- Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat. Add onions and pork; cook 4 to 6 minutes, turning pork occasionally, until pork is browned. Add asparagus and bell pepper; cook 5 to 7 minutes, stirring occasionally, until asparagus is crisp-tender.
- In small bowl, mix remaining ingredients, stirring until cornstarch is dissolved.
- Reduce heat to low. Stir soy sauce mixture into pork mixture; cook until slightly thickened. Serve over rice.

I got this recipe from a Canadian Living Magazine. Our family really liked it. I used sherry, but you can use Chinese wine. You can use a different kind of mushroom if you prefer. I served it over rice.

Steps:
- In a bowl, combine pork, half of the sherry, soy sauce, cornstarch and ginger to coat. Set aside.
- Cut each asparagus stalk into 4 pieces. Set aside.
- In a wok, heat oil over high heat and stir fry onions until fragrant. Add pork and stir fry until no longer pink.
- Add asparagus and mushrooms and stir fry for about 1 minute. Stir in chicken broth, sugar and remaining sherry. Stir fry until asparagus is tenercrisp.
ASIAN PORK STIR-FRY
Steps:
- In a small dish, stir together the gingerroot and garlic.
- In a medium bowl, stir together the soy sauce, cornstarch, sesame oil, and red pepper flakes.
- Stir the pork into the soy sauce mixture.
- Heat a nonstick wok or large nonstick skillet over high heat for about 1 minute, or until very hot. Cook the pork mixture for about 2 minutes, or until the pork is cooked through, stirring constantly. Remove from the wok.
- Pour the oil into the wok, swirling to coat the bottom. Heat for about 30 seconds. Cook the gingerroot mixture for about 30 seconds, stirring constantly.
- Stir in the spinach and mushrooms. Cook for about 5 minutes, or until the spinach is wilted, stirring occasionally.
- Stir in the pork mixture, vinegar, and sugar. Cook for about 2 minutes, or until all the ingredients are heated through and well combined, stirring constantly.
- Cook's Tip
- Like most other stir-fries, this one cooks quickly. That's why you need all the ingredients ready before you heat the wok.

- Break bottom inch or so off of each asparagus spear; cut stalks into inch-long pieces.
- Heat a large skillet over high heat for about 2 minutes. Immediately add half the peanut oil, chilies if you're using them and pork, crumbling it with your fingers. Cook, stirring only occasionally, until pork browns, about 2 minutes. Remove pork to a bowl, discard chilies and lower heat slightly.
- Add remaining oil and asparagus to skillet. Cook, stirring occasionally, until asparagus turns bright green and begins to become tender, 3 or 4 minutes. Add garlic and scallions and cook, stirring once or twice, for 30 seconds.
- Add stock or water and soy sauce; stir and cook for 15 seconds. Stir in pork, add sesame oil if you like and stir once more. Serve with white rice, if desired.

- Heat oil in wok or large skillet (high heat).
- Add asparagus, stir fry for 1 minute.
- Add water& sugar to the asparagus, cover and steam for 2 minutes, shake the pan a few times Combine the remaining ingredients.
- Uncover wok and add remaining ingredients and cook for 1 minute, stirring to coat the asparagus with the spice mixture.
- Serve immediately.

- Slice the pork into slivers and mix it well with the marinade: The starch, soy sauce, Shaoxing wine, salt, sugar and sesame oil. Let this marinate on the counter while you cut all the vegetables, or abou 20 minutes or so.
- Heat a wok or large saute pan over high heat on your hottest burner for a minute or two. Add the peanut oil or lard and swirl it around. When it starts to smoke, add the minced garlic and ginger, as well as the crushed chiles. Stir fry this for 30 seconds.
- Add the pork and any marinade in the bowl and stir fry for 2 to 3 minutes, until the pork or wild pig turns opaque. Add the asparagus and green onions and stir fry 2 minutes, or until you begin to see some liquid start to form in the bottom of the wok. Don't cook for more than another 3 minutes or the pork will be overcooked. Turn off the heat and drizzle the sesame oil over everything. Serve with rice.
