CHICKEN & BOK CHOY SOUP WITH GINGER & MUSHROOMS
What is so obliging about this hearty chicken soup is that you can add any vegetables that suit your fancy: napa or Savoy cabbage, mushrooms, Chinese broccoli, broccolini, onions, leeks, mustard or turnip greens, celery or whatever tickles your bonnet. Just be sure that you don't overcook the vegetables. Spice it up with chile sauce, such as sriracha, and/or serve the soup over noodles to make it a more substantial main dish.

Steps:
- Place mushrooms in a heatproof measuring cup and cover with boiling water. Soak for at least 30 minutes or up to several hours. Remove the mushrooms from the water, remove and discard stems (if any) and cut into 1/8-inch slices; set aside. Strain the soaking liquid and reserve.
- Heat oil in a large soup pot or Dutch oven over medium heat. Add onion, garlic and ginger and cook, stirring, for 5 minutes. Pour in the reserved mushroom liquid, broth, soy sauce, cinnamon stick, star anise and pepper. Bring to a boil. Reduce to a simmer and stir in chicken. Simmer for 20 minutes.
- Stir in fennel, scallion whites and the reserved mushrooms and cook for 5 minutes. Add bok choy stems, return to a simmer and cook for 3 minutes more. Stir in bok choy greens and bean sprouts. Cook until the greens are just wilted, about 2 minutes more.
- Discard the cinnamon stick and star anise. Ladle the soup into bowls. Garnish each bowl with scallion greens, cilantro and a 1/4-teaspoon drizzle of sesame oil. Serve with lime wedges, if desired.

GINGERED CHICKEN SOUP WITH SOBA AND VEGETABLES
There's something for everyone in this light but warming soup: Edamame, cooked with the noodles, provides protein, while tomatoes, cukes and watercress add color and freshness. Chili garlic sauce added to each bowl brings on the heat.

Steps:
- Put the broth, ginger, roughly chopped scallions and 2 cups water in a medium saucepan and bring to a boil over high heat. Cover the pan, lower the heat so the soup just simmers and cook for 20 minutes.
- Meanwhile, bring a large pot of water to a boil. Put the sliced scallions, watercress, tomatoes, avocados and cucumbers in separate small bowls and set aside.
- Stir the edamame into the boiling water and cook for 1 minute. Add the soba noodles to the pot with the edamame and cook until the noodles no longer have a hard, chalky bite but are still springy, 3 to 4 minutes. Drain the noodles and edamame in a colander; shake to remove as much water as possible. Divide among 4 soup bowls.
- Remove the broth from the heat and stir in the sherry and soy sauce. Ladle the hot broth over the noodles. Serve with the sliced scallions, watercress, tomatoes, avocadoes, cucumbers and chili garlic sauce for topping.
ASIAN GINGER CHICKEN
This is one of my favorite and first recipes I learned from my mom. I marinate the chicken over night and back on reynolds wrap with the skin side up for 45 minutes until the skin is brown and crisp. I use the chicken renderings to season my rice and serve with a crunchy asian cucumber salad.

ASIAN GINGER CHICKEN SKEWERS
I like this recipe because it came straight out of my head one day when I was bored and wanted something different. This goes great with fried rice either from the frozen food department or a homemade version and some snow peas with soy sauce or the asian chili sauce on the side.

- Spread the chicken pieces in a single layer in the wok. Sear for 45 seconds. Flip them and fry the other side for another 30 seconds.
- Add in the white parts of the scallions, garlic, and shallots. Continue to stir-fry over high heat, mixing everything together for another 30 seconds.
