I love Asparagus, delicious and healthy and there are many ways to cook it. You can grill it, saute, steam or blanch, it always tastes excellent. So add a dose of health to your daily diet with my Asparagus and Cherry tomato hash. This quick Asparagus recipe can be an excellent side dish which will go perfect with grilled meats or fried rice. But I in fact love to enjoy it as warm lunch salad. Note: Always buy firm bunch of asparagus. Grocery stores usually submerge it in water to keep the stems fresh longer.

Number Of Ingredients 8

1 Cup Cherry Tomatoes
1/2 tsp Oregano, dried
1 lbs Asparagus, Washed and 2 inch of stems removed from bottom.
2-3 Garlic, cloves
1 tbsp Olive Oil
1 tbsp Lemon, juice
1 tbsp Cilantro, for garnish
1/2 tsp Salt and Black Pepper, or per taste

Steps:

  • Discard 2 inch of stems from bottom half of asparagus, dice the rest into 1 inch pieces. Also slice the cherry tomato in halves.
  • Heat oil in a pan, add garlic and let saute for 1 minute. Now add oregano, asparagus and saute for 5 minutes. Add tomatoes, salt and pepper and let it cook for another 4-5 minutes or till asparagus are tender and tomatoes have mellowed a bit. Mix in lemon juice and remove from heat. Garnish with cilantro leaves, serve warm or at room temperature.

1 bunch asparagus ((rinsed, ends snapped off))
1 container cherry tomatoes ((or grape tomatoes))
2 Tbsp olive oil ((extra virgin))
salt & pepper ((to taste))
1/8 cup Parmesan cheese
2 Tbsp garlic ((minced))

Steps:

  • Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper, or grease it thoroughly with additional olive oil or non-stick cooking spray.
  • Place your asparagus and cherry tomatoes on the baking sheet, then drizzle with the olive oil. Season with salt & pepper, then sprinkle the minced garlic and Parmesan cheese directly over your asparagus and cherry tomatoes.
  • Roast in your preheated oven for 12-15 minutes, or until the asparagus has reached your desired level of tenderness. Serve immediately.

2 lbs fresh asparagus, washed and patted dry (tough ends removed)
1/4 cup olive oil
6 garlic cloves, finely chopped
2 cups cherry tomatoes, washed and patted dry
salt & freshly ground black pepper

Steps:

  • In large bowl combine the asparagus, olive oil, garlic and salt and pepper. Toss to combine.
  • Arrange the asparagus in a single layer on a baking sheet. Lay the cherry tomatoes over the asparagus in the center for a nice presentation.
  • Preheat oven to 400 degrees. Roast for about 20 to 25 minutes.
  • Enjoy!

8 ounces penne pasta
3 tablespoons olive oil
2 garlic cloves, minced
1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces
Salt and freshly ground black pepper
2 cups (about 9 ounces) cherry tomatoes
1 cup shelled fresh peas
1/2 cup low-sodium chicken stock
1 cup grated Parmesan
2 tablespoons chopped fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
  • In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.
  • Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

2 pounds asparagus, tough ends trimmed, rinsed and patted dry
Salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced garlic
2 teaspoons fresh lemon juice
1/4 cup pine nuts
3 hard-boiled eggs, sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Place asparagus in a baking dish and season with salt and pepper.

I found this recipe in an old magazine that was just laying around on my coffee table and it looked good so I decided to make it for Easter. What an absolutely awesome dish! Even the asparagus haters loved it. This recipe can be prepared ahead of time and reheated or served at room temperature. It is excellent served with roast lamb.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried thyme leaves
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon brown sugar
2 cups grape tomatoes or 2 cups cherry tomatoes
2 bunches asparagus

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the olive oil, balsamic vinegar, thyme, garlic, salt, pepper and brown sugar.
  • Cut the tomatoes in half and toss to combine with the olive oil mixture.
  • Spread the tomatoes in a roasting pan and place in the oven.

10 garlic cloves, minced
3 tablespoons olive oil
salt (to taste)
pepper (to taste)
1/4 cup freshly grated parmesan cheese (may use Asiago)

Steps:

  • Heat oil and garlic in a small saucepan over low heat until garlic becomes golden- several minutes (do not burn garlic); allow oil to cool.
  • Bend asparagus gently at a natural point and when it snaps, discard end pieces.
  • Place asparagus on a lipped roasting pan and toss with infused olive oil and garlic, coating all pieces.
  • Line up asparagus and push together, season with salt and pepper, then sprinkle with grated Parmesan.
