SHREDDED POTATO AU GRATIN



Shredded Potato au Gratin image

Number Of Ingredients 6

4 cups of frozen shredded hash browns,thawed or 1 (20 oz) bag of refrigerated shredded hash browns (like Simply Potatoes)
2 cups whipping cream
2 cups shredded cheddar cheese, divided (I like to use sharp cheddar)
1/4 cup sliced green onion
1 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 350 degrees. Spray dish are dishes you are using with non-stick cooking spray.
  • Combine hash browns, cream, 1 1/2 cups cheddar cheese, green onion, salt and pepper in a large bowl. Mix well
  • Spoon or pour hash browns into prepared dish or dishes and sprinkle with remaining cheese. Cook according to below times until bubbly and golden.
  • For (8) 1/2 cup ramekins bake 20-25 minutes
  • For (4) 1 cup ramekins bake 35-45 minutes
  • For 11x 7 baking dish bake 47-57 minutes

10 oz cream of chicken soup
1/2 cup diced onions
16 oz sour cream
1/4 tsp salt
1/2 tsp pepper
Diced Velveeta Cheese (amount depending on how cheesy you like)
Topping:
Potato chips or French's onion chips, crunched up

Steps:

  • In large bowl mix all ingredients except potato chips. Transfer to a 2 quart casserole dish.
  • Bake at 350°F for about an hour or until heated through and bubbly.
  • Add topping and bake additional 10 to 15 minutes.

3 pounds sweet potatoes (about 3 large), peeled and cubed
TOPPING:
3/4 cup all-purpose flour
3/4 cup packed brown sugar
3/4 cup old-fashioned oats
1/8 teaspoon salt
1/3 cup cold butter, cubed
FILLING:
1/2 cup sugar
1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. Sprinkle topping over potato mixture. , Bake, uncovered, until topping is golden brown, 40-45 minutes; let stand 10 minutes. Sprinkle with marshmallows. If desired, broil 4-5 inches from heat until marshmallows are puffed and golden, 30-45 seconds.

I detested this stuff growing up...it was bland sometimes bitter & always the dish that MANY at my family gatherings would pass on over the years. Some years ago I became intrigued by wanting to make this traditional holiday fare into something that would be scrumptious to taste and be eaten up, so I worked and experimented. Finally I came up with this recipe. My family really LOVES it and often friends and family go back for 2nd and 3rd helpings. Without further ado.. here is Sweet Potato/Yam casserole.

7 yams or 7 sweet potatoes
1/2 cup butter
1 1/2 teaspoons cinnamon
2 teaspoons vanilla extract
1 cup dark brown sugar
1/4 cup caramel sauce
white miniature marshmallow

Steps:

  • Preheat oven at 400°F.
  • Take washed yams/sweet potatoes and wrap in foil.
  • Place wrapped yam/sweet potatoes in oven with seam of foil up.
  • Bake for 1 1/2 hours or till done.
  • Take foil off and let cool for 10 - 15 minutes.
  • Peel skin off of each potato, which comes off super easy, and put each potato in a large mixing bowl.
  • Add butter, cinnamon, vanilla, brown sugar to sweet potatoes and mix with an electric mixer. Make sure it is mixed well with no clumps.
  • Take mixture and add to a 2 1/2 quart or 13x9 bake dish which has been buttered or sprayed with cooking spray.
  • Spoon over the top the caramel sauce.
  • Return to oven at 375°F for 20 minutes
  • Cover top with mini marshmallows--enough to cover the whole top of dish. Return to oven for 10 more minutes. The marshmallows should be melted and crispy but not dark browned.
  • Take out and let sit for 10- 20 minutes.
  • Serve and enjoy.

As a child, my husband loved going to his Aunt Kathy's in hopes that she would be making his favorite old-fashioned potato donuts. These are light and flavorful. They are best served fresh and warm and enjoyed with a cup of hot coffee, tea, or cocoa. You can leave them plain, dust them with powdered sugar, white sugar and cinnamon, or drizzle them with a glaze.

2 quarts vegetable oil for frying
1 cup white sugar
4 tablespoons shortening
1 cup milk
2 eggs
1 teaspoon vanilla extract
1 cup instant mashed potatoes
4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Beat sugar and shortening together in a bowl using an electric mixer until creamy. Add milk, eggs, and vanilla extract; stir well. Stir in mashed potatoes. Add flour, baking powder, salt, nutmeg, and cinnamon. Stir using a sturdy spoon, as mixture will be thick. Refrigerate dough for 1 hour so that dough will be less sticky and easier to work with.
  • Lightly flour a countertop and place plastic wrap on top of dough; roll out to desired thickness. Cut into strips or use a donut cutter to make traditional round donuts.
  • Lower donuts carefully into the hot oil in batches. Fry until 1 side is golden brown, 2 to 3 minutes. Turn and continue frying until other side is golden, about 2 minutes more. Transfer to a plate lined with paper towels to drain. Repeat with remaining donuts.
  • Transfer donuts to a wire rack to cool.

This recipe belongs to my ex-husband's aunt (Aunt Marion). It was my favorite dish she prepared for every Christmas and Easter dinner. It wasn't right if this dish was missing from the meal! The Jack Daniel's Whiskey gives the casserole a nice taste but the alcohol cooks out it. I don't even like sweet potatoes but I love this dish! I've met a lot of people who said the same thing! I'm sure it will be your favorite way to eat sweet potatoes too!

4-6 - raw sweet potatoes
1 stick(s) butter or margarine
1 cup(s) milk
1 teaspoon(s) ground cinnamon
1/2 cup(s) brown sugar, firmly packed
1 tablespoon(s) jack daniels whiskey
TOPPING
1 cup(s) pecans, in pieces
1/2 stick(s) butter or margarine, softened
1/2 cup(s) brown sugar (firmly packed)
2 cup(s) corn flakes (crushed)

Steps:

  • Pre-heat oven to 350 degrees. Trim ends off sweet potatoes and cut in half and boil in a pan of lightly salted water until tender. Allow to cool and slide off skins and mash until smooth and creamy.
  • Add butter, milk, cinnamon, and brown sugar into mashed sweet potatoes and Jack Daniels whiskey. Stir until well blended.
  • Pour mixture into a well-greased 13"x9" baking dish. Place into a pre-heated oven for 30 minutes or until bubbly.
  • Chop up pecans and place in a bowl. Mix in crushed cornflakes, brown sugar and softened butter. Mix until crumbly and sprinkle over the top of the potatoes. Put back into oven for 15 min. Cool and serve.

  • Bake 25 minutes in 350 degree oven.
