PENNE AND MEATBALLS ALL'ARRABBIATA
A spicy homemade red pasta sauce paired with penne pasta and big meatballs. Really a palate-pleaser for the spice enthusiast.

Steps:
- Mix beef, panko, 1/4 cup parsley, egg white, salt, and black pepper in a large bowl until combined. Form mixture into 12 meatballs.
- Heat vegetable oil in a large skillet; pan-fry meatballs in hot oil until browned on all sides, about 7 to 10 minutes. Remove meatballs from heat.
- Heat olive oil in a 6-quart Dutch oven or a large skillet over medium heat. Cook and stir mushrooms in hot oil until tender, about 5 minutes. Reduce heat to medium-low and add garlic and red pepper flakes. Cook and stir until garlic is golden, about 5 minutes more. Stir canned and fresh tomatoes into mushrooms and season with salt.
- Drop meatballs into tomato sauce and stir in sugar; bring to a boil over medium heat. Reduce heat to medium-low and simmer uncovered until sauce is reduced and meatballs are no longer pink in the center, about 45 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes. Reserve 1 cup cooking water, then drain pasta.
- Stir penne pasta into meatball sauce; toss to coat. Stir pasta water into mixture if sauce becomes too dry. Sprinkle with remaining 1/4 cup parsley to serve.

- Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
- Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.

HOT AND CHEESY BAKED MEATBALLS

- Preheat the oven to 425 degrees F.
- Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
- Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
- Serve with crusty bread and a dressed salad.
ARRABBIATA MEATBALL BAKE
This midweek winner has all the makings of a classic Italian dish - homemade meatballs, tangy tomato sauce, plus a cheese topping.

- Put the beef mince, onion, 1 tsp oregano and half the garlic in a bowl; season. Mix with clean hands to combine, then roll into 16 balls.
- Heat 1 tbsp oil in a large, deep frying pan over a medium-high heat and fry the meatballs for 6-8 mins until golden brown all over. Preheat the oven to gas 7, 220°C, fan 200°C.
- Pour the sauce into the pan and stir to coat the meatballs. Cook for 3-4 mins until bubbling. Mix the remaining garlic, ½ tsp oregano, the bread and cheese in a bowl.
- Stir the chopped basil and chilli, if using, into the sauce, then transfer to a roasting dish. Scatter with the cheesy croutons and drizzle with ½ tbsp oil. Bake for 15-20 mins until the topping is golden and crisp and the meatballs are cooked through.
- Meanwhile, boil the green beans for 2-3 mins until tender. Drain and serve with the bake, scattered with the whole basil leaves.
PENNE ARRABIATA

- In a medium (10-inch) pot or Dutch oven, such as Le Creuset, warm the olive oil over medium-low heat. Add the garlic and cook for 10 to 12 minutes, tossing occasionally, until the garlic has softened and is lightly browned.
- Meanwhile, drain the tomatoes, place them in a food processor fitted with the steel blade, and pulse until they're roughly chopped. With a slotted spoon, transfer the garlic to the food processor and pulse again to chop the garlic. Pour the tomato mixture into the pot with the olive oil, add the fennel, red pepper flakes, red wine, 1 tablespoon salt, and 1 teaspoon black pepper. Bring to a boil, lower the heat, and simmer for 30 minutes. Stir in the basil, taste for seasonings (it will be very spicy!), and keep warm over very low heat.
- Meanwhile, bring a large pot of water to a full boil. Add 2 tablespoons kosher salt and the penne and cook according to the directions of the package.
- Two minutes before the pasta is al dente, using a wire or spider strainer, lift the pasta out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water. Simmer for 2 to 3 minutes, until the pasta is al dente. Spoon the pasta into low shallow bowls, sprinkle with extra basil and Parmesan cheese, and serve hot.

- Heat oil in large saucepan over medium heat. Add onion and garlic and sauté , stirring frequently until lightly softened, 2-3 minutes. CHICKEN ARRABIATA BAKE

- Firsly make the bechamel sauce - melt the butter in a pan and stir in the flour to make a rue. When it's ready it should be a light/medium brown colour. Slowly add the milk whisking constantly. The mixture should thicken. When ready, take off the heat and stir in the parmesan cheese. Put to one side until ready to use.
- In a frying pan, heat the olive oil and add the garlic and chilli flakes (and fresh chilli if using). Add the chicken and when browned add the onion. When almost cooked add the tomatoes and tomato puree and simmer until thickened. Add the basil at the last moment and season with black pepper to taste. Cook the pasta according to the packet instructions.
- To assemble - mix the chicken and tomato sauce with the pasta and place in an ovenproof dish. Spoon the bechamel sauce over the top and cook at around 180c until the bechamel sauce is golden and crispy.
- Serve with small rocket side salad and garlic bread.

- This recipe assumes you've already made or bought caramelized onions, but if you haven't, I used 10 medium yellow onions for this recipe, which resulted in about 150 grams of caramelized onions. I cook them extremely slowly in my dutch oven on the lowest flame my burner has. They are dressed with a little olive oil and 60 ml of water and allowed to sweat for as long as possible. I mix them up every 15 minutes or so until they are about 80% reduced, then I watch them carefully stirring often so they do not burn until they are reduced to 10% from starting volume. You can see my full guide to caramelizing onions here.
- In a bowl add the pork, caramelized onions, breadcrumbs, garlic, egg, salt, red chili flakes, and smoked paprika and mix thoroughly with your hands. If it seems too wet, add some more breadcrumbs. Cover the bowl and place in the fridge for a half hour.
- Pre-heat your oven to 180 degrees Celsius. Line a baking tray with parchment paper and make slightly larger than golf ball sized meatballs with your hands. Place them on the tray an inch or two apart. You should be able to get 16 meatballs out of this recipe.
- Place in the oven for 20 minutes. At 20 minutes, turn them over and let cook for another 5 in the oven. While they are cooking, do step 5.
