So Easy and Tasty Apple Streusel image

"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.

3 large fall apples (Cortland or McIntosh are both great)
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon pure vanilla extract
1/4 cup cold butter (4 tbls. or 1/4 cup)
1/2 cup flour
1/3 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon ground nutmeg (optional)

Steps:

  • Preheat oven to 350°.
  • Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
  • Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
  • Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.

Crust:
1¼ cups all purpose flour
1½ tablespoons sugar
8 tablespoons (1 stick) unsalted butter, cut into pieces
1 egg yolk
1½ tablespoons ice water
Apple filling:
2½ tablespoons unsalted butter
4 Granny Smith apples, peeled, cored and cut into pieces
½ cup sugar
1 teaspoon lemon juice
½ teaspoon ground cinnamon
Streusel topping:
½ cup all purpose flour
½ cup old fashioned oats
½ cup light brown sugar
6 tablespoons unsalted butter

Steps:

  • For the crust:
  • Combine flour and sugar in a food processor. Pulse on/off to mix. Add butter and pulse on/off until butter is the size of baby peas. Add egg yolk. While pulsing on/off, add ice water and mix just until dough becomes a ball.
  • Transfer ball to a sheet of wax paper and shape into disc. Wrap up and refrigerate for at least one hour.
  • Preheat oven to 400°. Set aside 9" tart pan with removable bottom.
  • Roll out dough, either on a lightly floured surface or between two sheets of wax paper, so that it is large enough to fit into a 9" tart pan. Spray tart pan with cooking spray (i.e. Pam) and transfer dough to pan. Fold excess dough into pan to support outer edge. Prick with fork and freeze for 15 minutes.
  • Place on baking pan, line tart with parchment paper and fill with pie weights. Bake until edges are light brown. Remove parchment paper and bake additional 5 minutes. Remove from oven and cool completely.
  • For the apple filling:
  • Melt butter in sauté pan. Add apples, sugar, lemon juice and cinnamon. Saute over medium heat until apples are tender and all juices have evaporated. Cool completely.
  • For the streusel topping:
  • Stir flour, oats and brown sugar in small bowl. Use a fork or fingers to blend in butter. Set aside.
  • Preheat oven to 350°. Once tart shell and apples are cool, transfer apples into pan. Cover with streusel topping.
  • Bake on baking sheet in 350° oven for 30-35 minutes, until top is golden brown.
  • Cool completely. Once cool, push tart up to remove side of pan. Use large metal spatula to gently slide tart onto serving plate.
  • Betsy's tidbits:
  • A real bonus for this tart is that all of the layers can be made ahead of time. The crust may be rolled out and frozen in the tart pan, the filling may be prepared a day ahead of time and refrigerated overnight as can the streusel topping.

5 cups apples - peeled, cored and sliced

  • Bake in preheated oven for 10 minutes.
  • While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, oats, and lemon peel. Mix thoroughly, then cut in 1/2 cup butter or margarine until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.
  • Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 cups sliced cored peeled apples
1/2 cup granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1/2 cup unsalted butter, softened
1 cup Gold Medal™ all-purpose flour
2/3 cup packed brown sugar

Steps:

  • In medium bowl, mix 1 cup flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary). Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap, and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 400°F. On surface sprinkled with flour, using floured rolling pin, roll pastry dough into circle 2 inches larger than 9-inch pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  • In large bowl, toss Filling ingredients. Pour into pie plate, mounding apples toward center.
  • In medium bowl, use pastry blender or fingers to mix butter, 1 cup flour and the brown sugar until a crumb forms. Sprinkle evenly over top of pie. Sprinkle 1 tablespoon granulated sugar on top.
  • Bake 45 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble. Transfer to cooling rack to cool.

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk and wrap in plastic. Refrigerate 1 hour or overnight., Meanwhile, preheat oven to 450°. In a Dutch oven, combine filling ingredients. 1/2 recipe Tender Pie Dough (see recipe)
4 pounds Granny Smith apples, peeled, cut into 1/4-inch-thick slices and trimmed
2/3 cup superfine sugar
3 tablespoons unbleached all-purpose flour, plus more for rolling out the dough
2 teaspoons pure maple syrup, preferably Grade B
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
3/4 teaspoon pure vanilla extract
1 large egg, well beaten with a hand blender
1/3 cup plus 1 tablespoon unbleached all-purpose flour
1 tablespoon superfine sugar
1 tablespoon light brown sugar
1/8 teaspoon ground cinnamon
2 1/2 tablespoons unsalted butter, melted
1/8 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat to 350°F. Line a half-sheet pan with parchment paper.
  • To make the filling, gently toss the apples, sugar, flour, maple syrup, lemon juice, cinnamon, and vanilla in a medium bowl until well combined.
  • Make the streusel. Combine the flour, superfine sugar, brown sugar, and cinnamon in a small bowl. Stir the melted butter and vanilla together in another small bowl. Gradually stir the butter mixture into the flour mixture, just until evenly moistened (you may not need all of the butter). Squeeze the mixture in your hands until thoroughly combined. 1 pinch ground cinnamon
7 ounces unsalted butter, at room temperature
1 cup white sugar
3 teaspoons vanilla sugar
1 egg

Steps:

  • Combine apple slices and cinnamon in a saucepan and cook over low heat for 10 minutes. If necessary, add a tiny bit of water so apples don't burn. Remove from heat and set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with butter
