Ingredients

3 lbs. fish
Seasoned Flour:
2 C. flour
1/2 tsp. salt
1/4 tsp. pepper
Yorkshire Pudding:
1 c. flour
1 tsp. salt
1/8 tsp. pepper
1 c. milk

Steps:

1. Dip fish in water then in seasoned flour. 2. Place on wax paper lined tray and refrigerate for 3-4 hours. 3. In a medium bowl, combine pudding ingredients.. Mix well. 4. Heat oil to 370 degrees. 5. Dip fish in batter and fry 4-5 mins. on each side or until golden brown. 6. Drain on paper towels.

1 tablespoon onion powder
1 tablespoon seasoning salt
oil (for deep frying)

Steps:

Dip moistened fish pieces evenly but lightly in the flour.
Dust off any excess flour and allow pieces to air dry on waxed paper, about 5 minutes.
Whip the pancake mix with the club soda to the consistency of buttermilk-- pourable, but not too thin and not too thick.
Beat in the onion powder and seasoned salt.
Dip floured fillets into batter and drop into 425F oil in heavy saucepan using meat thermometer.
Brown about 4 minutes per side.
Arrange on cookie sheet in 325F oven until all pieces have been fried.
