¼ cup butter
4 apples, peeled and diced into 1/4-inch cubes
½ cup brown sugar
¼ cup white sugar
1 ½ teaspoons lemon juice
1 ½ teaspoons ground cinnamon
½ teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground cloves
2 tablespoons water
1 tablespoon cornstarch
4 sheets pie crust pastries
1 teaspoon all-purpose flour
¾ cup confectioners' sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 ½ tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves; cook and stir until apples have softened and sugars have melted, about 5 minutes. Bring to a boil.
  • Combine water and cornstarch in a bowl. Stir cornstarch mixture into the apple mixture; cook and stir until apple mixture is thickened, about 5 minutes. Remove from heat; cool completely, about 20 minutes.
  • Roll out 1 sheet of pie crust on a work surface with a rolling pin; cover with half of the cooled apple mixture. Roll out a second sheet of pie crust with a rolling pin; slice into 1/2-inch wide strips with a sharp knife. Weave pie crust strips together over apple mixture to create a lattice top.
  • Flour a round cookie cutter or drinking glass. Press cookie cutter through dough to create 12 round pies. Transfer to a baking sheet.
  • Bake in the preheated oven until crust is cooked through a golden brown, about 20 minutes. Transfer to a wire rack to cool, about 10 minutes.
  • Repeat with remaining pie crusts and apple mixture; place on a second baking sheet. Bake in the oven until crust is cooked through a golden brown, about 20 minutes.
  • Combine confectioners' sugar and 1 teaspoon cinnamon in a mixing bowl; add 1 teaspoon vanilla extract. Stir in milk slowly until desired consistency is reached; drizzle over cooled pies.

This jar of cookie ingredients makes an original gift for a favourite teacher - simply pop in a jar and add a label with the cooking instructions to transform into deliciously fruity, spiced biscuits

175g plain flour
1 tsp mixed spice
1 tsp ground cinnamon
½ tsp bicarbonate of soda
100g light brown soft sugar
50g rolled oat
85g raisins or sultanas
50g malted milk biscuits , broken into small chunks
1 shiny, perfect apple
1 big jam jar or small Kilner jar (about 750ml capacity)
1 long colourful ribbon
1 sticky label for the jar (or tag to tie to the top) and a pen
weighing scales
measuring spoons

Steps:

  • Wash the jar, then dry very well.
  • Mix the flour with the spices and bicarb, then tip into the jar. Use your fingers to remove any lumps from the sugar, then pour into the jar. Add each of the remaining ingredients, one by one, following the list, until you've added the biscuit bits.
  • When all the ingredients are in the jar, put the lid on tightly. Sit the apple on top of the lid and tie to the jar with ribbon. The mixture and apple will keep for 4 days.
  • Download our printable label (see tip), or write out the following instructions on a sticky label (or tag) and attach to the jar: Tip everything in the jar into a big mixing bowl and grate in the peeled apple. Melt 50g/2oz butter with 2 tbsp golden syrup and stir into the bowl with 1 egg. Space 10 spoonfuls on greased trays and bake for 15-18 mins at 180C/160C fan/gas 4 until golden and chewy. The cookies will firm up as they cool.

1 pound baking apples such as Golden Delicious, Gala or Fuji (2 to 3 apples), peeled, cored and cut into 1/4-inch dice (about 2 1/2 cups diced)
1 tablespoon lemon juice (from about 1/2 lemon)
1/2 teaspoon apple pie spice
1/4 teaspoon pure vanilla extract
1 cup sugar
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature
1 teaspoon cornstarch
1 3/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon fine salt
1 large egg

Steps:

