It couldn't be easier to make perfectly roasted and tender asparagus with this healthy 6-ingredient recipe. Nutrient-packed asparagus is seasoned with a cheesy vegan pecan parmesan made with nutritional yeast!

1 bunch asparagus
2 Tbsp extra virgin olive oil
Salt (a couple shakes of the salt shaker)
1 cup raw pecan halves
2 Tbsp nutritional yeast
1 Tbsp extra virgin olive oil
2 pinches salt

Steps:

  • Preheat oven to 400F.
  • Snap woody ends of asparagus spears. Wash and pat dry. Spread on a large baking sheet and toss with olive oil and salt, until evenly coated.
  • On a large cutting board, chop pecans and add to a bowl along with nutritional yeast, olive oil, and salt. Mix together well and then sprinkle on top of asparagus.
  • Place asparagus in the oven for 12-15 minutes, depending on thickness of spears. Asparagus should be tender, but not overly mushy.
  • Remove from oven and serve immediately. Enjoy!

  • In a large skillet, bring 3 cups water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., In a large resealable plastic bag, combine the vinegar, soy sauce, sugar and oil. Add the asparagus; seal bag and turn to coat. Refrigerate for up to 3 hours. , Drain and discard marinade. Sprinkle asparagus with pecans.

  • Preheat the oven to 400 degrees F.
  • If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. 12 slices bacon
1/2 cup light brown sugar
1/2 cup (1 stick) butter
1 tablespoon soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

2 tablespoons butter
1 (8 ounce) package sliced mushrooms
1 onion, minced
½ cup coarsely chopped pecans
½ teaspoon garlic powder
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon black pepper
½ cup freshly grated Parmesan cheese

Steps:

  • Steam the asparagus spears in a basket-style steamer over boiling water until tender, 5 to 10 minutes. Drain and remove to a serving dish; keep warm.
  • Meanwhile, melt half of the butter in a large skillet over medium-high heat. Once melted (it's ok if it begins to brown), stir in the sliced mushrooms, and cook until they brown, soften, and begin to release their liquid; pour into a serving dish, and set aside. Melt the remaining butter in the skillet, and stir in the onions. Cook until the onions soften and turn translucent, about 3 minutes. Season with garlic powder, basil, salt and pepper. 1 cup garlic croutons

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a 9 x 13 inch baking pan with nonstick cooking spray.
  • Cut the rough ends off the asparagus and place in prepared pan.
  • Generously spray nonstick cooking spray on top of asparagus.
  • Sprinkle Parmesan cheese in an even layer on top of asparagus.
  • Season with salt and pepper, to taste.

I found this on the back of a tag for the Majesty asparagus I had picked up at the market. It was really enjoyable, and so easy to prepare, so I thought I ought to share! I used my blender, so I roughly chopped some of the bigger ingredients (asparagus, pecans) before putting them in, but from what I have heard of the mightiness of the food processor, you might be good to go without doing so. Use your knowledge of your tools to decide how you want to approach it :) I have also successfully served this over gluten free pasta (brown rice penne).

I am posting it here so I will always know where to find it! This dish makes a great main course or side dish. I prepared this dish as soon as I had all the ingredients on hand and I have to say, it is as delicious as it sounds! This is a very easy recipe to add your desired amount of chicken or shrimp, if you like. I hope you think it looks as tempting as I did ; )!

1 bunch fresh asparagus (about 1 pound)
2 tablespoons olive oil

1/2 teaspoon pepper
3 tablespoons chopped fresh basil

  • Prepare pasta according to package direction; rinse and drain.
