½ cup sour cream
½ cup crumbled blue cheese
½ cup cottage cheese
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon onion salt
½ teaspoon garlic powder
salt and pepper to taste

Steps:

  • In a blender or food processor, place the avocado, sour cream, blue cheese, cottage cheese, lemon juice, Worcestershire sauce, onion salt, garlic powder, salt, and pepper. Blend until smooth. Cover, and refrigerate 30 minutes, until chilled.

One 8-ounce avocado, halved, pitted and peeled
1 1/4 cups low-fat buttermilk
1 teaspoon white wine vinegar
3 scallions, whites and light greens chopped
3 scallions, whites and light greens chopped
1/2 clove garlic, finely chopped
1/4 cup loosely packed chopped fresh chives
1/4 cup loosely packed fresh dill leaves
1/4 cup loosely packed fresh flat-leaf parsley
Fine salt and freshly ground black pepper

Steps:

  • Process the avocado, buttermilk, vinegar, scallions, garlic, chives, dill and parsley in a blender until smooth. Season with 1/2 teaspoon fine salt and a few grinds of pepper. Transfer to a medium bowl, cover with plastic wrap so that it sits directly on the dressing and refrigerate for 30 minutes up to 1 day before using.

½ cup avocado oil
¼ cup olive oil
¼ cup white vinegar
1 teaspoon lemon juice, or more to taste
1 teaspoon sesame oil, or more to taste
1 avocado - peeled, pitted, and coarsely chopped
4 cloves garlic, minced
1 teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Pour avocado oil, olive oil, vinegar, lemon juice, and sesame oil into a blender. Cover and blend until smooth and emulsified, about 2 minutes. Add avocado; blend well to combine, about 2 minutes. Add garlic and cumin; blend until vinaigrette flavors are combined, about 1 minute. Season with salt and pepper.
  • Transfer vinaigrette to a container; chill in the refrigerator for 1 hour. Shake well before using.

My husband taught me this quick recipe. I don't know where he got the idea, but it's very delicious. Avocado and balsamic vinegar are the new Hollywood couple. Step aside mayo!

1 ripe avocado
1 1/2-2 tablespoons balsamic vinegar, approximately
1 teaspoon grapeseed oil or 1 teaspoon extra virgin olive oil

Steps:

  • Take one ripe but firm avocado and cut it in half lengthwise. Remove pit.
  • *Drizzle the vinegar on the two avocado halves, adding the majority of the balsamic in the little "wells" but drizzle some of the vinegar onto the rest of the avocado halves to avoid oxidation.
  • Next add the grapeseed oil or olive oil, in the same manner as the vinegar.
  • NOTE: *It is important to add the vinegar as soon as the avocados are cut so that the avocados don't turn brown.
  • Enjoy!