  • Toss together the apples, lemon juice, apple pie spice, vanilla and 1/3 cup of the sugar in a medium bowl. Melt 2 tablespoons of the butter in a medium skillet over medium heat. Add the apple mixture and stir to coat with the butter. Cover and cook, stirring occasionally and adding about 1/4 cup water if the mixture becomes too dry or begins to brown, until the apples are tender and shiny, about 20 minutes. When the apples are tender, there should be some liquid left in the skillet; if not, add 1/4 cup water and stir. Mix the cornstarch with 1 teaspoon water in a small bowl and pour it into the apple mixture. Stir well and bring the mixture to a boil to activate the starch. Cook until thick and bubbly, 30 seconds to 1 minute more. Transfer to a bowl and refrigerate for 15 minutes.
  • Whisk together the flour and salt in a bowl. In another bowl, beat the remaining 8 tablespoons butter and 2/3 cup sugar with an electric mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg until just combined. Turn the mixer to low and gradually beat in the dry ingredients in 2 additions, beating until just incorporated.
  • Line 2 baking sheets with parchment. Scoop 1-tablespoon portions of dough and roll between your hands to form 1-inch balls. Place about 2 inches apart on the prepared baking sheets. Gently press a thumbprint into the center of each ball about 1/2 inch deep, being careful not to crack the edges. Fill each indentation with 1 teaspoon of the filling, then chill the cookies 15 minutes in the freezer.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
  • Bake, rotating the baking sheets from top to bottom and front to back about halfway through, until the cookies are set, about 30 minutes. Cool the cookies completely on the baking sheets. Store the cookies in an airtight container in the refrigerator for up to 5 days.

6 ounces cream cheese, softened
2 tablespoons vanilla extract
2 cups all-purpose flour
5 teaspoons white sugar
2 teaspoons baking powder

2 tablespoons sugar, or to taste
1 teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat butter, cream cheese, and vanilla extract together in a large bowl until smooth. Add flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon; mix until dough comes together.
  • Roll dough into a 1/4-inch thick round on a floured work surface. Cut out 48 circles with a cookie cutter.
  • Top 24 dough circles with a teaspoon of apple pie filling. Cover with remaining 24 dough circles. Crimp edges with a fork to seal. Arrange cookies on lined baking sheets.
  • Bake in the preheated oven until cookies are golden brown, 23 to 29 minutes. Cool for 5 minutes.
  • Mix 2 tablespoons sugar and 1 teaspoon cinnamon together in a shallow bowl. Roll warm cookies in sugar and cinnamon mixture until coated. Transfer to a wire rack to cool, about 10 minutes.

1-1/2 teaspoons salt
1-1/2 teaspoons baking powder
1-1/2 cups shortening
6 large egg yolks
3/4 cup plus 4-1/2 teaspoons water
3 tablespoons lemon juice
8 cups sliced peeled tart apples
1-1/2 cups sugar
1 cup crushed cornflakes
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 large egg white, lightly beaten

Steps:

  • In a large bowl, combine the flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. Whisk the egg yolks, water and lemon juice; gradually add to flour mixture, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes. , Divide dough in half so that one portion is slightly larger than the other. On a lightly floured surface, roll out larger portion to fit the bottom and sides of a greased 15x10x1-in. baking pan. Arrange apples over crust. Combine the sugar, cornflakes, cinnamon and nutmeg; sprinkle over apples., Roll out remaining dough to fit top of pie; place over apples. Seal edges; cut slits in top. Brush with egg white. Bake at 400° for 15 minutes. Reduce heat to 350°; bake 20-25 minutes longer or until golden brown.

I use a jar lid for a cookie cutter. You can make these as large or as small as you like. From OhBiteIt. Go to their website for mouthwatering pictures. For a variation, use chocolate frosting and cherry pie filling. Yum. Maybe next time I will use blueberry filling with cream cheese to spread instead of caramel....or how about using jam instead of pie filling?

