1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

Steps:

  • Line a rimmed baking sheet with foil; brush lightly with vegetable oil. Place salmon steaks on prepared baking sheet. Whisk miso, mirin, vinegar, ginger, and sesame oil in a small bowl to blend. Spread half the miso mixture over salmon steaks; season lightly with salt. Turn salmon steaks over and spread with remaining miso mixture; season lightly with salt. Cover with plastic wrap and let marinate at room temperature for at least 15 minutes, or refrigerate for up to 1 hour.
  • Position an oven rack 6"-8"from broiler and preheat. Broil salmon, turning once, until golden brown and just opaque in center, 10-12 minutes total.
  • Transfer salmon steaks to plates and serve with lime wedges.

3 tablespoons dark brown sugar, packed
4 teaspoons prepared Chinese hot mustard or 4 teaspoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
2 salmon steaks, about 3/4-inch thick (8 ounce steaks, fillets can be used in a pinch)

Steps:

  • Prepare your barbecue or hot grill pan.
  • In a bowl, combine the brown sugar, mustard, soy sauce, and vinegar, and whisk to blend.
  • Brush one side of the steaks with the glaze, then place them glaze-side-down onto the grill (or grill pan), and cook until the glaze is slightly charred, about 5 minutes.
  • Brush the top side of the steaks generously with the glaze and turn salmon over, then grill until the second side is slightly charred and the salmon is just opaque in center, about 5 minutes.
  • Transfer the steaks to a serving platter and brush tops lightly with glaze.

4 salmon steaks, about 1 1/2 pounds total weight
2 tablespoons milk
1/4 cup flour
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup peanut, vegetable or corn oil
3/4 cup mustard sauce (see recipe)
4 teaspoons finely chopped dill or parsley

Steps:

  • Dip steaks in milk. Remove and dredge on both sides in flour seasoned with salt and pepper. Shake off excess.
  • Heat oil in heavy skillet until quite hot. Add steaks and cook on one side until nicely browned, about 5 minutes. Turn and continue cooking, basting often with the hot oil, about 5 minutes.
  • Serve with mustard sauce. Pour hot mustard sauce onto center of hot serving dish. Arrange steaks and dot center of each with a teaspoon of chopped dill or parsley.

  • In a large bowl, combine the first five ingredients. 1/2 cup mustard powder, preferably Colman's
1/2 cup sugar
2 pounds center-cut salmon fillet, about 2 inches thick at its thickest, with skin
2 1/2 tablespoons extra virgin olive oil

Steps:

  • Heat oven to 250 degrees. In a small bowl whisk mustard, sugar and 1/2 cup water together. Set aside.
  • Cut salmon into four uniform portions. Pat dry with paper towel. Heat 1 tablespoon oil in a heavy ovenproof skillet over high heat; skillet should be large enough to hold salmon without crowding. Add salmon skin side up, and sear quickly about 2 minutes, until it can be lifted easily with a spatula without sticking. Turn, and sear about 2 minutes skin side down. Thickest part should still be raw in center.
  • Brush top of salmon with remaining olive oil and then with mustard mixture. Place in oven about 20 minutes, until medium-rare in center. (An instant-read thermometer inserted in thickest part should register 100 to 110 degrees.) Remove from oven, and serve.

2 tablespoons hoisin sauce
2 teaspoons honey
4 salmon steaks (each 8 to 10 ounces and 1 inch thick)
Coarse salt and ground pepper

Steps:

  • Heat broiler. In a small bowl, whisk together orange juice, hoisin sauce, and honey.
  • Rinse salmon steaks, and pat dry. Season both sides with salt and pepper. Place steaks on a rimmed baking sheet. Brush generously with glaze.

6 (8 ounce) sirloin steaks or 6 (8 ounce) New York strip steaks

Steps:

¾ cup brown sugar
⅓ cup low sodium soy sauce
2 Tablespoons hoisin sauce
2 Tablespoons ginger (peeled and grated)
½ teaspoon red pepper flakes
½ teaspoon minced garlic
1 Tablespoon lime juice
24 ounces boneless skinless salmon fillets

Steps:

  • In a medium saucepan, whisk together brown sugar, soy sauce, hoisin sauce, ginger, red pepper flakes, garlic and lime juice.
  • Bring to a boil over medium heat until sauce thickens (between 5-10 minutes). Set aside.
  • Preheat the broiler to high. Place salmon in a foil lined baking dish. Baste with glaze and broil for 4 minutes.
  • Remove salmon from the oven, turn over, baste with glaze and return to the oven to broil for 4 more minutes.
  • Remove the salmon from the oven and glaze one more time before serving.
