My grandson Jacob, age 7, told me about a recipe he thought of while riding in the car. So we bought the ingredients, and we made it! Pretty darn good the way he thought it up. Sure makes a grandmother proud.

1 pastry for a double-crust 9-inch pie
1 (21 ounce) can apple pie filling
2 cups frozen blueberries
1 cup white chocolate chips
2 teaspoons cinnamon

Steps:

  • Preheat oven to 450°F.
  • Place pie crust into a deep dish pie plate, be sure to tear it and press it back into place.
  • In large bowl place can of apple pie filling, the frozen blueberries, the chocolate chips and cinnamon. Stir the mixture, lick the spoon, stir the filling and then lick the spoon one last time. Pour into bottom crust, and top with top crust. Try to pinch the two crusts together and crimp at irregular intervals.
  • Have your grandma whip one egg together and bush onto top crust and sprinkle sugar and cinnamon over the top. Be sure to tear a small hole in the top, and then poke more holes with a fork. Bake about 10 minutes and then drop the temperature to 350°F and finish baking about 1 and a half Jake and Josh shows (40 minutes). Remove and let it cool about 15 minutes longer than we did. Really good with ice cream.

1-1/2 teaspoons cider vinegar
FILLING:
1/2 cup sugar
1/4 cup all-purpose flour

5 cups sliced peeled apples
2 cups sliced peeled ripe pears
1/3 cup raisins

Steps:

  • Mix the first 4 ingredients; cut in butter until crumbly. Mix milk and vinegar; add gradually to crumb mixture, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions, 1 slightly larger than the other. Shape each into a disk; cover and refrigerate 1 hour or overnight., Preheat oven to 425°. On a lightly floured surface, roll larger portion of dough to a 1/8-in.-thick circle; transfer to a greased 9-in. pie plate. Trim crust even with rim. Refrigerate while preparing filling., Mix the first 5 filling ingredients. Place apples, pears and raisins in a large bowl. Add sugar mixture and extract; toss to combine. Spoon into crust., Roll out remaining dough to a 1/8-in.-thick circle; cut into 3/4-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Brush lattice with beaten egg. Sprinkle with coarse sugar., Bake pie on a lower oven rack 15 minutes. Reduce oven setting to 350°. Bake until crust is golden brown and filling is bubbly, 30-35 minutes. Cool on a wire rack.

¼ cup white sugar
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 pastry for a 9-inch double crust pie
5 apples, peeled, cored, and sliced
2 tablespoons maple syrup
2 teaspoons vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Stir together the sugar, cinnamon, and nutmeg in a small bowl; set aside. Press one of the pastries into the bottom of a 9-inch pie pan; reserve the crust.
  • Toss the apples with maple syrup and vanilla extract. Spread 1/3 of the apples into the pie pan and sprinkle with the sugar mixture. Repeat the layers with the remaining apples and sugar. Cover the pie with the top crust and pinch the edges to seal.

Real comfort food!! This one comes from a friend I worked with many years ago and one from my hand written cookbook. Makes a golden biscuit topping with a tasty sauce below. Nice with whipped cream and/or custard for a really filling dessert. I have altered the amount of water as suggested by reviewers but I find by allowing the pudding to stand after cooking the 2 cups should be ok.

1 pinch salt
2 teaspoons baking powder
1 tablespoon sugar
1 cup apple (peeled, cored & chopped)
1/2 cup milk
1 cup brown sugar
1 tablespoon butter
1 lemon, juice of
1 1/2-2 cups boiling water
1/2 teaspoon cinnamon

Steps:

  • Sift flour, baking powder, salt & sugar together.
  • Add the chopped apple & milk.
  • Mix well and place in greased ovenproof dish.
  • Blend together the brown sugar, butter, lemon juice and boiling water.
  • Pour this over the batter in the dish.
  • Sprinkle cinnamon on top and bake at 350'F/180'C for 20 - 25 minutes.
