1 (16 ounce) package medium egg noodles, cooked and drained
2 apples, cored, peeled, and grated
1 cup chopped walnuts
1/2 cup golden raisin
1 lemon, juice of
1/2-1 cup butter, melted
1 cup sugar
4 eggs, beaten
1 cup orange juice

Steps:

  • In a large bowl, gently toss noodles, apples, walnuts, and raisins together; set aside.
  • In another bowl, combine the remaining ingredients; stir into noodle mixture.
  • Spread mixture into a greased 13x9 inch baking pan.
  • Bake in a 350° oven for 40 minutes.

1 (8 ounce) package egg noodles
2 tablespoons butter, melted
3 Macintosh apples, sliced
3 eggs, separated
1 cup white sugar
¼ cup golden raisins
2 teaspoons ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Stir melted butter and noodles in a large bowl.
  • Mix apples, egg yolks, sugar, raisins, cinnamon, and vanilla extract into noodle mixture until well blended.
  • Beat egg whites in a large bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
  • Fold egg whites into noodle mixture; pour into prepared baking dish.
  • Bake in the preheated oven until browned, about 40 minutes.

2 ounces unsalted butter, (melted)
1 pound cottage cheese
2 cups sour cream
1/2 cup granulated sugar
6 large eggs
1 teaspoon ground cinnamon
1/2 cup golden raisins
1 Granny smith apple, (coarsely chopped (approximately 2 cups))
2 teaspoons granulated sugar
1 teaspoon ground cinnamon
Pinch of kosher salt

Steps:

  • Preheat oven to 375 degrees F. Grease a 9-by-13-inch casserole dish with butter or baking spray.
  • Bring a large pot of salted water to a boil. Cook the noodles for 4 minutes, then drain and set aside.
  • In a large mixing bowl, Whisk together the butter, cottage cheese, sour cream, sugar, eggs, and cinnamon. Stir in the noodles, raisins and chopped apples.
  • Prepare the topping: in a small bowl, combine the sugar, cinnamon and salt using a fork.
  • Pour filling into the prepared casserole dish, and top evenly with the cinnamon sugar mixture.
  • Bake until custard is set and top is golden brown, approximately 40 to 45 minutes.

1 (8 ounce) package wide egg noodles
½ cup butter, melted
2 cups small curd cottage cheese
1 teaspoon salt
1 ½ cups applesauce
1 ½ cups white sugar
1 teaspoon ground cinnamon
6 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Melt butter in the pot, and stir together the drained noodles, cottage cheese, salt, and applesauce. Mix in the sugar and cinnamon. Add the beaten eggs; stir to blend all ingredients. Pour mixture into prepared baking dish.
  • Bake until top is very brown, about 1 hour.

12 ounces medium egg noodles
3 cups milk
1 cup heavy cream
1 cup Tokai wine
1/2 cup sugar, plus 1/4 cup
3 eggs
3 egg yolks
1/2 cup sour cream
1 teaspoon cornstarch
1 tablespoons dark rum
1 teaspoon vanilla extract
1/2 cup frozen apple juice, thawed
1 tablespoon unsalted butter
1/4 cup dark brown sugar
3 to 4 large tart baking apples, such as Granny Smith, Rome, Golden Delicious or Northern Spy, peeled, cored, cut into quarters, and sliced 1/4-inch thick
3/4 cup dried cherries

Steps:

  • Cook the noodles in the milk, cream, Tokai, and 1/2 cup of the sugar until very soft, about 20 minutes.
  • In a bowl, mix the eggs, egg yolks, sour cream and the remaining 1/4 cup sugar together. Temper the noodles into the eggs by adding a little of the hot liquid to the eggs to raise the temperature and then adding the eggs to the noodles with the heat off.
  • Preheat oven to 375 degrees F.
  • In a bowl, whisk together the cornstarch, rum, vanilla and apple juice concentrate. In a saute pan, melt the butter over high heat. Add the brown sugar to melt, then the apples. Saute for 1 minute. Add the slurry and cook until thickened. Stir in the cherries.
  • In a 2 1/2-quart buttered casserole, alternate the noodle mixture and the fruit in 5 layers (3 noodle and 2 fruit). Bake until browned on top, about 35 minutes.
