CHEESE FONDUE

Cheese Fondue image

Throw a party with Tyler Florence's Cheese Fondue recipe from Food Network, a creamy mixture of Swiss and Gruyre; serve it with chunks of bread and apples.

Provided by Tyler Florence

Categories     appetizer

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 10

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Steps:

  • In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
  • Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
  • Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

Categories     Appetizer

Time 40m

Yield 5

Number Of Ingredients 9

2 cups shredded Swiss cheese (8 oz)
2 cups shredded Gruyère or Swiss cheese (8 oz)
2 tablespoons all-purpose flour
1 clove garlic, cut in half
1 cup dry white wine or nonalcoholic white wine
1 tablespoon lemon juice
3 tablespoons kirsch, dry sherry, brandy or nonalcoholic white wine
1 loaf (1 lb) French bread, cut into 1-inch pieces
Apple and pear slices, if desired

Steps:

  • In resealable plastic food-storage bag, place cheeses and flour. Shake until cheese is coated with flour.
  • Rub garlic on bottom and side of fondue pot, heavy saucepan or skillet; discard garlic. Add wine. Heat over simmer setting on fondue pot or over low heat just until bubbles rise to surface (do not boil). Stir in lemon juice.
  • Gradually add cheese mixture, about 1/2 cup at a time, stirring constantly with wire whisk over low heat, until melted. Stir in kirsch.
  • Keep warm over simmer setting. If prepared in saucepan or skillet, pour into a fondue pot or heatproof serving bowl and keep warm over low heat. Fondue must be served over heat to maintain its smooth, creamy texture.
  • Spear bread and fruit with fondue forks; dip and swirl in fondue with stirring motion. If fondue becomes too thick, stir in 1/4 to 1/2 cup heated wine.

FONDUE FOR TWO

Fondue for Two image

For a romantic Valentine's Day dinner or a cozy date night in, serve a pot of this rich, gooey mix of Gruyere and fontina. It's the perfect partner for all kinds of dippers: roasted potatoes, bread cubes and sticks, fennel, apple, salami, you name it.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Time 40m

Number Of Ingredients 11

8 ounces fingerling potatoes, scrubbed and halved lengthwise
1 tablespoon extra-virgin olive oil
2 thick slices rustic sourdough, cut into 1-inch cubes
1/2 cup dry white wine, such as Sauvignon Blanc
1 tablespoon kirsch (optional)
4 ounces Gruyere, grated
4 ounces fontina, grated
1/8 teaspoon freshly grated nutmeg
1 teaspoon fresh lemon juice
1 teaspoon cornstarch
Sliced fennel, apple, and dry salami and breadsticks, for serving

Steps:

  • Preheat oven to 375 degrees. On a rimmed baking sheet, toss potatoes with oil; roast 10 to 12 minutes. Flip; push to one side and add bread cubes. Continue to roast until potatoes are golden and tender and bread is crisp, 8 to 10 minutes more.
  • Reserve 1 tablespoon wine. In a small cast-iron pot, heat remaining wine with kirsch over low. Slowly add both cheeses, stirring in one direction until melted. Add nutmeg. In a small bowl, stir together lemon juice, cornstarch, and reserved wine. Slowly stir into pot; continue to cook over low heat, stirring, until mixture thickens and comes together, 4 to 5 minutes. Transfer to a fondue pot; keep warm. Serve with fennel, apple, salami, bread cubes and sticks, and potatoes.

CHEESE FONDUE

Cheese Fondue image

Provided by Food Network

Yield 6 servings

Number Of Ingredients 9

1/2 pound Emmentaler or Swiss cheese, coarsely grated
1/2 pound Gruyere cheese, coarsely grated
2 tablespoons cornstarch
1 garlic clove, halved lengthwise
1 cup dry white wine
Pinch dry mustard
Pinch freshly grated nutmeg
Freshly ground black pepper
1 loaf crusty bread, cut into chunks and assorted blanched vegetables

Steps:

  • Place the cheeses in a large bowl and sprinkle with the cornstarch, tossing to evenly coat the cheese. All cheese fondue recipes should contain some sort of starch, preferably flour or cornstarch; they protect the cheese from separating and curdling when melted.
  • Rub the inside of a fondue pot with the cut side of the sliced garlic and then discard. Place the pot over a sterno flame. Add the wine and bring to a gentle simmer, until tiny bubbles begin to rise to the surface, the wine's natural acidity makes the cheese smooth and creamy. Gradually stir the cheese into the simmering wine, allowing each handful to melt before adding another; melting the cheese slowly encourages a smooth fondue. Once the consistency is smooth, stir in the mustard, nutmeg and pepper.
  • Plating: Arrange an assortment of bite-size dipping foods, such as chunks of baguette, vegetables, and meats, on a lazy Susan around the fondue pot. Spear with fondue forks or wooden skewers, dip, swirl, and enjoy! If the fondue begins to get too thick during the meal, add some more wine and stir vigorously until the fondue is smooth. Be careful not to let the fondue boil.
