MY favorite after-school snack was applesauce with graham crackers. I started cooking and baking when I was a very young child, and as far as I can remember, this cake was my creation. -Rita Ferro, Alameda, California

Ingredients

6 whole cinnamon graham crackers
1 cup applesauce
1 cup whipped topping
Chopped walnuts, optional

Steps:

Place one graham cracker on a serving plate. Spread with 2 heaping tablespoons of applesauce. Repeat layers, ending with applesauce. Spread the whipped topping over top and sides. Sprinkle with nuts if desired. Refrigerate for 2 hours before slicing.

2 cups graham cracker crumbs
3/4 cup sugar, divided
1/2 cup butter, melted
4 cups sliced peeled tart apples (about 4 medium)
1 teaspoon ground cinnamon

Steps:

In a bowl, combine the cracker crumbs, 1/4 cup sugar and butter until crumbly; press two-thirds onto the bottom and up the sides of an ungreased microwave-safe 9-in. pie plate. Set remaining crumb mixture aside., In a bowl, toss apples with cinnamon and remaining sugar. Arrange in crust; sprinkle with reserved crumbs. Microwave, uncovered, on high for 6 minutes; rotate. Cook 5-6 minutes longer or until apples are tender. Cool on a wire rack. Store in the refrigerator.

Ingredients

1 (20 ounce) can light apple pie filling
2 tablespoons butter, softened
2/3 cup Splenda sugar substitute
2 eggs (or equivalent in egg substitute)
1 teaspoon vanilla extract
1 1/2 cups graham cracker crumbs
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup nonfat milk
1/4 cup chopped walnuts

Steps:

Preheat oven to 350 degrees.
Spray a 9x9-inch cake pan with non-stick spray.
In a large bowl, cream butter and Splenda. Beat in eggs and vanilla.
In a separate bowl, mix graham cracker crumbs, baking powder, salt.
Add dry ingredients to wet, mix well to combine.
Add milk and walnuts, stirring until just combined.
Spread half of mixture into prepared cake pan.
Spread half of pie filling over top.
Spread remaining batter carefully over apples and arrange remaining apple pie filling over top.
Bake for 45 to 50 minutes.
Place cake pan on a wire rack and let set for at least 10 minutes before removing from pan.
