SORGHUM SPICE CAKE
Serve this sweet corn molasses cake with Corn Ice Cream.

Steps:
- Heat oven to 350 degrees. Butter and flour two 8-inch round cake pans and set aside. In a small saucepan, bring coffee just to a boil and stir in molasses and baking soda. Set aside. In a large bowl, sift together flour, spices, salt, and baking powder.
- In another bowl, cream butter and sugar until fluffy. Beat in coffee-molasses mixture until well combined. Beat in flour mixture. Add eggs and mix well.
- Divide batter between pans and bake for 30 to 35 minutes, or until a toothpick inserted into center of cake comes out clean. Cool for 10 minutes in pans, then turn out onto wire rack to cool completely. Serve with Corn Ice Cream.
AUNT ROSE'S SORGHUM CAKE
On vacation in Gatlinburg, I purchased an old timey cookbook called "A Taste Of The Past" by Phyllis Connor. Each recipe has notes about the family history of the recipe. I tried to make this cake where we were staying, without my reading glasses, and accidentally used self-rising flour. Boy oh boy, did it rise! It dripped on the bottom of the oven made lots of smoke. Security men with fire extinguishers came running into our unit since we had thrown open the windows. We had a good laugh, but they just couldn't understand why I would want to bake a cake while on vacation. I just had purchased some locally made sorghum and this recipe jumped out at me since it used sorghum and did not need to be frosted. When made properly, this cake turned out fragrant, moist and delicious. Give it a try... but use all-purpose flour ;)

Steps:
- Preheat oven to 325 degrees.
- Grease a 9" x 9" baking pan.
- Cream the sugar and butter together.
- Add sorghum and mix.
- Sift together flour, baking soda and cinnamon in another bowl.
- Stir dry ingredients into the creamed mixture.
- Stir the boiling water into the batter; it will foam up.
- Bake about 45 minutes or until it springs back after being pressed lightly.

- Preheat oven to 325°F. Butter and flour springform pan. Combine 1/4 cup flour, 1/4 cup sugar, and 2 tablespoons butter in a small bowl. Using your fingertips, rub together until mixture is crumbly; set topping aside. Sift remaining 2 cups flour, baking soda, and next 5 ingredients into a large bowl. Using an electric mixer at low speed, beat 1 cup butter, 1 cup sugar, and sorghum in another large bowl, occasionally scraping down sides, until smooth, 2-3 minutes. Add eggs; beat until light and fluffy, 3-4 minutes. Beat in flour mixture in 3 additions, alternating with buttermilk in 2 additions, beginning and ending with dry ingredients. Pour batter into prepared pan.
- Bake cake until top looks just set, about 40 minutes.
- Immediately sprinkle topping over cake; bake until a tester comes out clean when inserted into center, 25-30 minutes longer. Transfer to a wire rack and let cake cool in pan. Remove pan sides.
- Cut into wedges; serve with ice cream.
AUNT ROSIE'S GOB CAKE

- Preheat oven to 350F (175C).
- Grease and flour a 10x15 inch pan; line a second 10x15 inch pan with parchment paper.
- In a large bowl, combine cake mix, pudding mix, 1/4 cup oil, 1-1/2 cups milk and 4 eggs; beat 4 minutes on high speed on mixer.
- Divide batter into the two 10x15 inch pans.
- Bake in preheated oven for 12 to 15 minutes, or until a toothpick inserted into cake comes out clean; allow to cool.
- To make the filling: In a large bowl, combine 2 cups icing sugar, 1/2 cup milk, shortening, butter, vanilla and flour; beat with mixer on high speed for 5 minutes, or until it achieves the consistency of whipped cream.
- Spread filling over the layer in the greased pan.
- Loosen the sides of the other layer by running a knife around the edge between the cake and the pan.
- Flip the cake onto the frosted layer.
- Remove the pan and parchment paper from the top layer and serve.

- Preheat oven to 350°F. Butter and flour a 10-inch (3-quart) bundt pan, knocking out excess.
- Sift flour. Beat together butter and cream cheese in a large bowl with an electric mixer until light and fluffy. Add sugar, flour, and vanilla and beat on low speed until just combined (mixture will appear dry and crumbly). Add eggs, 1 at a time, beating well after each addition (mixture will form a batter as eggs are added).
- Pour batter into pan, smoothing top. Bake in middle of oven until golden and a tester comes out clean, about 50 minutes. Cool cake in pan on a rack 15 minutes, then invert onto a rack and cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Melt the chocolate in a double boiler or in the microwave.
- Pour the melted chocolate into a large mixing bowl. Blend in the mayonnaise, vinegar and vanilla. Combine the flour, sugar, baking soda, and salt and gradually stir into the chocolate mixture. Slowly stir in the warm water. Pour batter into prepared pan.

AUNT ROSE'S APPLE KUCHEN RECIPE

- Preheat oven to 400 degrees. Peel and thinly slice apples. Place slices in a bowl of water with fresh fruit or whatever you use so the apples won't turn brown. Precook apples in the microwave. About 2 cups of slices in a bowl with 1 cup of water. Cover and heat for about 6-8 minutes. They will be done when you can put a fork in and they are soft but not mushy. Like a cooked potato. Repeat this process until all apples are precooked. Put in strainer and run cold water over so they stop cooking and set aside. Dough: 2 cups flour 1/2 tsp salt 2 tsp baking powder 1/2 cup sugar Mix all these ingredients together. Add 3 T melted Crisco. Beat 1 egg in 1/2 cup milk. Add each to dry mixture. Place on a floured board and knead dough until all thoroughly mixed together. It will be a little lumpy. Roll out dough and place in a jelly roll sized greased pan. Bring it up the sides and trim at the top. You can either flute it or just trim at top. Custard: Beat 7 eggs and a can of evaporated milk together. Add 1/2 cup sugar and beat in with eggs an milk mixture. Place all the apple slices in a single layer side by side in dough lined pan. Pour the custard mixture over top. Sprinkle generous amount of cinnamon on top. Pan will be filled to the top. Place in a preheated oven 400 degrees for 35-40 minutes or until toothpick comes out clean. You can eat this warm or cold. Keep refrigerated.
