1 unbaked pastry shell (9 inches)
1-3/4 cups finely chopped cooked roast beef
1/4 cup chopped green onions
1 tablespoon all-purpose flour
4 large eggs
1/2 cup evaporated milk
1 tablespoon steak sauce
1/8 teaspoon each dill weed, dried basil and dried oregano
Salt and pepper to taste
2 cups shredded cheddar cheese
1/2 cup chopped green pepper

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes; remove foil. Bake 5 minutes longer. Reduce heat to 375°. Sprinkle beef and onions into the crust. , In a bowl, beat the flour and eggs until smooth. Add milk, steak sauce and seasonings; beat until smooth. Stir in cheese and green pepper. Pour into crust. , Bake for 25 minutes or until center is set. Let stand for 10 minutes before cutting.

2 (12 ounce) packages frozen country style shredded hash brown potatoes
⅓ cup butter, melted
½ cup heavy whipping cream
2 eggs
1 cup diced cooked ham
1 cup shredded Monterey Jack and Cheddar cheese blend

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Squeeze and drain any excess moisture from hash brown potatoes.
  • Stir potatoes and butter in a bowl; press mixture into the bottom and up the sides of a 10-inch pie dish to make a crust.
  • Bake crust in preheated oven until lightly browned, 25 minutes.
  • Beat heavy cream and eggs in a bowl. Remove potato crust from pie dish and break apart; stir potatoes into egg mixture in a bowl. Layer ham and Monterey Jack cheese blend into bottom of the empty pie dish; pour egg-potato mixture over ham and cheese.
  • Bake quiche in preheated oven until eggs are set, about 30 minutes.

Refrigerate until cool, at least 2 hours or overnight.
  • To serve, carefully run knife around edge of cheesecake to loosen; turn onto small plate. Top with crushed graham crackers. Serve with additional toppings, as desired.

1/4 teaspoon pepper
1 cup whole milk ricotta cheese
1/3 cup grated Parmesan cheese
1/4 teaspoon Italian seasoning
1/4 teaspoon pepper
1/8 teaspoon salt
1 jar (25.5 oz) Muir Glen™ organic roasted garlic pasta sauce
1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 Count), separated and cut into sixths

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In medium bowl, mix all Meatball ingredients. Shape mixture into 28 (1 1/2-inch) balls. Place in ungreased 15x10x1-inch rectangular pan. Bake uncovered 20 to 25 minutes or until thoroughly cooked and no longer pink in center; remove from oven, and reduce oven temperature to 350°F.
  • Meanwhile, in small bowl, mix ricotta cheese, 1/3 cup Parmesan cheese, the Italian seasoning, 1/4 teaspoon pepper and 1/8 teaspoon salt; mix well.
  • Spread cooked meatballs in bottom of baking dish. Drop spoonfuls of ricotta mixture between meatballs. In 4-cup glass measuring cup, microwave pasta sauce covered on High 2 to 3 minutes, stirring halfway, until heated through and steaming. Pour heated pasta sauce on top of meatball and ricotta layer.
  • In large resealable food-storage plastic bag, add biscuit pieces; toss with 2 tablespoons Parmesan cheese and 2 tablespoons bread crumbs, shaking bag to coat. Spread biscuit pieces on top of hot pasta sauce layer; sprinkle any remaining bread crumb mixture on top. Bake 33 to 38 minutes or until biscuits are deep golden brown and baked through. Cool 10 minutes before serving. Top with basil.

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

1 head cauliflower, broken into florets
1 tablespoon olive oil, or as needed
1 pound ground beef
1 large onion, chopped
4 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon curry powder
½ teaspoon ground turmeric
2 cloves garlic, chopped
2 cups uncooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the cauliflower florets onto a baking sheet, and brush with olive oil. Bake in the preheated oven until beginning to brown, about 30 minutes. Set aside.
  • While cauliflower is baking, place ground beef and onion into a large pot over medium heat, and cook and stir until the meat is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Remove from heat.
  • In a saucepan, bring the water to a boil, and stir in the salt, black pepper, cumin, oregano, curry powder, and turmeric.
  • Mix the cooked cauliflower and garlic into the ground beef and onion in the large pot, and stir in the white rice. Pour the spiced water into the pot over the rice, and bring to a boil. Reduce heat to a simmer, and cover the pot; cook until the rice is tender and the water has absorbed, 15 to 20 minutes. Remove from heat, and allow to stand covered for 5 to 10 minutes to help dry out the rice.
  • To serve, place a large serving platter on top of the uncovered pot, and flip to turn out the contents onto the platter.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 cup reserved pineapple juice (from can of pineapple)
1/2 cup vegetable oil
3 eggs

Steps:

  • Heat oven to 350°F. In 12-cup fluted tube (bundt) cake pan, pour melted butter. Sprinkle brown sugar evenly over butter. Line bottom of pan with pineapple slices. Place 1 cherry to center of each pineapple slice.
  • In large bowl, beat cake mix, pineapple juice, oil and eggs with electric mixer on low speed until moistened; beat 2 minutes on high speed. Pour into pan over fruit.
  • Bake 40 to 45 minutes or until cake is golden brown and springs back when touch lightly. Cool cake in pan 10 to 15 minutes. Plate heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm or cool.

1 1/2 cups beef diced or coarsely ground cooked
1/3 cup green bell pepper chopped
1/4 cup green onion sliced
1/2 cup mayonnaise real
1/2 cup milk evaporated milk, or half-and-half
3 eggs
2 teaspoons cornstarch
1 cup Cheddar cheese shredded or any mixture of cheese
1 teaspoon Italian seasoning dried crushed
Salt and freshly ground pepper to taste
Pastry for Single-Crust Pie * chilled

Steps:

  • Heat oven to 425° F. Grease 9-inch pie plate and set aside. Combine meat, green pepper, and onion in bowl. In another bowl, thoroughly combine mayonnaise, milk or half-and-half, eggs, cornstarch, cheese, herb seasoning, and salt and pepper to taste. Stir both mixtures together and pour into prepared pie plate. Roll out pastry and cover filling. Turn under edges and crimp cut 2 or 3 steam vents in crust. Bake for 10 minutes reduce heat to 375° F and continue baking for 20 to 30 minutes until filling is set and crust is golden brown. Let stand 10 minutes before slicing.* A purchased frozen pie shell, thawed, may be used.
