ASPARAGUS PASTA SALAD



Asparagus Pasta Salad image

1 small shallot or 1/2 large shallot, finely chopped
1/3 cup extra-virgin olive oil, eyeball it
1 pound asparagus, thin spears
2 endive, cored and thinly sliced
1/2 small red bell pepper, chopped
1/2 pound bow tie pasta, farfalle, cooked to al dente and cooled
1/2 cup frozen green peas
1/4 cup chopped fla- leaf parsley, a couple of handfuls
3 tablespoons white wine vinegar
Salt and freshly ground black pepper

Steps:

  • Heat shallot and oil in microwave safe covered dish for 30 seconds or in a small pan on the stovetop over medium low heat for 5 minutes. Allow oil to cool back to room temperature.
  • Hold a spear of asparagus at each end and snap it. The spear breaks where the tender tops meet the tough bottoms. Line the broken spear up with the bundle of cleaned asparagus. Cut the spears using the guideline of the snapped spear. Par boil the asparagus tops in 1 inch simmering water covered for 3 to 5 minutes. Cool under cold running water and drain. Cut asparagus into 1-inch pieces on an angle and add to a bowl. Combine chopped, cooked asparagus with shredded endive, red bell pepper, cooked pasta, green peas and chopped parsley. The peas will defrost as you toss salad. Pour vinegar into a small bowl and whisk in cooled shallot oil. Pour dressing over salad and toss. Season salad with salt and pepper, to your taste and toss again.

1 box (14.5 oz.) Barilla® ProteinPLUS® Farfalle Pasta
1 pound asparagus (, cut into two-inch pieces, ends trimmed and discarded)
1 cup green peas ((frozen or fresh))
1 tablespoon extra virgin olive oil
1 small red onion (, finely diced)
4 garlic cloves (, minced)
1 tablespoon all-purpose whole wheat white flour
1/4 cup low sodium chicken broth
1 cup skim milk
2 ounces room temperature cream cheese
3 tablespoons grated parmesan cheese
salt and fresh ground pepper (, to taste)
Fresh chopped parsley (, for garnish)

Steps:

  • Bring a large pot of water to a boil.
  • Add pasta to boiling water and cook for 7 minutes; add prepared vegetables to the pot and continue to cook for 3 more minutes, or until al dente.
  • Drain.
  • In the meantime prepare the sauce.
  • Heat olive oil in a large skillet over medium heat.
  • Add onions and garlic and cook for 3 minutes, or until tender.
  • In a small mixing bowl combine flour and chicken broth; whisk until thoroughly incorporated.
  • Add broth mixture to the onion mixture in the pan.
  • Whisk in milk; continue to whisk constantly and bring to a boil.

Pesto Pasta With Spinach, Asparagus, and Cherry Tomatoes image

Dr. Travis Stork's said it's ok to have a glass of wine with this meal. If I recall he may have suggeted red. I found this recipe on the Rachael Ray Show. The recipe came from Dr. Travis Stork's. Made this for my families dinner! My hubby loved this, my newphew and I liked it. When I made this I opted to used store prepared Pesto, so I added minced garlic to my veggies. For the pasta I used Wegman's whole grain pasta, I used fresh snap peas in place of the asparagus. I used the spinach and opted to add the cooked chicken. I did add alot of shredded Parmesan cheese maybe 5oz or less. Plus I did add some Sea Salt for flavor.

  • Make pesto: Combine basil, pine nuts, oil and garlic in a food processor. Blend until paste forms, stopping often to push down basil. Add cheeses and sea salt. Blend until smooth. Transfer to small bowl. (Makes about 2/3 cup. Can be made 1 day ahead. Top with 1/4 inch olive oil and chill.).
  • Prepare pasta: Cook pasta per package directions. Drain and return to pot.
  • Heat oil in a large skillet over medium heat while pasta cooks. Add asparagus and freshly ground black pepper to taste. Cook 4 minutes. Add tomatoes and cook until asparagus are tender 2-3 minutes longer. Remove from heat.
  • Add pesto, spinach, and chicken (if using) to pasta and toss until well-combined. Sprinkle with grated or shaved Parmesan. Serve warm, or chill and serve cold.

2 teaspoons fresh lemon juice
1 1/2 teaspoons minced garlic
1 teaspoon sugar
2 teaspoons dried oregano

1/2 cup extra-virgin olive oil
Kosher salt
2 1/2 cups dried short pasta, such as penne or rotini
1 pound asparagus, tough stems removed, spears cut into 1-inch lengths
2/3 cup sliced red onions
1 1/2 cups diced tomatoes
2/3 cup grated Parmesan, for serving

Steps:

  • For the dressing: Whisk together all of the ingredients in a medium bowl until combined. Set aside.
  • For the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, just until al dente. Add the asparagus and cook it with the pasta for 1 more minute. Drain the pasta and asparagus then rinse with cold water and drain thoroughly.
  • Transfer the pasta and asparagus to a large bowl. Stir in the onions and tomatoes. Pour the dressing over the pasta, toss to combine, then cover and refrigerate for at least 3 hours and up to overnight. When ready to serve, stir in the Parmesan and enjoy cold or at room temperature.

10 asparagus spears, ends trimmed
½ (16 ounce) package rotini, elbow, or penne pasta
3 tablespoons low fat mayonnaise

1 (6 ounce) jar marinated artichoke hearts, drained and coarsely chopped

2 ounces thinly sliced prosciutto, torn into 3-inch pieces
1 tablespoon extra-virgin olive oil
Coarse salt and freshly ground pepper
1/2 bunch (about 6 ounces) asparagus, trimmed
1/2 cup shelled fresh peas
4 baby creamer potatoes (about 5 ounces), cut into 1/4-inch slices
3 tablespoons buttermilk
1/4 cup mayonnaise
2 tablespoons finely chopped shallot
1 tablespoon fresh lemon juice
1/4 cup packed fresh tarragon leaves
2 cups packed baby spinach (about 2 1/2 ounces)

Steps:

  • Preheat oven to 400 degrees. Arrange prosciutto in a single layer on a rimmed baking sheet and brush with oil. Bake until crisp and deep golden, about 9 minutes. Let cool on a paper-towel-lined plate.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add asparagus and cook until just tender, 1 to 2 minutes. Transfer to a bowl of ice water to stop the cooking; drain, then cut into 2-inch pieces on the bias. Add peas to water and cook until just tender and bright green, 3 to 4 minutes.   • Bring a large pot of water to a boil. A pot with a steamer insert makes this easy, but if you don’t have one, a sieve works, too. Season the boiling water generously with salt, then drop in the spinach and sliced asparagus stalks (reserve the tips for later). Cook for about 1 minute, just to blanch the asparagus stalks. Retrieve the asparagus and spinach, drain and put into a blender or food processor.
  • In the same pot of water, cook the asparagus tips and peas for about 1 minute, remove with a slotted spoon and set aside.
  • Meanwhile, add the olive oil, garlic and Parmesan cheese to the blender with the asparagus stalks and spinach. Blend until smooth.
