AUTUMN APPLE SANGRIA
The invigorating scent of fall's first apples flavors this bright sangria, sweetened with a lemon-cinnamon syrup and apple brandy.

- Thinly slice 1 lemon, discarding the seeds, and reserve in a bowl. Juice the remaining 3 lemons until you have 1/2 cup juice (discard any extra juice). Bring the lemon juice, sugar and cinnamon sticks to a boil in a small saucepan, stirring occasionally until the sugar has dissolved. Boil the syrup for 1 minute more. Let the syrup cool completely, then strain into a 3-quart pitcher, reserving the cinnamon sticks.
- Add the wine, Calvados, cider and soda water to the pitcher, and stir to combine. Add the tart and sweet apples and lemon slices, and cover the pitcher with plastic wrap. Refrigerate the sangria to chill, at least 4 hours up to overnight.
- To serve, fill 8 glasses halfway with ice, then pour the sangria and fruit into each glass. Garnish each with 1 of the reserved cinnamon sticks.
APPLE CIDER SANGRIA
I found this on the "How Sweet It Is" food blog and I decided to make it for Thanksgiving. I used Barefoot Pinot Grigio, generic apple cider and the cheapest ginger brandy that I could find and it was still really yummy. Make sure you let the apples soak for a while because they draw some of the bite from the liquor. I made mine in the morning and served it at 6 PM and it was great! Kind of like a grown up apple cider punch! (Cook time is chill time)

- In a large pitcher, combine wine, cider/juice, brandy, apples, pomegranate seeds, and cinnamon sticks. Taste and add a few tablespoons of honey or sugar if needed. If you have time, set it in fridge for 3 hours or more for flavors to blend (but it's also tasty freshly made!)
- Just before serving, add ice and pour into serving glasses. Top each glass with a splash of carbonated water and garnish with a cinnamon stick. For added fancy, combine a spoonful each of cinnamon and sugar. Dip the rim of your serving glasses into the sangria, then dip it in the cinnamon sugar mix before pouring in the sangria.
