APRICOT-CITRUS PRESERVES

Steps:

• Combine the apricots, raisins, oranges and lemon (both zest and juice), coriander, cinnamon, wine and water in a bowl; toss to combine thoroughly; leave overnight.
• The next day, put the fruit and liquid into a medium saucepan and bring to a simmer; simmer gently until the fruit is very tender, about 1 hour; add sugar and bring to a fast boil; boil about 12-18 minutes, or until a small amount of the fruit liquid, dropped onto a saucer and allowed to cool, wrinkles when your run your finger through it (this shows that the jam will 'set' once cool); stir in cashews, if using, and almond extract.
• You can put up the preserves in canning jars in the usual way, or just keep refrigerated.

APRICOT COCKTAIL II

Steps:

• Combine all ingredients in a cocktail shaker and shake vigorously. Strain into a cocktail glass.

APRICOT COCKTAIL

Steps:

• Fill a shaker with ice cubes.
• Add 1 part apricot brandy.
• Add 4 dashes bitters.
• Add ⅓ part grenadine.
• Add ⅓ part lemon juice.
• Add 1 part gin.
• Shake.
• Strain into a cocktail glass.
• Garnish with lemon.

Steps:

• In a 2 quart pitcher mix the nectar & the juices, blending well. If sugar is to be added, add it now, then stir, mixing well.
• Chill well before pouring into 4 glasses.

TRACI'S APRICOT BELLINI

Steps:

• Chill champagne and liqueur until cold, at least 1 hour. Pour liqueur into fluted glass; add champagne to the glass and stir.

CITRUS-APRICOT VEGETABLE GLAZE

Steps:

• In a small bowl, combine the preserves, butter, orange zest, lemon juice, salt and nutmeg. Yield: about 1/2 cup., For carrots and zucchini: Trim ends from vegetables. With a vegetable peeler, cut very thin slices down the length of each carrot and zucchini, making long ribbons. , Place carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 2 minutes. Add zucchini; cover and steam 2-3 minutes longer or until vegetables are tender. Transfer to a serving dish. Drizzle with glaze; toss to coat. Serve with a slotted spoon. Yield: 8 servings., For peas: Place peas in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until tender. Transfer to a serving dish. Drizzle with glaze; toss to coat. Serve with a slotted spoon.,

CITRUS DRINK

Steps:

• Combine all juices in one large or two small glasses. Taste, and if desired, add honey and stir to dissolve. Serve immediately.
