 minutes. Remove from the heat and stir in the walnuts. Set aside.
- Preheat the oven to 350 degrees F and place a rack close to the center of the oven.
- On a lightly floured surface, roll the puff pastry to about 1/8-inch thick and cut the pastry into 3-by-3-inch squares. Press the squares into the wells of a mini muffin tin and poke the bottoms with a fork to dock. Place a heaping tablespoon of the apple mixture in the center. Repeat for the remaining pieces of pastry and apple filling.
- Bake until the pastries are puffed and golden, 25 to 30 minutes. Transfer the apple puffs to a wire rack to cool while you make the meringue.
- For the meringue: In the bowl of a standing mixer fitted with a whisk attachment, beat the sugar, lemon juice and egg whites on medium speed until the meringue is glossy, smooth and holds a stiff peak.
- Dollop a tablespoon of the meringue on top of each puff and use a kitchen torch to brown the outside. Alternatively, place the puffs on a baking sheet and broil until the meringue is lightly browned, 2 to 3 minutes. Serve at room temperature.

- Preheat the oven to has 7, 220C, fan 200°C Line two baking sheets with nonstick baking paper.
- Unroll the puff pastry sheet, lay it on a work surface, then cut into 8 rectangles. Lightly score about 5mm (1/4 in) from the edges of each rectangle with a sharp knife, to give a narrow border. Lay them on the baking sheets. Spread 1/2 tablespoon of the lemon curd over the centre of each piece of pastry, just up to the border.
- Lay the apple slices onto each piece of pastry so they overlap, standing up slightly, and cover the centre of the pastry, but leave most of the border uncovered. Bake for 15-18 minutes, or until the apples are just tender and the pastry edges are golden.
- Meanwhile, for the glaze, warm the remaining 3 tablespoons of lemon curd in a small pan with 2 teaspoons of water, until it is just runny. Remove the tarts from the oven, and brush the apples and pastry edges with the glaze. Leave them to cool slightly, then serve warm with double cream or vanilla ice cream.

- Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups.
- In a bowl, sift together the flour, baking powder, and salt. In a separate bowl, cream together the 1/2 cup sugar, eggs, butter, lemon zest, lemon juice, and milk. Mix the creamed ingredients into the flour mixture until evenly moist. Fold in the apples. Spoon into the prepared muffin cups.
- Mix the 1 tablespoon sugar and cinnamon, and sprinkle over the tops of the muffin batter.
- Bake 15 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Cool 1 to 2 minutes before turning out onto wire racks to cool completely.

- Preheat oven to 450 degrees F (230 degrees C). Grease a 9x12-inch baking dish. Arrange apple slices in the bottom of the prepared baking dish.
- Stir 2 1/2 cups white sugar, water, and food coloring together in a saucepan; bring to a boil and cook until mixture reduces to a thick pink syrup, about 10 minutes. Pour syrup over apples.
- Melt butter in the same saucepan over medium heat; stir 3 tablespoons sugar and cinnamon into butter until dissolved. Remove from heat.
- Sift flour, baking powder, and salt together in a bowl. Cut shortening into flour mixture using two knives or a pastry cutter until mixture has the consistency of coarse crumbs. Stir milk into shortening mixture until a soft dough comes together.
- Drop dough by the tablespoonful over apples; lightly press the back of a spoon onto each "puff" of dough to form a small dent. Spoon about 1 teaspoon of butter-cinnamon-sugar mixture into each dent.
- Bake in the preheated oven until dough puffs and apples are tender, 25 to 30 minutes.

- In a skillet over medium heat, melt butter.
- Add apple rings; sprinkle with 2 teaspoons of sugar. Cook until tender, turning once.
- In a mixing bowl, beat the egg yolk, lemon peel and vanilla for 1 minute.
- In another mixing bowl, beat egg white until stiff peaks form; fold in flour and remaining sugar. Fold into egg yolk mixture.
- Place apple rings in a greased 2-cup baking dish. Spread egg mixture on top.

- Preheat oven to 400°. In a large saucepan, bring water and butter to a boil. Add flour all at once, stirring until a smooth ball forms. Remove from heat; let stand 5 minutes. - Preheat oven to 425°F. Cook butter in a small saucepan over medium, swirling often, until bubbling and golden, about 5 minutes; set aside.
- Toss apples, brown sugar, flour, lemon zest, lemon juice, vanilla extract, cinnamon, ginger, and salt in a large bowl. Transfer to a shallow 3-quart baking dish. Drizzle all but 2 Tbsp. brown butter over apples. Top with pieces of puff pastry, then brush pastry with remaining brown butter. Sprinkle with granulated sugar.
- Bake until pastry is puffed and golden around edges, 25-30 minutes. Reduce temperature to 350°F and bake until juices are thick and bubbling and pastry is brown all over, 30-35 minutes longer.
