- Line a greased 15x10x1-in. baking pan with waxed paper; grease the paper and set aside. , In a large bowl, beat eggs for 3 minutes. Gradually add sugar; beat for 2 minutes or until mixture becomes thick and lemon-colored. Stir in applesauce. Combine the flour, baking powder, baking soda, cinnamon, salt and cloves; fold into applesauce mixture. Spread batter evenly into prepared pan. , Bake at 350° 12-15 minutes or until cake springs back when lightly touched. Cool for 5 minutes. Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack., Unroll cake; spread ice cream evenly over cake to within 1/2 in. of edges. Roll up again. Place seam side down on a serving platter. Frost top, sides and ends with whipped topping. Cover and freeze for at least 1 hour. Remove from the freezer 10 minutes before cutting. Drizzle with caramel topping if desired.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour tube pan.
- In a medium bowl, sift together the flour, baking soda, cinnamon, cloves and salt. Set aside.
- In a large bowl, cream the sugar and shortening until fluffy. Add applesauce and molasses and mix in.
- Gradually add the flour mixture and beat well to moisten. Fold in the raisins.
- Pour into a prepared fluted or straight sided tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until toothpick inserted into the middle of cake comes out clean. Cake will not rise to top of pan. Cool for 10 minutes and remove from pan and cool on wire rack.

- In a bowl, beat eggs. Combine flour, cinnamon and cloves. Add to eggs along with sugar; mix well. Add applesauce. Line a 15x10x1-in. pan with waxed paper, and grease and flour the paper. Pour batter into pan. Bake at 400° for 15 minutes. Turn out onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in towel. Let cool. Meanwhile, for filling, beat cream cheese, milk and sugar in a small bowl. Stir in raisins. Unroll cake; spread filling to within 1 in. of edges. Roll up again. Dust with confectioners' sugar if desired. Refrigerate until serving time. Cut into 1-in. slices.

- Put dry ingredients together.
- Heat milk, butter, 2 Tbsp sugar, salt,and 3/4 cup applesauce and add to dry mixture along with the egg.
- Knead dough for 3-5 minutes (add extra flour as needed) then cover for 1 hour.
- Punch down dough and roll out to 12 inch square.
- Spread 1/4 cup applesauce, 1/3 cup sugar, and cinnamon on dough.
- Roll up and cut into 12 even slices.
- Cover and let double.
- Bake in 2 8x8 pans for 20-25 minutes at 375°F.
- Make icing (combine all ingredients and mix).
