CHILI LIME AVOCADOS



Chili Lime Avocados image

2 ripe Haas avocados
2 limes
1 teaspoon sugar
1 teaspoon chili powder
1/2 teaspoon salt
3 tablespoons extra-virgin olive oil
Chopped chives or cilantro for garnish, optional

Steps:

  • Halve avocados and remove pit. Roll limes or heat in microwave for 10 seconds to get juices flowing. Halve the limes. Rub the avocado halves gently with 1/2 lime to retard the browning. Juice limes into small bowl and mix with sugar, chili powder and salt using a fork or small whisk. Add extra-virgin olive oil in a slow stream while mixing dressing. Pour dressing into the cavities of avocados, distributing it equally and serve. Garnish with chives or cilantro as an optional garnish.

Avocado Lime Butter image

I'm always trying to come up with different ways to serve fresh fish which is so abundant here in Alaska. This is one way I like to compliment halibut, cod or salmon. I've also used this on veggies like asparagus and brussel's sprouts. Makes a tasty alternative to mayonnaise for sandwiches as well. Cooking time is actually the refrigeration time.

1/2 cup butter (room temp)
1 large ripe avocado
1 -2 minced garlic clove
1 tablespoon lime juice
1/2 teaspoon Tabasco sauce
1/2 teaspoon Worcestershire sauce
1 teaspoon lemon pepper seasoning
1 teaspoon dried parsley

Steps:

  • Peel, pit and dice avocado.
  • Using a food processor or potato masher, cream avocado and butter together until smooth.
  • Add remaining ingredients one at a time until well blended.
  • Spoon onto plastic wrap creating a log about 6 inches long. Wrap plastic wrap around the butter and roll into a tube shape. Place in the refrigerator for at least one hour or until firm.
  • When ready to serve your fish or veggies, slice off half inch pat of butter and place on top of each serving to melt. If serving food on platters or in bowls, slice cold butter 30 minutes ahead of time, lay out on small dish and allow to reach room temperature for individual serving.

This is great on fish--specially swordfish and salmon. It would probably be good with chicken too. It's smooth, creamy and lemony. I have this posted with my Recipe #202691. but some people might want to use it with another fish or chicken recipe so I'm posting it on it's own. Prep time does not include refrigeration time.

  • In a small mixing bowl beat butter with an electric mixer until soft and creamy. Beat in remaining ingredients.
  • Place in a decorative dish and refrigerate until firm and ready to use.

1 very ripe Hass avocado, halved, pitted peeled and mashed
85g unsalted butter, at room temperature
200g caster sugar
Finely grated zest and juice of 1 lime
2 large eggs, at room temperature
1 tsp vanilla extract
200g plain flour
Pinch salt
1 tsp baking powder
1 tsp baking soda
100ml buttermilk
1 very ripe Hass avocado, halved, pitted peeled and mashed
85g unsalted butter, at room temperature
200g caster sugar
Finely grated zest and juice of 1 lime
2 large eggs, at room temperature
1 tsp vanilla extract
200g plain flour
Pinch salt
1 tsp baking powder
1 tsp baking soda
100ml buttermilk
½ very ripe Hass avocado, pitted, peeled and mashed
Zest of 1 lime
Juice of ½ lime
35g unsalted butter
100g icing sugar, sifted

Steps:

  • Preheat the oven to 180°C/fan oven160°C/gas 4. Grease and line the base of a 900g (2lb) loaf tin with greaseproof paper.
  • Using an electric whisk beat together the butter and sugar until light and creamy.
  • Add the lime zest and juice to the mashed avocado, then beat this into the butter mixture. Add the eggs one at a time, beating well between each addition. Stir in the vanilla extract.
  • In a separate bowl, sift together the flour, salt, baking powder and baking soda. Use a large metal spoon to fold half into the avocado mixture. Stir in the buttermilk, then fold in the remaining flour mixture.
  • Transfer the cake mixture to the prepared tin and smooth over the top.
  • Bake for 55 minutes - 1hr until a skewer inserted in the middle comes out clean. If the loaf is browning too quickly, cover lightly with a piece of foil.
  • Remove from the oven then leave to cool for 15 minutes. Remove from the tin, peel away the paper and leave on a wire rack to cool completely before icing.
  • To make the icing, mix the avocado with half the lime zest and the juice.
  • Cream the butter using an electric whisk, then beat in the avocado mixture. Slowly add the icing sugar, whisking well to combine. Spread thickly over the top of the cooled cake and sprinkle with the remaining lime zest.

1 ½ cups white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, 1/2 cup sugar, rosemary, and lime zest together in a bowl. Cut butter into flour mixture with a pastry cutter until clumps are small. Set aside 1 cup of the flour mixture for later use; press remaining flour mixture in an even layer into the bottom of the prepared baking dish.
  • Bake in preheated oven until the crust sets, about 10 minutes.
  • Mix 1/2 cup of the reserved flour mixture with 1 1/2 cup sugar, lime juice, eggs, and mashed avocado in a bowl until mostly smooth; spread over the baked crust. Top with the remaining 1/2 cup of the reserved flour mixture.
  • Bake in oven until set, about 25 minutes more. Cool completely before cutting into 48 bars. Cover with plastic and refrigerate.
