My mother shared this fabulous recipe with me, and I have shared it with many friends. They are always requesting this tasty appetizer. The flavor explosion is something else. —Stephanie Perenyi, Littleton, Colorado

1/2 cup olive oil
1/4 cup lemon juice
1/4 cup red wine vinegar
3 garlic cloves, minced
1-1/2 teaspoons salt
1 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1/2 teaspoon pepper
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/4 cup chopped fresh basil
6 medium ripe avocados, peeled and cubed
24 slices French bread baguette (1/2 inch thick)

Steps:

  • Preheat broiler. Whisk together the first 8 ingredients; stir in herbs. Fold in avocados. Place bread on an ungreased baking sheet. Broil 3-4 in. from heat until golden brown, 1-2 minutes per side. Top with avocado mixture.

An appetizer that is quick to go together and very tasty as well. I make 1/2 a recipe at a time in the toaster oven.

1 tablespoon olive oil
20 slices French baguettes
1/2 avocado, very ripe
garlic salt, to taste
black pepper
2 tomatoes
1/2 lb fresh mozzarella cheese

Steps:

  • Preheat oven to broil.
  • Brush olive oil on slices of bread and toast for 2-3 minutes.
  • Remove toast and cool slightly. Using small butter knife, spread avocado, like butter, onto each bread slice. Season each slice with garlic salt and pepper.
  • Cut tomato in half and slice down in 1/2 moon slices, 5 slices per half.
  • Place on top of seasoned avocado bread slice.
  • Cut fresh mozzarella the same way as tomato, yielding 20 slices. Place on top of tomato.
  • Put under the broiler for an additional 3 minutes, until cheese in melted.

2 medium ripe tomatoes
3 tablespoons extra-virgin olive oil
1 tablespoon chopped red onion
salt and freshly ground black pepper
1/2 medium ripe Hass avocado, diced
1 to 2 tablespoon fresh lemon juice
4 to 8 slices (1/2-inch thick) Italian breads

Steps:

  • 1 Cut the tomato in half through the stem end. Cut away the core. Squeeze out the seeds and juice. Chop the tomato into 1/2-inch pieces. 2 In a medium bowl toss the tomatoes with the oil, onion, and salt and pepper to taste. Stir in the avocado and lemon juice. 3 Place a barbecue grill or broiler rack about 5 inches away from the heat source. Preheat the grill or broiler. 4 Toast the bread on one side until golden brown, about 2 minutes. Turn the bread and toast the other side, about 2 minutes. Top with the tomato mixture. Best when using fresh and ripe ingredients, for instance your own garden or a farmer's market. Ratio of the ingredients is hard to mess up, very flexible recipe with room for personal taste variations.

4 ripe tomatoes, cubed
3 (4 ounce) balls of fresh mozzarella cheese, cubed
2 avocados - peeled, pitted, and cubed
3 tablespoons balsamic vinegar
3 tablespoons red wine vinegar
½ teaspoon dried basil
1 teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Lightly toss tomato, mozzarella cheese, and avocado cubes in a salad bowl. Mix balsamic vinegar, red wine vinegar, dried basil, sugar, salt, and black pepper in a separate bowl. Pour dressing over salad and mix again to coat.

1/2 loaf whole grain French bread (or 1 petite loaf), sliced 1/2 inch thick
Olive oil cooking spray
Sea salt
2 cloves garlic, divided
2 avocados, smashed
1 tablespoon fresh lime juice
1/4 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
4 Roma tomatoes, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
4 leaves basil, chopped

Steps:

  • Preheat oven on broiler setting. Place slices of bread on baking sheet, spray with olive oil cooking spray and sprinkle with sea salt. Broil slices in oven about 2 minutes on each side or until golden brown. Remove from oven and rub with one clove of garlic, cut in half. In a medium bowl, mix smashed avocado, lime juice, sea salt and ground pepper. In a separate large bowl, combine tomatoes, olive oil and balsamic vinegar. Mince remaining garlic and add it into tomato mixture. Spread smashed avocado mixture onto each slice of toast, then generously spoon tomato topping on top. Garnish with basil and serve immediately.
