Baked Eggs With Crème Fraîche and Smoked Salmon image

Runny-yolked eggs baked in individual ramekins or custard cups make for a very elegant brunch or light supper. These are bathed in a shallot-steeped crème fraîche and topped with smoked salmon for an especially rich result. Serve them with toast, croissants or crusty bread - something to mop up the last bits of yolk and cream at the bottom of the ramekins. You won't want to leave behind a single drop.

Number Of Ingredients 10

2 tablespoons unsalted butter, plus more for greasing the ramekins
2/3 cup thinly sliced shallot (2 to 3 shallots)
1/2 teaspoon fine sea salt
3/4 cup heavy cream
1/3 cup crème fraîche
1 tablespoon chopped fresh dill, plus more for serving
1/2 teaspoon finely grated lemon zest
12 large eggs, at room temperature
Freshly ground black pepper
4 ounces smoked salmon

Steps:

  • Heat oven to 400 degrees, and brush six 8-ounce ramekins or ovenproof custard cups with butter. Place the ramekins or cups on a rimmed baking sheet.
  • Melt 2 tablespoons butter in a medium skillet over medium heat. Stir in shallots and 1/4 teaspoon salt, and cook until very soft, 7 to 10 minutes, reducing heat if necessary to prevent browning.
  • Stir in 6 tablespoons cream, the crème fraîche, dill, lemon zest and remaining 1/4 teaspoon. Remove from heat. Divide mixture among the ramekins.
  • Crack 2 eggs into each ramekin and float 1 tablespoon of cream on top of each, then sprinkle tops with salt and pepper. Bake until egg whites are just set, and yolk is still runny, 12 to 16 minutes. (The eggs will look slightly puffed at the sides of the ramekins, but still jiggly in the center and that's O.K. The eggs will continue to cook once out of the oven.) Remove from oven and transfer ramekins onto individual plates for serving.
  • To serve, top each ramekin with some of the smoked salmon and a little more dill. Serve warm.

  • Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork. Chop the egg whites into small pieces and set aside.
  • Melt the butter in a saucepan set over medium heat. Stir in flour until smooth. Gradually mix in the milk and chicken bouillon so that no lumps form and stir constantly until the mixture comes to a boil. Add the egg yolks and mix until dissolved. Stir in egg whites. Serve over toast and season with salt and white pepper.

Surprising and delicious and so inexpensive! I love this because it uses ingredients we always keep on hand. You can make the sauce rich with cream or skinny with skim milk. The recipe doubles well and makes a different brunch and even children seem to like it. I got it from a 24-year-old Sunset book on country French cooking, where it was called Oeufs a la Tripe, I think because all those onions in cream sauce look like creamed tripe. I changed the name, needless to say.

8 eggs
2 large onions
2 tablespoons butter
2 tablespoons flour
2 cups milk
salt and pepper
paprika
parsley

Steps:

  • Bring the eggs to a boil in water to cover. Boil 5 minutes, remove from heat, and let stand 20 minutes. (This technique avoids the green ring around the yolk.) Drain and peel and cut into 1/2-inch slices.
  • Slice the onions into rings. Melt the butter in a very large skillet over low heat and add the onions. Salt them lightly, stir to coat with butter, cover the pan and cook for about 10 miutes. Stir, cover, and cook for about 10 minutes longer, stirring occasionally. Uncover and let most of the liquid cook away. Onions should be very tender and browned.
  • Sprinkle flour over the onions and stir until no dry flour is visible. Whisk in the milk and cook, stirring or whisking, until thickened, about 4 minutes. Salt and pepper to taste. Stir in the sliced eggs and heat through.
  • TO SERVE TO GUESTS -- sprinkle with chopped fresh parsley and/or paprika, because this dish is a little bland-looking. ADVANCE PREP -- the eggs can be boiled and refrigerated up to 3 days in advance. The onions can be caramelized 3 days in advance and refrigerated.

3 ounces smoked salmon, cut into 1/2-inch-wide strips

Steps:

  • Whisk eggs, 1 tablespoon dill, salt and pepper to blend in large bowl. Melt 1 tablespoon butter in medium nonstick skillet over medium-high heat. Add onion and sauté until beginning to soften and color, about 3 minutes. Add egg mixture; reduce heat to medium and stir until eggs are barely set, about 2 minutes. Dot eggs with bits of cream cheese; continue cooking until eggs are softly set and cheese melts, about 2 minutes. Transfer to platter. Top with dollop of sour cream, if desired. Garnish with salmon. Sprinkle with remaining 1/2 tablespoon dill.

I wanted to make my son a quick delicious breakfast. All the recipes I saw for eggs and salmon were for lots of people, and too complicated or time-consuming. So we whipped this up with what we had in the kitchen, and he's eating it right now! The cream cheese makes the eggs moist and creamy. He liked it so much that I couldn't even take a picture before he had started eating it! (Sorry for the poor quality of the photograph; I was afraid if I took the time to find my camera, the omelet would be gone, so I had to take it with my cell phone!) And yes, the bagel is homemade, too!

3 eggs
1 tablespoon butter or 1 tablespoon margarine
1/4 cup chopped onion
1/4 cup smoked salmon or 1/4 cup lox, cut into chunks
1/3 cup cream cheese, preferably whipped
chives (to garnish)

Steps:

  • Break eggs into mixing bowl. Add cream cheese and whisk together (as much as possible). It will probably take on the consistency of cottage cheese.
  • In a small skillet or omelet pan, melt butter or margarine and add onion. Cook until translucent and starting to brown on the edges.
  • Pour egg/cream cheese mixture into pan (over onions). As eggs set, pull in towards center a few times to distribute the egg in the pan.
  • Add salmon. If making this as an omelet, put salmon on one side of the eggs only. Otherwise, distribute it over the entire pan of eggs.
  • For omelet, fold in half.
  • Place on plate (preferably next to a yummy toasted bagel). Garnish with chives.
