1 teaspoon paprika
1 teaspoon dried thyme leaves, crumbled
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
1 large onion, chopped
1 (16-oz.) package mushrooms, sliced
2 teaspoons jarred minced garlic
1 (10 3/4-oz.) can cream of mushroom soup
1 cup milk
1/3 cup dry white wine (optional)
1 rotisserie chicken, cut into serving pieces
2 tablespoons chopped fresh parsley

Steps:

  • Prepare noodles according to package directions. Keep warm.
  • Meanwhile, stir together paprika, dried thyme, salt, and pepper in a small bowl.
  • Melt butter in a large skillet over medium-high heat; add onion and mushrooms, and sauté 8 to 10 minutes or until onion is tender. Stir in garlic and paprika mixture; sauté 2 minutes. Add soup, milk, and, if desired, wine, and bring to a boil, stirring frequently. Add chicken pieces; spoon sauce over top of chicken. Reduce heat to low, and cook, covered, 10 to 15 minutes or until chicken is thoroughly heated. Stir in 1 Tbsp. parsley. Serve over hot cooked noodles. Sprinkle with remaining parsley.

½ cup butter
1 whole chicken, cut into pieces
1 teaspoon salt
½ teaspoon ground black pepper
¾ cup all-purpose flour
3 cups chopped yellow onions
1 cup chopped celery
3 cloves garlic, chopped
2 cups chopped carrots
3 cups chicken broth
3 tablespoons all-purpose flour
¼ teaspoon cayenne pepper
2 teaspoons salt
¼ teaspoon ground black pepper

Steps:

  • Melt the butter in a large skillet over medium-high heat. Season chicken pieces with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge in 3/4 cup flour, place in the skillet, and brown on all sides. Set chicken aside, and drain skillet, reserving about 1 tablespoon butter.
  • Reduce skillet heat to medium-low, and stir in onions, celery, garlic, and carrots. Cook 5 minutes, until tender. Stir in the flour, and cook 5 minutes more. Pour in the chicken broth, season with cayenne pepper, and remaining salt and pepper. Bring to a boil, and reduce heat to low.
  • Return chicken to the skillet, cover, and continue cooking 30 minutes, until chicken juices run clear and gravy has thickened.

3 tablespoons olive oil, plus more if needed
Two 8-ounce containers sliced white button mushrooms
1 sprig fresh thyme
1 medium sweet or white onion, large diced
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
2 cups beef stock, warmed
4 grilled chicken breasts, from the freezer or refrigerator section of the grocery, thawed if frozen
Two 10-ounce containers microwavable white rice
3 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and thyme and more olive oil if needed and saute until lightly browned and tender, 5 to 10 minutes. Add the onion and season with salt and pepper. Let cook until the onions are softened, 5 to 7 minutes. Mix in the flour and mustard and cook for about 2 minutes. Whisk in the beef stock and bring to a simmer. Cook until thickened, 3 to 4 minutes. Add the grilled chicken breasts, then cover the skillet and turn down the heat to medium-low. Let simmer for about 10 minutes.
  • Prepare the rice according to the package directions. Remove the rice to a large bowl and stir in 2 tablespoons parsley. Place rice on a platter, then top with the chicken and mushroom sauce. Garnish with the remaining fresh parsley.

Robyn was accurate in naming this chicken recipe - it really is awesome! The flavor of all the fresh veggies cooked down with the chicken is fantastic. Melting your favorite cheese just brings this to a whole new level. We used pepper jack and loved the spice. But use your favorite. A great low-carb way to prepare a plain chicken breast. An easy make-ahead meal.

6 - boneless chicken breasts
- salt, pepper and desired seasonings to taste
- cooking oil and a little butter
8 ounce(s) fresh sliced mushrooms
1 - green pepper, chopped
1/2 cup(s) chopped onion
- a little minced garlic or garlic powder to taste
- your favorite cheese (cheddar, muenster or pepper jack are my favorites)

Steps:

  • Put a few tablespoons cooking oil (I use canola) and a couple of tablespoons butter into a skillet. Sauté the mushrooms, green pepper, onion, and garlic in butter/oil mixture until tender.
  • Flatten the chicken, if desired; sprinkle with desired seasonings.
  • Place the chicken into the pan.
  • Cover with the vegetables and let simmer until chicken is cooked through.
  • Note: You can also remove the vegetables while you're cooking the chicken and then when chicken is done, simply throw everything back onto the tops of chicken breasts. The choice is yours.
  • Add shredded cheese or large slices of cheese.
  • Cover with lid just long enough to melt cheese down through the vegetables and onto the chicken. (My favorite cheese to use is the pepper jack... mmm!)
  • Makes 6 servings. Do not freeze.
  • Serve with your favorite sides. Hint: To make this a little less fattening, try grilling your chicken on the outdoor grill and saute your vegetables in fry pan on top of stove as in recipe. Then continue with rest of recipe.

1 deli rotisserie chicken (2 to 2 1/2 lb), cut into serving pieces, skin removed if desired

Steps:

  • In 12-inch skillet, melt butter over medium heat. Cook onion and mushrooms in butter 8 to 10 minutes, stirring occasionally, until onions are tender and beginning to brown. Stir in sugar. Cook about 3 minutes, stirring occasionally, until vegetables are very brown.
  • Stir gravy and sherry into vegetables. Add chicken to skillet; spoon sauce over chicken.
  • Cover; cook 5 to 10 minutes, turning chicken after half the cooking time, until thoroughly heated. Sprinkle with parsley.

1 small onion, chopped

Steps:

  • In a large resealable plastic bag, combine flour, salt, garlic powder, Cajun seasoning and pepper. Add chicken thighs, one at a time, and shake to coat. In a large skillet, brown chicken in 2 tablespoons oil in batches. Remove and keep warm., In same skillet, saute carrots, onion and green pepper in remaining oil until tender. After reading this recipe here, it sounded so good that I had to put my personal touches to it. I'm not particularly fond of chicken breasts unless they're flattened to a pulp and delicately browned after being dredged in flour. After that I followed the original recipe except I added crushed red peppers and Italian seasoning. I served this with fettuccine alfredo and roasted asparagus on the side. Delizioso!

¼ cup seasoned bread crumbs
2 teaspoons garlic salt

¼ teaspoon lemon-pepper seasoning
¼ teaspoon Italian seasoning

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon, reserving bacon drippings; drain bacon on paper towels.
  • Cook and stir coated chicken breasts in the bacon drippings until chicken is no longer pink in the center and juices run clear, about 5 minutes per side; remove and keep warm.
  • Cook and stir onion, lemon-pepper seasoning, Italian seasoning, salt, red pepper flakes, and brown sugar in the same skillet until onion is golden brown, 10 to 15 minutes.
