1 package flour tortillas
1 package cream cheese, softened at room temperature
1 jar salsa
12 asparagus spears, blanched and shocked in cold water

Steps:

  • Spread a tortilla with a layer of cream cheese and then a layer of salsa. Place an asparagus spear at the edge of the tortilla and roll tightly. Chill, seam side down, covered with a slightly damp paper towel and plastic wrap.. When ready to serve, cut on the bias in 1 1/2-inch slices, discarding uneven ends, and arrange on a serving platter.

24 asparagus
1 ripe avocado, pitted and peeled
1 tablespoon lime juice
1 garlic clove, minced
1 1/2 cups cooked long-grain brown rice, cold
3 tablespoons plain nonfat yogurt
3 (10 inch) whole wheat tortillas
1/3 cup cilantro leaf
2 tablespoons chopped red onions

Steps:

  • In a medium saucepan over high heat, bring 2 inches watger to a boil. Place the asparagus in a steamer basket, cover, and steam until just tender, 6-8 minutes. Remove the asparagus and immediately rinse in cold water to stop the cooking. Drain thoroughly.
  • In a small bowl, mash the avocado, lime juice, and garlic into a coarse puree.
  • In another small bowl, stir together the rice and yogurt to mix well.
  • Heat a dry large frying pan (not one with a nonstick surface)over medium heat. One at a time, heat the tortillas in the hot pan until softened, about 20 seconds per side.
  • Lay the tortillas flat on a clean work surface. Spread the avocado mixture equally among the tortillas. Top each with an equal amount of the rice mixture, asparagus, cilantro, and onion.
  • Fold in both sides and the bottom of each tortilla up over the filling, then roll to close. If made in advance, cover with plastic wrap and refrigerate for up to 1 hour. Return to room temperature before serving.
  • To serve, cut each wrap in half crosswise.

1 avocado, halved, pitted, and peeled
16 fresh mint leaves, chopped
1/2 lime
20 grams (about 2 tablespoons) extra-virgin olive oil
Pinch of fine sea salt per serving

Steps:

  • 1 Cut away about 2 inches of the base of each asparagus spear. With a vegetable peeler, shave the entire asparagus from bottom to top, reversing your grip and rotating as necessary to shave as much as possible. Don't rush it; be deliberate for the greatest precision.
  • 2 Divide the asparagus strips among 4 salad plates. Cut each avocado half into 4 sections and place 2 wedges on each salad. Sprinkle with the mint leaves. Squeeze lime juice over the salads, drizzle evenly with the oil, and sprinkle with salt.

1 pound asparagus, tough ends trimmed and discarded
8 ounces prosciutto, very thinly sliced
1 tablespoon olive oil
1/2 cup Philadelphia Cooking Creme (any flavor, I used Italian Cheese and Herb)
1 tablespoon water

Steps:

  • Preheat the oven to 400F. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle olive oil on the tips and ends of the asparagus (avoiding the prosciutto). Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.
  • In a small bowl, whisk together the Philadelphia Cooking Cream with the water. Microwave on medium setting for 45 seconds. If you can't find the Philadelphia Cooking Creme, feel free to omit (the Crispy Prosciutto Wrapped Asparagus is great as-is!) or substitute with 1/4 cup Philadelphia Cream Cheese mixed with 2 tablespoons mayonnaise + 2 tablespoons water and your favorite chopped fresh herbs.
  • Plate the asparagus and drizzle the Philadelphia Cooking Cream over the asparagus. Serve immediately.

1 pound asparagus, ends trimmed and cut into 2-inch lengths
1 pound sugar snap peas, strings removed
1 pound bow-tie pasta (farfalle)
4 tablespoons butter
2 cloves garlic, minced
1 ripe avocado, halved, pitted, peeled, and cut into 1/2-inch chunks
1/2 cup chopped fresh mint, parsley, or basil
1/2 cup shredded Parmesan or pecorino cheese, plus more for serving, if desired

Steps:

  • In a large pot of boiling salted water, cook asparagus until bright green, about 2 minutes. Add snap peas; cook 30 seconds. With a slotted spoon or a small sieve, scoop out vegetables; transfer to a bowl.
  • Return water to a boil; add pasta and cook until al dente, according to package instructions. Drain, reserving 1 cup pasta water; set pasta aside in colander.
  • In pasta pot, melt 2 tablespoons butter over medium heat. Add asparagus, snap peas, and garlic; season with salt and pepper. Cook, tossing, until vegetables are crisp-tender, about 2 minutes. 300g quinoa
250g soya beans
12 fat asparagus spears, woody ends snapped off and tips and stalks separated
300g Greek yogurt
1 tsp sweet paprika , plus a pinch to serve
2 garlic cloves , crushed
zest and juice 2 lemons
½ large cucumber , halved lengthways, seeds scooped out with a teaspoon, sliced
4 spring onions (we used the ones with the fat bottoms), thinly sliced
large pack mint , leaves picked
2 small packs dill , roughly chopped
large pack parsley , roughly chopped
2 avocados , stoned, peeled and cut into chunks
juice 3 limes
1 tbsp agave syrup
2 tbsp rapeseed oil

Steps:

  • Cook the quinoa following pack instructions, then leave to cool. Bring a pan of water to the boil, add the soya beans and cook for 2 mins, then add the asparagus tips and cook for 1 min more. Drain everything and leave to cool.
  • Meanwhile, mix the yogurt with the paprika, garlic and most of the lemon zest. Season and chill.
  • Using a vegetable peeler, slice the asparagus stalks into thin ribbons (you won't be able to do the whole stalk as it will get too thin, but these pieces are perfect for soup.) Keep in iced water until ready so they curl.
  • On a large platter, combine the quinoa, cooked soya beans and asparagus tips, cucumber, spring onions, herbs and avocado. Drain the asparagus ribbons and add them too. Whisk together the lime and lemon juices, agave syrup, rapeseed oil and some seasoning, then pour over the salad and gently toss to mix. Serve with the yogurt alongside, topped with the remaining lemon zest.