1 (14 ounce) box of frozen pillsbury pie crusts (2 sheets per box)
1 (16 -20 ounce) can apple pie filling (just enough for a thin layer)
1 cup caramel sauce (just enough for a light coating-not caramel syrup-it's thinner-the squeeze bottle kind is great)
1 egg, for egg-wash
2 tablespoons cinnamon sugar
1 tablespoon nutmeg
flour, for sprinkling

Steps:

  • Lay out a sheet of Pie Crust, sprinkle it with some flour and slightly roll it out, just to increase its surface area.
  • Pour some of the Caramel Sauce (Just enough to coat the crust) onto the crust and evenly spread it around, creating a thin layer of caramel.
  • Coarsely chop the Apple Pie Filling into small pieces.
  • Top the caramel layer with a layer of the chopped up Apple Pie Filling, making sure not to add too much pie filling.
  • Roll out the second sheet of Pie Crust the same size as the first sheet, and slice it into strips.
  • Create a lattice crust (just like on a pie) for the top of the pie filling...DON'T create the lattice on the counter, it's not fun getting it on top of the bottom crust.ugh! Create your lattice on top of the actual filling, as if it were a pie! If you want, you can skip this and just place circles of pie crust over the cookies and prick holes in them, sealing with a fork.
  • Dip your cookie cutter into some egg wash and cut out your Pie Cookies.
  • Brush the tops of them with some egg wash and sprinkle them with the Cinnamon Sugar and Nutmeg. Make sure the edges are sealed as well as you can(the cookie cutter through both layers is what seals them! ).
  • Place them onto a baking sheet(it will be easier if you use parchment paper so the juicy caramel doesn't stick to the pan) and bake them at 350 degrees for approximately 20-25 minutes, until they're golden and firm. Let them cool just a little.
  • Pour a glass of cold Milk and grab a warm one, or 5. Open up and bite into the juiciest, chewiest, fruitiest Apple Pie Cookie ever.
  • And any scraps left over? Just roll out the scraps and brush with melted butter then sprinkle with cinnamon sugar and bake till golden. Or cut the cookies in squares to get more cookies and less waste!

3 large egg yolks

1 teaspoon ground cinnamon
8 cups sliced peeled Granny Smith apples
2 tablespoons butter, cubed
TOPPING:
1 large egg white
1/4 cup finely chopped pecans

Steps:

  • Beat butter, sugar and salt until blended; beat in egg yolks and vanilla. Beat in sour cream. Gradually beat in flour. Divide dough in half. Shape each into a rectangle; wrap in plastic. Refrigerate until firm, about 1 hour., Preheat oven to 375°. On waxed paper, roll one half of dough into a 14x10-in. rectangle. Transfer to a greased 13x9-in. pan; press onto bottom and 1/2 in. up sides of pan. (Dough may crack; pinch together to patch.) , For filling, mix sugar, flour and cinnamon; toss with apples. Place in crust; dot with butter. On waxed paper, roll remaining dough into a 14x10-in. rectangle; place over filling. Pinch edges to seal., Whisk egg white until frothy; brush over top. Steps:

  • Heat oven to 375°F. Grease 24 regular-size muffin cups with shortening; lightly flour.
  • In large bowl, mix cookie mix, flour, butter and egg with spoon until soft dough forms. Measure 2 cups of the dough, and set aside remaining dough. Using the 2 cups of dough, firmly press a heaping tablespoon of dough into bottom of each muffin cup.
  • Chop apple pie filling into small pieces; place a generous 2 teaspoons pie filling in center of each cookie cup. On floured surface, roll remaining dough 1/8 inch thick. Using small 1 to 1 1/2-inch cookie cutter, cut small shapes of your choice. If necessary, press any leftover scraps together, and reroll on floured surface to make total of 24 cutouts. Place one cutout on top of apple pie filling in each cookie cup.
  • In small bowl, mix sugar and cinnamon; sprinkle on tops of cutouts. Bake 14 to 17 minutes or until edges of cookies are deep golden brown. Cool 10 minutes in pan on cooling rack. Run metal spatula around edge of each cookie cup to loosen; cool in pan 20 minutes. Remove cookies from muffin cups to cooling rack to cool completely.
