EASIEST APPLESAUCE CAKE
This moist spice cake starts with a simple mix, but makes a wonderful breakfast or snack cake. This is the easiest Applesauce Cake I have ever made!

- Preheat oven at 350 degrees F (180 degrees C). Grease and flour three 8x4 inch loaf pans.
- In a large bowl, stir together cake mix, instant pudding mix, nutmeg, and cinnamon. Add the applesauce, oil, eggs and water. Blend for 3 to 4 minutes using an electric mixer. Divide the batter evenly between the prepared pans.
- Bake for 50 to 55 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
- Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm.

APPLESAUCE PECAN CAKE W/APPLEJACK COMPOTE & CREME
Steps:
- Cake: Preheat oven to 300 degrees. Coat a 10 inch tube pan or 2 mini bundt pans (each pan holds 6 mini-bundt cakes)with Baker's Secret or other floured cooking spray. In a small mixing bowl add soda to applesauce, stir and set aside. Cream sugar, butter and eggs in a food processor or in a large mixing bowl with an electric mixer. Sift flour, baking powder, salt, and spices in a separate bowl. Alternate adding flour mixture with applesauce mixture to the creamed mixture until thouroughly blended. Add toasted pecans and raisins. Pulse or mix only until pecans and raisins are incorporated into the mixture. Pour batter into prepared pan(s). Bake 1 1/2 hours for tube cake or 30-40 minutes for mini-bundt cakes. Use a cake tester for doneness. Remove cake(s) from oven and cool before removing from pan. Slice the tube cake or if using mini-bundt cakes, place one cake in the center of 12 dessert plates. Spoon approximately 1/4 -1/2 cup of applejack compote over the cake. Create a small pool of creme anglaise around the base of the cake. Creme Anglaise: Scald cream with the vanilla bean in a heavy saucepan. Remove from heat and let stand until cooled slightly (about 10 minutes). Beat the egg yolks and sugar in a mixing bowl until pale yellow in color. Whisk approximately 1/4 cup of hot cream into the yolk mixture; whisk the yolk mixture into the hot cream and cook over medium to low heat, stirring constantly, until mixure coats a wooden spoon. Remove from heat and let cool fro 10 minutes. Whisk and pour into a storage bowl. Cover and let chill several hours before serving.

- Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
- Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. - Preheat oven to 350°F.
- In a small bowl, pour the milk and place the raisins in the milk. Let them sit while preparing the rest of the cake.
- Prepare a 9x13-inch pan by lining the bottom with parchment paper and spraying with nonstick spray.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves. Set aside.
- In a large bowl, beat together butter and sugars until mixed.
- Add the eggs and vanilla and beat until mixed together.
- Add the dry ingredients slowly to the butter and sugar mixture and beat just until combined.
- Add the applesauce and mix on low just until combined.
- Add the raisins and milk mixture and the walnuts and mix until just combined.
- Bake for 30 to 35 minutes or until a cake tester inserted in the middle of the cake comes out clean.
- Once the cake has cooled, frost with cinnamon cream cheese frosting.
- In a large bowl, beat together the cream cheese and butter until smooth.
- Add the powdered sugar and beat on low until powdered sugar is mostly mixed in.
- Add cream, vanilla, cinnamon and salt and mix on medium speed until all smooth and creamy.
- Once the cake has cooled, use an offset or rubber spatula to frost the top of the cake with cinnamon cream cheese frosting.

- Gather the ingredients.
- Heat the oven to 350 F (180 C/Gas 4). Butter and flour a 9-inch-square baking pan.

- Preheat oven to 350 degrees. Butter a 9-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on two sides. Butter parchment. In a medium bowl, toss apple and pecans with 2 tablespoons flour to coat. In a large bowl, whisk together remaining flour, baking powder, nutmeg, and salt. In a small bowl, combine applesauce and yogurt.
- In another large bowl, using an electric mixer, beat butter, granulated sugar, and orange zest on high until light and fluffy, 3 minutes, scraping down bowl as needed. Beat in eggs, one at a time, until combined. With mixer on low, add flour mixture in three additions, alternating with two additions applesauce mixture, and beat to combine. Fold in apple mixture.
