Steps:
- Spray 15x10-inch or larger dark or nonstick cookie sheet with cooking spray. Heat oven to 400°F (425°F for all other pan types). Unroll dough in pan; starting at center, press dough into 15x10-inch rectangle. Brush with olive oil. Bake 8 minutes.
- Spread crushed tomatoes evenly over crust. Top with garlic.
- Place arugula evenly over crust. Top with goat cheese, then prosciutto, followed by mozzarella cheese.
- Bake 5 to 9 minutes or until crust is golden brown and cheese is melted. To serve, cut into 6 rows by 3 rows.

FRESH GOAT CHEESE AND PROSCIUTTO PIZZA

Steps:
- Preheat the oven to 425 degrees F. Line a pizza pan or baking sheet with foil and lay the pizza crust on top. Spread the sauce evenly over the crust. Sprinkle with the mozzarella, leaving a 1-inch border around the edge.
- Bake until the cheese is melted, about 10 minutes. Remove the pizza from the oven and top with the prosciutto and goat cheese. Bake until the prosciutto is slightly crisp, about 4 more minutes. Sprinkle with the basil. Cut the pizza into 6 slices.
PROSCIUTTO AND GOAT CHEESE PIZZA

- Preheat oven to 425 degrees F.
- Lay pizza crust on a foil-covered pizza pan or cookie sheet. Spread sauce evenly over pizza crust. Sprinkle mozzarella cheese over crust, leaving a 1-inch border around the edge. Arrange prosciutto on top of cheese. Sprinkle goat cheese over prosciutto. Bake until prosciutto is crisp and cheese is melted, about 12 minutes. Sprinkle basil over pizza. Cut pizza into 6 slices and serve.

Steps:
- Make your own pizza crust or use a ready made crust of your choice.
- Brush the crust with a small amount of the olive oil.
- Arrange the peach wedges and cut or tear thin sliced prosciutto into pieces then arrange over the crust.
- Crumble the goat cheese over the peaches and prosciutto.
- Sprinkle the Herb de Provence over the pizza.

- Make dough and let rise:
- Stir yeast and sugar into water until dissolved and let stand 5 minutes, or until foamy. Whisk together flour and salt in a bowl and add yeast mixture, stirring until a dough forms. Knead dough on a floured surface 5 minutes. Put in an oiled large bowl and turn to coat.
- Let rise, covered with plastic wrap, in a warm place until doubled in bulk, about 1 1/2 hours.
- While dough is rising, put pizza stone in lowest position of oven (on oven floor if gas, lowest rack position if electric; remove other racks in either case) and preheat oven to highest setting (500-550°F; allow about 1 hour to preheat with stone).
- Shape dough:
- Quarter dough on floured surface and dust with flour. Shape and stretch 2 pieces of dough into 7- by 5-inch ovals (keep remaining dough covered).
- Sprinkle baker's peel generously with flour and carefully transfer ovals to it. Jerk peel; if dough sticks, lift it and sprinkle flour underneath.
- Top and bake pizzas:
- Working quickly, brush ovals with some oil and top each with one fourth of peaches, prosciutto, cheese, and rosemary. Season with salt and pepper.
- Line up far edge of peel with far edge of stone and tilt peel, jerking it gently. When edge of first pizza touches stone, quickly pull back peel to completely transfer pizzas to stone (do not move pizzas).
- Bake until crisp and golden, 6 to 8 minutes. Slide peel under pizzas to remove from oven.
- Shape, top, and bake 2 more pizzas in same manner. Drizzle remaining oil over pizzas.

- Preheat oven to 375 degrees F (190 degrees C). Place the garlic in a small square of aluminum foil. Drizzle 1/2 tablespoon of olive oil over the garlic. Wrap foil around garlic to seal.
- Roast the garlic in the preheated oven until soft, about 20 minutes. Smash roasted cloves with a fork.
- Place the pears in a bowl with 1 tablespoon olive oil; toss to coat. Arrange pear slices on a baking sheet.

- For this recipe, we will be using our Brazza wood-fired oven from Authentic Pizza ovens. The secret is heating up the oven ahead to sliding in that first pizza. One of the most important things is to heat up the oven to around 700 °F so the fire bricks are very hot. The whole pre-heating process should take about an hour but it really depends on the wood you'll be using. For very good results, I like to use Maple. If you want to use a standard oven, heat up to 475°F
- After about an hour of pre-heat time, its the right moment to start making the pizza! First of all, flour your hands and your work station.
- If you want to make the best pizza around, it's important to test the heat. My little trick here is to sprinkle a small amount of flour right on the section you want to cook the pizza. If the flour burns within a couple of seconds, the area is probably too hot. The flour should take about 8-10 seconds to turn brown and then you are ready to add the pizza.
