PENNY SUPPER CASSEROLE



Penny Supper Casserole image

This recipe is called Penny Supper Casserole and with good reason, the ingredients are cheap and filling.

Number Of Ingredients 8

4 medium potatoes (diced)
1 cup peas
1 small onion
¼ cup margarine
1 can mushroom soup
1 tsp mustard
8 hot dogs
1 cup velveeta cheese

Steps:

  • Cook potatoes and also cook peas and drain. Mix together with onion and margarine in a mixing bowl.
  • Mix soup and mustard into veggies.
  • Put into 7 X 11 dish.
  • Top with cut-up hot dogs.
  • Put on top.
  • Cover.
  • Bake for 25 - 30 minutes.

At the office where I worked years ago, we women often shared our favorite recipes at lunchtime. This casserole came from a co-worker, and my family has enjoyed it for some 30 years. Besides being easy and quick to prepare, it's very economical. It serves well for church suppers and potlucks, and it's a real time-saver on washdays!

1 pound ground beef
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (14-3/4 ounces) spaghetti in tomato sauce with cheese
1 can (15 ounces) mixed vegetables, drained
1 cup shredded cheddar cheese, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef until no longer pink; drain. Stir in soup, spaghetti and vegetables. Transfer to an ungreased 11x7-in. baking dish. , Bake, uncovered, 30 minutes or until heated through. Sprinkle with cheese if desired; bake 5 minutes longer or until cheese is melted.

Another great food budget watcher! I don't know too many people that will turn down hot dogs! This is an inexpensive casserole to make. Potatoes, canned soup mix and hot dogs are the main ingredients in this casserole.

4 medium potatoes, cooked and drained
2 teaspoons minced onions
1/4 cup soft butter
1 cup cooked peas
1 (10 1/2 ounce) can mushroom soup
1 (10 1/2 ounce) can celery soup

Steps:

  • Add salt and pepper to taste. Mix all ingredients and bake at 350°F for approximately 45 minutes. You can add more vegetables and hot dogs if you want to stretch out the casserole.

This is a recipe that I adopted in the Recipezaar restaurant give-away of Feb 2005. I've made it myself a couple times now and think the recipe is fine. I personally like to add about 1/3 cup of chopped green pepper, but it's not necessary--I'm happy to sponsor the recipe as originally written. Cooking time shown is for the stovetop method, which is the one I've followed. I have yet to try the oven method, but according to the original cook it should take about 15-25 minutes longer.

1 1/2 lbs lean ground beef
1 medium onion, Sliced
1 cup rice, Uncooked
2 1/2 cups water
2 teaspoons chicken bouillon, Instant
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon cinnamon
1/2 cup raisins
3 tablespoons peanut butter, Chunky
1 tablespoon honey

Steps:

  • Cook and stir the meat and onion in a large skillet until the onion is tender and the meat is brown.
  • Drain off the excess fat.
  • Stir in the remaining ingredients.
  • TO COOK IN A SKILLET: Heat the mixture to boiling, then reduce the heat and simmer, covered, stirring occasionally, until the rice is tender, about 35 minutes. (A small amount of water can be added if necessary.) TO COOK IN THE OVEN: Turn the mixture into an ungreased 2-quart casserole.
  • Cover and bake at 350 degrees F., stirring occasionally, until the rice is tender, about 50 to 60 minutes. (A small amount of water can be added if necessary.).
