CUSTARD BREAD PUDDING
I received this recipe from my husband's aunt who has been serving this at her restaurant for years. Great for people who don't like bready things, because it has more custard than bread.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Blend half-and-half, eggs, sugar, vanilla extract, and salt in a blender until smooth. Arrange bread in a 9x13-inch baking dish; sprinkle with raisins and cinnamon. Pour egg mixture over bread.
- Place baking dish in a large roasting pan; fill roasting pan with boiling water halfway up the sides of the baking dish.
- Bake in preheated oven until set, about 1 1/2 hours. Serve warm or cold.

AUNT EMMA'S BREAD PUDDING
My Aunt Emma made the best bread pudding I've ever had. She passed away about 5 years ago and I just ran across a copy of her recipe in my recipe box. Thought I'd share it with you. The brown sugar melts as it bakes on top so it kind of has a caramelized sauce built in. Crumble the brown sugar over the top between your fingers so it doesn't all sink.

Steps:
- Break the bread into small chunks in a large bowl.
- Add the white sugar and melted butter and stir.
- Add the eggs one at a time alternately with the milk stirring well so that each egg is incorporated before adding the next one until all the eggs and milk are used.
- Stir in the vanilla and raisins.
- Pour into a greased lasagna pan or a 13x9" inch pan.
- (sometimes the 13x9 tends to get over full depending on the particular loaf of bread).
- Sprinkle the brown sugar evenly across the top of bread mixture.
- Bake in a preheated 350* oven for 1 hour.
- Let cool 20 to 30 minutes as pudding will set firmer as it cools.
- Can be served warm or chilled.
RUBY'S BREAD PUDDING

- Preheat oven to 350°F.
- Arrange bread in 1 layer in a shallow baking pan just large enough to hold it in 1 layer. Pour water over bread and soak 30 seconds. Turn bread over and soak until softened but not falling apart (parts of crust will remain firm), about 4 minutes more. Squeeze water from bread, then transfer bread to a buttered 13- by 9-inch glass baking dish or other 2 1/2-quart shallow baking dish.
- Whisk together eggs, milk, butter, sugars, vanilla, nutmeg, and salt and stir in raisins and pineapple. Pour mixture over bread and stir gently until combined well.
- Bake pudding, uncovered, in middle of oven until custard is just set, 45 to 50 minutes.

- Heat oven to 350 degrees. Place bread crumbs in 1-1/2 quart baking dish. Scald 1/4 cup butter in 2 cups milk. Blend in all remaining ingredients (the scalded milk/butter mixture, the sugar, the eggs, cinnamon and raisins) in the baking dish. Place baking dish in pan of hot water (with water 1 inch) deep) in the preheated oven. Bake for 40 to 45 minutes, or until a butter knife inserted 1 inch from the edge comes out clean. Serve warm with milk or cream if desired.

- Soak the bread with water and squeeze the excess water out then place in a large mixing bowl.
- Add the remaining ingredients to the bowl, except for the white sugar (to sprinkle). Stir well to mix all the ingredients together, until it's evenly combined.
- Spread the mixture onto the buttered tray and spread evenly. You can see the mushy consistency in this photo; if yours is too dry, you probably didn't soak it enough (I made this mistake the first time). Push down with a fork until the mixture is as even as possible.
